- a good few goodies from the garden make a perfect salad! We finally sample our pickled beets, recipe below, and replant them for the early winter!
2 parts water
1 part white or cider vinegar
fresh garlic
fresh or dried dill
red pepper
dried mustard seed
coriander
sugar
black peppercorn
no measurements because its up to you and your taste!

Those pickled beats remind me of Grandma's.
Now that you made room in the pickled red beet jar toss a couple of hard-boiled eggs in the jar with the juice. Red Beet Eggs are tasty and are good to add to a salad. I am a fan of Bleu cheese dressing, but any dressing works.

Pickled beets are great, have enjoyed them for many years. Have never tried the chard stems that way, but I am sure that would be a winner as well. One can enjoy a lot more with fall gardening. Good luck.

Have been awake here in TX. since about 3:15 am. as I had knee replacement surgery on my right leg, back on July 26th, and so sleep is still coming a bit sporadically, until I go thru additional p/t and heal further.
Anyway, I saw this video post, and I have to say, it's made my morning a good deal brighter!!

I'd never thought of using Red Beet Juice (or Vinegarette) as a salad dressing before, but I will now!!
I plan very soon, on using canned Red Beets, w/ Cider Vinegar, Sugar, etc. to make the "Pickled Beet & Egg" dish, which I mentioned in my reply to one of your previous videos, and now that I've seen what you did here, I DEFINITELY PLAN on using some my pickled Beet juice on a salad of my own!! 😋 😊
Btw; I have to ask: what type of beans are those that you picked and put in your salad??
They kinda looked like white Lima Beans, but I just couldn't tell.

Your welcome lol. I cut my swiss chard up to 6 or 7 times in a season. Usually get sick of eating it by then. Could probably get more cuts with your weather. I'm in Canada with a short season.

When you empty enough room in those pickled beets, toss a few boiled eggs in there.
A good friend pickles beets using his Grandma's bread and butter pickle recipe. Good stuff.
When you boil your beets Nyna don't cut the root or stem off all the way or they will bleed out during cooking
