He lost me when he took out the Basil. Chop it up and leave it in folks! Grind it up with the rest of the ingredients in the pan.
I just use some dried Basil.
I use Italian seasoning. Use more than basil. Your palate will thank you.

Can I use dried basil?
Definitely, also mixed herbs. You can also use semi dried basil/herbs, they taste great. fresh basil is best just because it makes it feel fresh and compliments the tomato's acidity well

You don't puree the tomatoes you use a food mill to remove the seeds and skin otherwise the sauce tastes bitter. You sweat the onions first and then you add the garlic to the saute pan with the onions for about 3 minutes.
Yeah I was looking through recipes and was thinking he should have specified to remove the seeds because I’ve seen everyone else say that. When you make this do you recommend boiling tomatoes and then doing an ice bath and peeling the skin then chopping them and removing seeds and then dicing. Or would you say it’s better to roast them with a bit of olive oil and seasoning and then peel the skin, seed them and then dice up? Looking for a good recipe for a homemade sauce for when I make lasagna next week. I’ve done more homemade in the sense of oh didn’t buy jar sauce but I’ve only still used can tomatoes, planning on doing straight homemade this time though.

Does this work with pesto sauce?
Fantastically well yeah. Depending on the pesto you have some options, cause you don't want the tomatoes to dominate. The main flavor of the pesto should be nutty, herby and cheesy. The pesto can get lost in the tomatoes acidity, though. Depending on the outcome of the mix, especially if you are using store bought pesto which is harder to tailor the flavor profile to; here are some options depending on the outcome (only anecdotal); You could add a tiny dash of vinegar to reduce the acidity of the tomatoes making it more mellow (as you would alcohol). This broadens the flavor if the tomatoes are too acidic. You could shred carrots in early to sweeten the mix if it's too hard or bitter. Salt is used to reduce bitterness naturally, so that would be needed only if it's bitter in tomato but salty in sauce. Tiny bit of brown sugar would also work (Italian tradition). You could add a tiny dash of lemon (particlarly complimentary to both components, paired with tomatoes and basil respectively) to add brightness and take away the dominant tomatoeyness. I would suggest white over red wine if you were considering adding a dash of wine if it's too acidic. You could also shred mushrooms into the marinara which would blend with both the marinara and the pesto respectively and also as their new marriage together. It's a good idea to put some Parmesan in when you're making the marinara (block, not shredded) to mend the flavors together and make the marinara more creamy and mellow before adding the complexity of a pesto. I would advise against using Pecorino Romano if it's not used in the pesto, it might clash, but if the pesto is missing a bite, and the tomatoes are still too mellow making it boring, this could help add the umami profile that makes it instively feel tasty (in reference to our natural association of umami/savoriness to a protein rich meal). Grate it in fine flakes on top of the pasta to taste. But I would still put a small parmesan block in as this is the friend of pesto. Don't forget to add an extra clove of garlic, most over the counter pestos are too gentle. The garlic will bring the tomato to the pesto in style. Good luck. Experiment and have fun. You can't go wrong!

Chop the onion/garlic in smaller pieces so they just blend in with the tomatoe sauce
To add to the finer chopped ingredients above, get crushed or diced tomato as well and stir well when done.
Just squeeze the tomatoes while its cooking and/or after it has cookedwith a fork or spatula. I did exactly that. The sauce is better when its not perfectly smooth.

You have to buy all the ingredients and ziploc bags, chop onions , dirty up pots, and wash counter where you chopped onions. Meanwhile the rest of your onions and basil goes bad because you don't need it. Go to store buy marinara one step done.
Homemade food is the bomb though. The trick is to make a rather large batch.
Get a half bushel of tomatoes, you want 30-50 pounds at least. Then you just process them and cook them like usual. Portion some out for that days dinner then refrigerate a little and freeze the rest.
Taste as you go and season accordingly, you want a great flavor when you're cooking in bulk. Use quality ingredients, don't skimp on your olive oil and salt. If you buy cheap olive oil it's probably already rancid.
I only trust California olives; greater market value and stricter controls lends to a better flavor profile because the oil is actually fresh. A play dough smell means the oil is rancid.

Pasta sauce contains alot of extra ingredients that are bad for your health and is loaded with salt. I bought Prego pasta sauce and at the bottom it says made with bioengineered ingredients.
Canned tomatoes are not that bad, they can often be better than fresh ones

Pizza sauce has more oregano. Everyone has a different recipe for their own sauce though.
Authentic pizza sauce is just crushed tomatoes with basil, salt and olive oil, no cooking
