No Knead Cinnamon Bread with Brown Sugar and Cinnamon Swirl Center | Tastes Like a Cinnamon Bun

- This is THE BEST cinnamon bread recipe! So quick and easy to make. A no-knead cinnamon bread that tastes like gooey rich cinnamon rolls. Topped with a delicious vanilla drizzle. It is awesome toasted! Look for the complete recipe with instructions below.

CINNAMON BREAD (no knead)
2 cups flour (unbleached or regular all-purpose)
1 cup granulated (white) sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg, beaten
1/4 cup butter, melted and let to cool a bit
For the Cinnamon Swirl
Ingredients:
1/2 cup brown sugar (pack the sugar into the measuring cup)
1 tablespoon plus ¼ teaspoon cinnamon
Glaze Ingredients
1/2 cup powdered sugar (if it’s lumpy, it's ok - you can sift it)
1/2 teaspoon vanilla
1 tablespoon milk
How to Make:
First: Preheat oven to 350° F.
The Cinnamon Swirl: Mix together the cinnamon and brown sugar. Break up any large lumps in your brown sugar. Set aside for later.
The Pan: Butter a 9” x 5” loaf pan. Make a parchment paper sling for it as I did in the video. You don’t have to do this but it will help when you get ready to remove your bread from the pan. Set Aside.
The Batter: Whisk or sift together the flour, sugar, baking powder and salt in a large bowl.
In a small separate bowl (Tip: Or if it’s big enough, you can use the measuring cup you melted your butter in.), combine the milk, eggs and butter. Stir into the dry ingredients just until combined. Don't over mix. Just make sure the flour is wet.
Pour half the batter into the buttered loaf pan. Using about half the cinnamon sugar mixture sprinkle it on top of the batter in the loaf pan. Top with the other half of the batter. Top it off with the remainder of the cinnamon sugar mixture. Gently swirl with a butter knife several times to make the swirl.
Bake for about 40-45 minutes or until a toothpick inserted in the center part of the bread comes out clean. (Mine took 40 minutes.) Cool for 10 minutes. Then remove the bread from the pan to a wire rack and let it cool completely before going on to the glaze.
Now the Glaze:
In a small bowl combine the powdered sugar, the milk, and the vanilla. Stir until mixed completely.
Finally: Drizzle the glaze over the top of your cooled cinnamon bread. Let this set up for about 10 minutes before diving in.

I tried this yesterday. I cut the recipe in 1/2. I didn't have any brown sugar. I used 1/2 regular sugar and 1/2 Truvia Sugar Blend to reduce the sugar high. I still used 1 egg and a standard loaf pan. I baked it in my toaster-oven in order to keep the kitchen cool. The result was a short loaf, and still delicious. The short loaf is just enough!

Made this the other day and it was delicious! Loved it so much I decided to try the cake base without cinnamon and instead added 1 cup blueberries, 1 tsp lemon zest, and 1/4 cup of lemon juice and it was delicious! Thanks for the recipe!

My son requested for a cinnamon bread this morning but I ran out of yeast so I look for a quick cinnamon bread recipe and I found this. It turned out perfect and tasted really good. I just reduced the granulated sugar to ¾ cup and I baked it for 50 minutes. It was jiggly after 40 minutes maybe because I used a different size of pan.

That brown sugar mixture might be useful for my cinnamon sugar pandesal! I’ve been using sugar, cinnamon and butter since I learned how to make cinnamon sugar that way. It leaks out every time! Very helpful!

I made your cinnamon bread but I altered the recipe a little.....I used bread flour and I added a streusel layer on top of the cinnamon and brown sugar and then put streusel on the top too....it turned out great and tasted delicious.

I made your bread today. it was excellent and EASY. I did forego the glaze but did add approx 1 cup craisins and 1 cup chopped walnuts to the batter along with a little bit of vanilla. it took about 55 minutes for mine.........my oven isn't overly consistent with its' temp
it was pleasantly sweet without the glaze. next time I'm going to try it using Monkfruit sweetener which has 0 carbs. I may reduce the sugar a bit also.
it will probably be excellent toasted as well, but I had to try it before cooled completely. so just ate it plain.

This is my go-to recipe for cinnamon bread- my family goes bonkers for it.
Jill, I've watched several of your videos and really like the way you explain things so clearly and they all look delicious. I am keen to try a lot of them - but I have to ask - what method do you use to measure your cups of flour - dip and sweep, spoon into cup and level off, dip and shake, etc. I ask because I am a 'weigh everything' person - and I don't even possess an 'official' measuring cup - US or otherwise. I have also discovered to my chagrin, that a cup of all purpose flour can weigh anything from 120 grams to as much as 160 grams per cup - depending on which method the baker uses - and the many 'conversion tools' available. In my opinion, this can make the difference between a good outcome or a bad one.
Hi Josephine, thanks for writing. I know what you mean about flour. At home when I bake I generally weigh my flour, especially with any bread baking. But most of viewers don't have a scale so I do the scopp and level off with a knife method. I'd also say that you've given me an idea for a video....how to measure food and liquids when cooking or baking. I think it would be a very helpful source of info. Thanks for watching --Jill

All bakers have their preferred way of doing things - and it helps to know what methods the author of a recipe uses - makes it easier to get similar great results. I see many videos of people using a measuring cup to put flour into a bowl - but not (very often) how they got the flour into the measuring cup in the first place.
A British cooking video regularly describes his method as a "packed cup" of flour! 😬

I just put one in the oven :D Nice and easy recipe! The taste is amazing, I didn't leave it in the oven long enough, so the middle sunk. I did use a toothpick to check it, but it did seem a little wobbly. So next one I will leave in a little longer.
Yeah -- not sure why it sunk in the middle. I think you're right -- keep it in the oven a bit longer. Hopefully that will also keep the middle from settling in.

This would make perfect French toast, with my mom’s nuked maple syrup/butter on top (nuking them together prevents cold lumps of butter on French toast, pancakes, and waffles).
