Removes skin, muscles, blood vessels, etc. from the tongue of beef
Sprinkle salt and black pepper over the tongue
Put the meat in a large zip lock
Please prepare water in the pot
The water pressure is used to evacuate the air inside the zip lock to make it close to a vacuum.
Start by setting the temperature to 59 ° C and the time to 10 hours.
When finished, you may want to bake the whole thing with a frying pan.

It's delicious as it is, but this recipe makes it even softer and juicy.

My mom liked tongue. Not for me. My Mexican friend also loved this. I don't know it is big in Japan. Enjoy.

24°C, not even the body temperature? So it is 100% raw.

24°C is the initial water temperature before heating, recipe state 59°C for 10 hours - tell me you've never used a sous vide machine without telling me.

Why didn't you sear the meat? You know, the more sear, the better it gets.
