Take the peeled skin and dehydrate it then powder it in your vitamix, nutribullet, or ninja blender. Use it to season rice, pasta and other dishes

This is how I make my marinara. Except I use San marzono tomato’s and fresh basil. I always do mine in a large skillet because it helps cook out the water and caramelize the tomato’s and it doesn’t take all day to cook down.
What I heard was "salt, salt, salt and more salt" lol Cool recipe I'll have to try it with my dad sometime

You don't need to salt the water while blanching. I do it with my mom all the time. Also don't need that little x. I imagine that just makes it easier, but I have no problems without

She's putting that sauce in a jar. Dried basil has a stronger aroma and works better for sauces you're not going to eat right away.

you can do the same thing only put in an oven, less work, don't need all that additional water in the tomatoes. I use my counter top convection oven and get 20 lbs done in 20 mins

My only gripe would be to use fresh basil if you can! Basil is a herb that doesn’t retain its flavour aroma very well when dried

thank you for this 😭 I love spaghetti but stopped eating it as well as any tomato based dish because I'm type 2 diabetic and jarred spaghetti sauce has such a high sugar content. I thought all spaghetti sauce contained sugar and homemade was very time consuming and took a long time cooking. I even stopped eating pizza unless I REALLY craved it. I started watching your videos and the Pasta Queens videos, I'm happy to see that spaghetti sauce doesn't traditionally contain sugar and isn't hard or time consuming. 😊
White wine is high in sugar. Perhaps don’t use it.

I always cook the tomatoes seperatly for a bit and when they reach that saucy consistency, I put it trough a strainer. I find it a lot easier than boiling and peeling them one by one. Also love the smooth consistency it gives.

Also easy: cut tomatoes in half lengthwise. Dip lightly in sugar if tomatoes aren't as ripe. Lay cut side down on a lightly oiled (olive oil) baking sheet. Broil until skins blacken. Remove from oven. Let them cool a little, then remove skins. You can now use the tomato mush for marinara sauce, or directly put it on pizza

My dad makes the best spaghetti "gravy" as he calls it because the flavor is based with Italian sausages and meatballs and that makes it a gravy
I don't want to offend your father's cousine in any way but here in Italy we really don't use sausages or meatballs in pasta.

Never use dry basil for a marinara
Why use both dry and fresh? It just doesn’t make sense. You’re turning a wonderful, simple tomato sauce into and Americanized gloppy bastardized mess. And wine!????!!? Sheesh!
Exactly fresh all the way. And exactly what the last guy said. No need for wine. Just some added water is more than fine. Maybe a little less garlic too

I love your recipes so much. I worked in a real Italian restaurant as a young person and learned to make sauce there. We only used fresh herbs though. Never dry. Am I wrong?
