      Depends how you are graduating from college. As a 15yo high school dropout I always found full time work at companies which paid college tuition. Long story short worked full time while a full time student living on my own, graduated 100% debt free with money in the bank. By 25yo I owned a home and drove a land rover. I was only living eating like this as a habit of being poor, but it helped me long term. I can't believe people pay money out of pocket or get loans to go to college, there's a million ways to go for free 🥰

    Great job with these budget videos, Larry. I also love that you TEACH cooking here and tell people who are inexperienced how they can substitute, leave things out, use what they have. It encourages people to learn. And they find out they can make a great meal not only cheaply, but with some imagination. And it is going to be way better than a lot of pre-prepared meals, and way cheaper per serving as well.

      Yes, in that case, boil the carcass to get the meat off the bones and strain the broth, once cooked down, into your pan, being careful to remove the little bones. You can use the broth to enhance the tomato sauce and that can substitute for the cream cheese, if you don't have any. The herbs from the cooked chicken will season your sauce.

    for anyone who hasnt seen the movie "Ratatouille" larry is giving the same advice as the moral of the story, 'anyone can cook' and if you like a flavor of something go ahead and combine it with other things you like to make a new flavor. i think the cream cheese is a good idea and i would never have thought to try it.

      @@bmo14lax Brown rice, lentils, potatoes, onions, beans, carrots and peas, not so expensive? Butter, meat, cheese, okay, but I'm still finding chicken for about $1 a pound, got a Smithfield ham for $1.29 a pound last week. And which is "healthier" -- livers and hearts, or sirloin?

      Cream cheese goes with most flavors. It's an excellent way to add extra calories to a meal. I suspect it's underutilized because most people are usually aiming to eat fewer calories, not more.

    My mom has always been making a dish almost exactly like this one, just used fried bacon and/or ground meat instead of chicken so if any of you guys have that- go for it, it's delicious too. The cream cheese in that sauce is absolutely banging

      Very good with fried diced onion too if you got any on hand... And with curry spice in! So many ways you can tweak and experiment with this meal and I swear it's amazing every time.

    Cream cheese is essentially yogurt with most of the water removed so you could also use plain regular or Greek yogurt instead.
    Browning the meat first is usually worthwhile but for this dish I don't think it would matter much, especially with how little meat was used. It's reasonable to save the extra work for better dishes.

    As long as you can afford even basic seasonings and sauces, you can make a filling and tasty meal.
    My family struggled a lot after the 08' crash, and we figured out all kinds of ways to make due for the 5 of us. The main thing is trying to mix up meals, even if it's minor. If you eat the same thing every day you will go crazy.

      That is something a lot of people do not get, there is a distinction between eating the same thing everyday because you can, and eating the same thing everyday because you have to and in the latter scenario it usually isn't something you like a lot in the first place. No matter how you cook chicken and rice, when that is all you have it gets old fast. 2.97 for a 3lb box of spaghetti from walmart, with watered down cheap pasta sauce, not so appealing after a week.

    To make the chicken browning "convenient" start with it (3-7 minutes, longer = more flavor) add before the garlic. You'll deglaze the pan when you add the tomatoes giving more flavor to boot.

    Larry, this is a great budget recipe, and it feeds ALOT of people for little. The chicken breast is expensive, but not overly so. I saved the ham bone from easter dinner in the freezer, and it works great for this dish. I add whole canned tomatoes, water, macaroni and spices and let it simmer. Its not only cheap its tasty, too! Thank you for all the great content. A regular fan! ;)

    I like the recipe and about the cubed breast meat, I thought it would be browned with the oil and garlic. Browning the chicken I think it would have made the white meat even drier so I see your wisdom in tossing the chicken in the sauce to cook. I'll have to try doing it your way sometime. 👍

      It miiigghtt make it a little drier, but I think with all the sauce you could probably get away with it and not notice too much, I dunno, maybe I just love good browned chicken enough to make excuses for it

    The one thing I always tried to add when we were really struggling was a loaf of Italian bread. If I could eek out that extra buck, it somehow made a meal feel fancy. Toast it up, add some garlic powder, and you are living large. Walmart has everything Italian bread that we buy every week right now. As of today, we're not struggling (I thank god for that every single day), but it still makes my dinners feel fancy.

    When I find cream cheese on sale, I take the 8-oz block then slice it in half (still in the package), overwrap each section securely, and place in my freezer. Cream cheese keeps well frozen (especially for cooking) and a 4-oz block is just the right size for adding richness to many different dishes.

    A little tip for chicken breasts......it does not change the amount of chicken but it DOES MAKE IT APPEAR THAT THERE IS MORE.....I slice the breasts across to make super duper thin slices like you were "butterfly-ing" it at LEAST 4 TIMES. So they are super thin. Then slice through them making super thin cuts. It seems that if there are little bites of chicken in every bite there is more chicken. I got this tip from my uncle who is a chef at a famous Las Vegas restaurant. Honestly, 2 breasts of average size feeds my family of 6 (2 are younger, keep that in mind) so easily feed 4 adults. Can't beat that for streaching out meat to reduce costs. Plus add those veggies from your garden. They're essentially free and add bulk and flavor and nutrition. PS.....the cream cheese is so good in tomatoes. It tastes so LUX. Love your videos. Hope this tip helps someone, I know your recipes do!

    My wife is vegetarian. I think I'll try this but I'll start by frying some tofu instead of doing chicken. The cream cheese idea for a quick rich sauce looks really good.

      Press the Tofu to get its water out first or even freeze the tofu twice before you press the water out

    Keep these vids coming please! I was just wondering if you have "cooking bacon" over there. It's the bacon from the ends of the cuts that will not easily go through the slicing machines. Over here (UK) it's £3 for 1.5kg or roughly $3.85USD for 3.3lbs. IE $1.17USD per pound. It's a bit fatty so you need to trim some off (and keep to make sesame prawn toast etc) but for about £5 you can get enough scoff to feed 8 people and stuff them silly by the time you add split peas carrots and onions.

      We have cottage bacon in Montana which is also a healthier cut. I've also seen butchers sell packs of bacon pieces & ends. The most difficult "bacon" to get since last year is Canadian bacon. I'm told its a manufacturing plant issue....I say what isn't these days?

    This is fantastic stuff. You should make a cookbook, seriously. One that isn't ingredients exactly, but more like ideas of things we could make and how to make different adaptations of them, depending on circumstances.

    That looks delicious! I sure as would never put cream cheese in anything, because I don’t buy it, but I definitely can see how it would work really well. However, butter, a cup of milk and a splash of vinegar would work to substitute.
    Thank you for this series! It helps so many. Times are tough. But a little meat to enrich a pot of pasta turns a dish that will never go far enough to actually provide nourishment for a family. People often overlook dishes which aren’t meat based, or they go the opposite direction and remove the meat. Bacon makes collard and mustard greens tasty. Lard makes excellent pie crust. Chances are good your grandma put bacon in her beans. All this because vegetables alone aren’t satisfying, and steak and roasts are expensive. Together, you can feed a family on half rations. I think nowadays, kids grew up, never learning to keep a home. Next to laundry, feeding a family takes the most effort, and just like sending out the laundry, relying upon premade meals cost too much!

      That would certainly work. Of course if available, and budget permitting, some fresh chives/green onions would be even better.

    @TheWolfePit I like your videos, and have watched them for a while. Here's one to try that I made tonight: rice broth (that's a cup of rice cooked in a pot of water for 12 minutes), add in a can of peas/carrots, can of diced tomatoes, can of sliced potatoes, and a can of corned beef. Mix up some roast beef gravy mix (dry goods) with water to make a slurry and add to the pot. It will make a full pot meal of what I call Corned Beef Stew. It's in my extreme weather kit for power outages/lock downs. I think it would fit in well with your "extreme budget" series. Thanks!

    I was on a certain diet one time that I won't name but because I had to add fat to everything I ate I added cream cheese to almost everything and it tastes good in nearly everything. You can add it to any soup, stew, sauce, pan sauce, anything and it tastes good. Thanks for posting

      I always have powdered milk in the pantry. It may cost more up front, but if you don't drink alot of milk this is perfect and it has a long shelf life. Just add some of the powdered milk. It will make it creamy.

    This looks yummy though I'd sautee the chicken first and use the browned drippings to flavor the sauce.
    And cream cheese is yummy in tomato sauce! 😋

    When cream cheese is on sale I have bought extra and frozen some. Freezing it gives it a different texture but putting it into a dish like this where it melts, it is just like unfrozen cream cheese.

    I love one pan meals. Just by using different ingredients and different pasta shapes it changes it enough not to be boring
    My favorite pastas to use are penne, small shells and boxed Mac and cheese.
    Onions - fresh, frozen, dried or soup mix.
    Mushrooms , olives, peppers, broccoli, corn ect.
    Taco seasoning.
    Chopped up dill pickles with some juice.
    Sour cream, heavy cream, cheese ect.
    Taco, cheeseburger, Philly, pizza, Reuben, ect.
    Fresh meats, lunch meats, and canned.
    Just look at the boxed helpers for ideas but it is so much better making them yourself.

    Kinda reminds me of this casserole I make called cheesy beef bake its medium shells with browned ground beef and sauce with some of a taco seasoning packet mixed in then ya dump it in a casserole dish and top it with a mixture of sour cream and onion and chive cream cheese ya spoon it over top and then put some sharp cheddar on top and bake it you should try it some time

    The cream cheese I haven't done in a while, but used to be great in baked pasta dishes. Really something you don't think about until you do it.

    If you wanted to go more traditional use ricotta next time. You can even make it at home fairly cheaply. Just add a little vinegar to milk or cheese whey then boil it. Strain what's left and boom, fresh ricotta.

    I only get $20 a month in food stamps. With the price of all food going up like crazy, I need all the low cost recipes I can get.

      If you can buy "cooking bacon" in your area the 1lb packs cost about $1.20USD and are enough for 4 meals worth of meat (or more if you are not a big meat eater). The easiest recipe is brown the cooking bacon after taking off the excess fat (you need some for flavour) and cutting it into smallish pieces, use two big onions (or 3 if you want to pad it out) and some split peas or whichever dried beans cost least where you live. A couple of tins of tomatoes (and fresh carrots if you can get them cheap enough). Pad it out with and carb food like rice or pasta or even pita bread (which is silly cheap here). You can get a meal well under 60-75cents if you can get your hands on those, and it will be enough to stuff you silly as well as having reasonable nutritional value.

      Do you have a food pantry in your town?? Some states like mine hand out certain foods almost daily. They've been low lately, but I think it's due to the blizzards we're experiencing which are closing I-94 days on end. If you have a pantry, don't be afraid to go...most provide budget recipes too.

      if there are no government food pantries around look for church pantries. I donate to one near me and in the summer if you have extra from the garden you can donate that and they give it away. theres nothing wrong with needing help and using it if its offered

      @@genevieve8873 I donate many foods too when I can. I've also made blankets for the pantry to raffle prior to our harsh winters. They keep the raffle funds, someone receives a warm blanket, & I feel less guilty when I need their help.

    Reminds me of childhood. Standard meal on any given night was ground beef browned in a skillet with salt and pepper, macaroni noodles and a mix of ketchup and tomato sauce for the red sauce. add seasoning to taste.

    I bet you can skip the sugar if you have left over BBQ chicken. Sounds great and I personally love the seasoned cream cheese in my tomato dishes. It's like the acidity of the tomatoes takes away the "cream cheese" taste and just leaves this decadent rich and creamy flavor that you can't get any other way. I have some left over BBQ chicken and some rotini. I might make this one tonight. Thanks for another great recipe Larry! You are the reason someone gets to eat tonight, and I am thankful for it!
