- I could come up with another 15 ways to make money off of something like growing microgreens. We live in a 'watching' economy today - people sit on phones and watch what you feed them. You can feed them any kind of content, from live streams to videos of yourself, to monetize a venture in the comfort of your home. The old way of doing business isn't necessarily relevant anymore.

You can jar stuff too... Pickles and saurkraut.
I would look at a local niche too, see any kissing holes where you can top other sales by quality and space in the market. Make jarred beets, those little onions, you know? Beyond fresh product, use methods to stretch the produce.
Possibly use dehydration methods as well as jarring maybe... Dry mushrooms 🎉

Offering local, affordable, and sustainable goods to people will help de-centralize the corporate hold on selling produce (which is a leading factor into a lot of environmental issues in the US). I think what you doing is great Alexandra. Ignore those naysayers at least you are getting out there & doing something. I am in England & so many from 3 years ago said they would do something to get away from all the bs & nothing has been done, all talk & no action!. I couldn't due to health issues but have done so much to change that & now I am looking to move to El Salvador & there are so many opportunities to build that country up & I am honoured to be a part of it, hopefully sooner than later....currently building my digital nomad biz to pay to get there & so excited:)

Two more for you
1) In addition to establishing arrangements with local restaurants also reach out to local Co-ops as well. Co-ops and health food stores typically try to source their produce locally in my experience.
2) many farmers in upstate NY sell the bulk of their product in NYC for a premium. If your find the profit margin is lacking you might consider that approach. I know you said you want to try and keep it as local as possible but a bi-weekly drive to to NYC probably isn't that bad and based on your socials you pretty much take regular trips to NYC anyway.
