I tried this with shredded cabbage rather than pasta, I'm diabetic and need to substitute something for pasta. This worked out just fine with cabbage. Just a tip if you need to watch carbs. ❤
I did, and it's delicious. I added extra lemon juice and 3 tablespoons extra of coconut milk. Also, I cooked a whole bag of pasta to make a big dish and added spinach. Thank you. This didn't last in my family.😂 Update!
So, Im Italian and incidentally do not like Indian food. I read now from the bathroom that this is considered a "curry". Makes sense. (Sharing in case you make for company.) That said, the taste was wonderful and not tasting like Indian food per se'. I used a bit of Ragu sauce instead of sun dried tomatoes plus 4 grape tomatoes halved,to bake. I also set in 4 uncooked meatballs and 1 cooked sausage. They all turned out nicely. I cooked covered at 350 for 45 minutes then 15 mins uncovered to hit those grape tomoatoes and "marry" everything. I had cilantro and dried parsley on hand. I wasnt sure how much coconut milk to use and may have overused at 3/4 can. Maybe that, along with yhe oil gave me "Delhi Belly". Worth it. 😅

Just finished, delicious. Cook at 375, 2 yellow onion, one parsley bunch, whole thing of sundried tomatoes 1/2 cup of coconut milk. 2 tbsp of paprika and a light coating of italian seasoning. I might have missing something here from the video BUT i added chicken, 2 tbsp of butter and salt to taste… bomb.

Make sure you soak your garlic in oil for a good roasted garlic feel. that’s one thing she left out
