Quick and Easy No Knead Cinnamon Bread -- Ready in a Few Hours!

  • A simple and delicious recipe for no knead cinnamon bread that's easy to make. If you're a first time baker, this is the recipe for you. You'll want to make this bread over and over again.
    Jill’s No Knead Cinnamon Bread
    13 oz. very warm water (12 oz. plus 2 tablespoons)
    1 ½ teaspoon salt
    1 1/2 teaspoon instant yeast
    ¼ cup brown sugar, divided
    1 ¾ teaspoons cinnamon
    3 ½ cup bread flour or all-purpose flour (476 grams)
    1 cup raisins, lightly dusted with flour to help them from clumping
    Oil for the loaf pan
    HOW TO MAKE:
    MAKING THE DOUGH: In a large bowl, add the water. Sprinkle the yeast and about 1 tablespoon of the brown sugar into the water. Stir to combine and dissolve the yeast and brown sugar. Set aside for approximately 10 minutes until the yeast has begun to bloom. It is now ready to use.
    Add the flour, cinnamon, salt, the remaining brown sugar, and raisins. Stir the mixture together, using a folding over motion. A spatula will help with this step. Scrape the sides of the bowl when necessary. Mix until the dough comes together and the raisins are evenly distributed through-out the dough.
    It is ok to leave the dough in the mixing bowl. Cover bowl with plastic wrap. Set it in a warm location (65-70 degrees) until the dough has doubled in size -- approximately 1 ½ to 2 ½ hours.
    PREPARE THE PAN:
    Using a 9”x5”x3” loaf pan, oil the sides and bottom of the pan with vegetable oil of your choice. Use a piece of parchment paper to line the bottom and sides of the baking pan. If using aluminum foil, oil the foil before adding the dough.
    PREPARING THE DOUGH FOR BAKING:
    Once the dough has doubled in size, gently deflate it with the folding over motion, removing most of the built-up gas. With a spatula, form the dough into a rectangle shape. The dough will go into the prepared loaf pan.
    From the mixing bowl, roll the dough into the prepared loaf pan. With a spatula, lightly spread the dough out so it is slightly flattened and evenly spread into the pan. Loosely cover the loaf pan with plastic wrap. Set on counter for approximately 30 minutes until bread dough rises up to the level of the top of the loaf pan.
    Preheat oven to 400 degrees. Adjust oven rack to just below the center of the oven. Once the dough has risen, remove the plastic wrap and place the loaf pan into the oven.
    Bake for approximately 40 minutes or until bread is a golden brown. If using a kitchen thermometer, the temp should be 200-210 F.
    Remove bread from oven. No remove the bread from the loaf pan. It should come out easily if you used the parchment paper or foil. You may need to run a knife or spatula around the sides of the pan if there is sticking. Place bread on a cooling rack. It should be sliceable in about 45 minutes. Enjoy!

    I've never done baking let alone bread making, so i decided I wanted to start with the hardest one. So it took me going to several videos messing up trying again for it to turned out burned. So then I found your video i followed it to a T was watching my bread bake very intensely that it turned out perfect the 3rd time. I'm a person that doesn't give up so thank you for this video, and the step by step guidance. Now I can make it with confidence as this is mine, and my hubby's favorite bread in the morning..       P.S. Thank-you so much for putting in the weight of the flour. You remembered! When I don't weigh my flour, I end up with a pasty gooey mess, or a horridly card-board-dry loaf of bread. I think it is the way I measure my flour, by scooping it with the measuring cup out of the container of flour, (like I see done on TV), or, if I sift it first, (some TV chefs say to fluff the flour before measuring which I do by sifting), I end up with a gooey mess.

    Success! I carefully used the weight of the flour and water you provided. Worked like a charm. (I came to the conclusion scoop and measuring my flour just doesn't work for me when bread making, nor does the fluff or sift then measure method.) Thank-you! I don't like the ends of the bread, but on my first test slice, goodness me! The bread end I sliced off was so tasty, I ate it all up. (Well, not the entire slice. I did tear off a bite for my hubby to taste. And for a man who doesn't eat bread in any form, unless attached to a hamburger, I got a thumbs up!) I sliced the whole loaf up with an electric bread knife, put each slice into a sandwich zip lock baggy, and put all those slices into a gallon freezer zip lock baggie. I now have toast for every morning. LOL! With the perfect amount of raisins in each bite. Goodness, I've so missed cinnamon bread since I choose a healthier lifestyle, (since Feb 2014, then vegan in 2015) I have tossed into the compost heap so many home made loaves of bread of all types in that time frame. But not this raisin bread! This is a keeper! Happy Dance! Success at LONG LAST!

      @@Jill4Today The day after I baked, (sliced and froze), the raisin bread my husband came looking for a slice for a snack! Now this is a BIG deal because he doesn't really like to eat bread at all, (except with a burger or sub, and only from places that don't serve BIG fat burger buns/sub rolls). Likewise with cakes. He eats a small sliver of birthday cake just be polite, and tosses it out when no one's looking. So his looking for a slice of raisin bread had me walking on clouds the rest of the day. Thank-you! :)

    Jill, my husband buys so much in bulk. He got me how many of those big bags of saf yeast at an amish store. Looking on amazon its doubled in price. Crazy. I put in the freezer and fridg. I am going to try this bread.

      Yes -- the yeast pricing has gone nuts, along with flours too. I buy the big blocks of saf yeast and keep them in my freezer as well. It lasts quite a long time and stays active.
