It's mid July and things are in full swing. We have several harvests coming these next 2 weeks, including our corn, beets, possibly the carrots and potatoes, and somehow, our chard is still giving decent salad leaves!
my mom and grandma and aunt.. they were awesome at growing a garden.. the biggest in the green thumb business!!! makes you appreciate the hard work put in!!! I love farming,,. its very important for all of life!

Each year you gain new knowledge and it shows.
A quick tip for your tubers (potatoes, carrots, beets, radish, parsnip, sweet potato, and the like).
Just like you learned with the potatoes, grow all of your tubers in mounded soil, yes, even carrots, this includes onion, scallion, chives, garlic, bunching green onions, and other bulb types as well.
As the surface of the fruit begins to grow out of the soil, push more soil around it because it will continue to grow and expand. When they grow to the size you want, harvest them. You notice that the beet was brown on top and purple under the soil line. Mounding the soil will keep the whole beet purple until you want it, just remember that similar to your greens too big means not as tasty because it will change from a tuber to a hard root.
Sweet potatoes grow similar to other potatoes except you can eat the vine and leaves. It is typically recommended to contain sweet potatoes in a limited area because they tend to spread under ground while regular potatoes do not. In fact it is quite common to have sweet potatoes sprout seemingly out of nowhere the next season where they were not originally planted. Good loose dirt allows the tubers to grow large and full.
Your carrot shows the evidence of over crowding with the skinny middle section and the variety you planted needs deeper soil as well.
Another tip for your greens, as the stalks and leaves get too big and begin to bitter, thin them out so the plants have space for new young growth.😉

Easyiest way to enjoy a beethroot is the following. Cook for about 20 minutes, then peel, slice and enjoy. I LOVE it!

I pickle my beets and use the left over juice to pickle eggs, gives great color and flavor!

Most people around here that grow beats can them like pickles. I can remember Grandma doing this years ago. There is no substitute for home grown produce!

Beets: clean, slice, put them in a jar with vinegar and sugar. The longer they soak the better but you eat them in a couple of hours
corn looks great.. still just a bit green.. another day or 3 and then ready to eat.. string beans look great, maters coming along.. nice video!!

I enjoy beets chopped, drizzled with olive oil a pinch of salt and pepper and roasted in the oven. Fermented beets are delicious as well.

Hi Nina - boil the beets with a bit of stalk still on them so they don't bleed. Then skin, slice, put some vinegar and seasoning on and enjoy!
We like pickled beets. There's a pretty good recipe for canning them in the Ball canning book. We've canned 88 quarts this year!! Which was 8 five gallon buckets full!!

Let's see...beets. Roasted they're really good. You can pickle them too. My Mom used to roast them,then slice one up into discs. Put some butter on the bread, lay on the warm slices, a bit of salt, and a delicious beet sandwich! And we should thank YOU for all the awesome content you provide. I love the fishing vids best, but also have learned a thing or two from your gardening ones too. And then there's just plain old watching your beautiful self doing all these things. You have the best eyes and a few other parts too.... " if you know what I mean" =)
The squirrels aren't a problem. The deer are. They got into my sweet corn. I put chunks of Irish Spring soap around the garden to keep them at bay. With beets, you have to skin them before cooking/processing. But, they're worth the trouble!

Up nort way to eat beets. Stems, just cook until tender, put butter on. Beets, cook until skins come off. Cut up & heat with butter. Also pickle them, wonderful!

We enjoy the greens sautéed in butter and beets boiled then cut up put in balsamic vinegar with garlic powder. Enjoy!!

I just blanch my beets long enough to just peel the skin off (by hand) and I'm not much of a pickled beet guy but butter and pepper oh yeah 👍!!!

We use a juicer for beets along with carrots, apples, lemons, garlic, celery. Where did you get that composter?
