I take raw pork belly, put it in a deep ceramic pan, cover it with apple cider vinegar, then let it sit in the fridge for at least 15 minutes per side. Then I pat it dry, cut it in about 1" squares, salt it, and fry it in the air fryer. It has a slightly sweet/tangy flavor from the apple cider vinegar. Delicious. Regarding apple cider vinegar: "As a powerful bactericide, it helps eliminate any impurities in the meat."

Just made a power bowl with my own recipe. Browned ground beef, made a 3 cheese queso (im still doing peppers bc i need my capsacin and flavor, with 2 Habaneros, 4 roasted poblanos, heavy cream, cheddar, oaxaca, and colby jack cheese), then roasted 2 wild boar sausage links on my cast iron skillet then steamed them in my homemade bone broth, made eggs, bacon, and sausage patty all cooked in ghee another pan scrambled the eggs, crumbled the bacon & sausage and mixed it all up. All of it finished about the same time. Mixed the seasoned ground beef in with the queso, poured the queso over the egg scramble, and sliced my sausage link into thin wafers almost like a garnish. It was phenomenal.

I've been making bacon for about a year now. I finally found a combo that suits us. I do cure the pork belly with 2% of it's weight in salt, 1% of it's weight in brown sugar, 1 tsp ground black pepper and 1/2 tsp liquid smoke. Rub into the meat and sit in fridge for 1 week, turning every 2 days. Rinse salt and sugar off under cold running water, rest on rack in the fridge overnight. In the morning, I light 1 bbq burner set on low and put pork belly on opposite side turning occasionally until it reaches 150F internal temp. Then cool in fridge and slice. I don't bother with the nitrites anymore, and have been wondering about the sugar. I will omit it the next time. But I highly recommend curing it with the salt and pepper. I don't have a smoker. In the winter when I can't use the bbq, I cut the belly in half and put it in my dehydrator for about 6 hours. And I usually freeze some of the bacon. It is wonderful diced up in soups.

Tried to register but it wouldn't let me without a video. I am wanting to reverse type 2 diabetes, and HBP and get off the associated medications. Wanting to be more physically, mentally, and spiritually fit, and prepared for the days ahead. I recognize that there is a distinct connection between the spirit, soul, mind, and body. Meaning it's not possible to be spiritually or mentally healthy alongside an unhealthy body caused by lifestyle choices. I'm a 61 year old female, current weight as of 6/19/2023 is 305.2. My top weight in 2019 was 360. I lost about 55 lbs. over 18 months beginning in 2019 with a low-carb/Ketogenic eating plan and a fasting regimen that included daily intermittent fasting, alternate day fasting, and periodic prolonged water only fasting of 5-7 days. The weight loss was slow and at times frustrating, even on an extended day fast my blood glucose remained elevated. I got off track when the COVID planned-demic hit and I foresaw the escalation of end-times events with the NWO, one-world government, one-world currency, and one-world religion, vaccine mandates, etc. I am now trying to get back on track (I'm on day 5 of 98% carnivore) and just discovered your UA-cam channel recently. I've learned that I suck at moderation (i.e. Keto/low carb 50 net grams or less of carbs per day) and do much better at restriction (i.e. Carnivore, or as close to zero carbs as possible).

I am transitioning and I have to b so careful. Too much fat and boom! Explosive diarrhea. I have gotten past the exhaustion, the caffeine withdrawal, the sugar withdrawal. But I tried two eggs, two pieces of bacon, and a ground chuck patty and boom. I have to add back in some fiber to balance my gut. So I had some steamed broccoli, was fine the next mrng. This is very frustrating to me, as I wk ft and cannot have this problem on the job. Everyone makes it look so easy but I am not there yet and getting discouraged. It's been 3 weeks, I'm 90% meat based, but still cannot handle a pure carnivore diet. I do better w/o eggs, even tho I love them, and so far bacon is not my friend.

You can do a salt aging too for your pork belly.
That’s how meat was kept before refrigerators came around.

Smoking used to be the “curing”. Even today, in many countries people smoke their bacons, sausages, hams. Alternatively, people used to salt cure their meats but then it didn’t need smoking. It used to be either smoke or salt.

Since you're doing all this for your health you really should stop using plastic containers, especially for something you have to heat. Glass containers are very common now. Just found your channel, will be checking out more of your vids.

Mixing the eggs with beef or bacon (or cheese) was hurting my stomach, so I'm now eating eggs solo, or with only butter & a bit of cottage cheese

2%-5% salt to meat. I like 2.5% for bacon. You can vacuum seal it and let it create it's own brine and be done in 4 days. You can put it in a covered dish and it'll be similar, but in 7-10 days. Set it on a rack in the fridge over night and let it build a pellicle. Then cold or hot smoke it.
