- We challenged resident Bon Appétit supertaster Chris Morocco to recreate a General Tso’s chicken recipe from 'The Woks of Life' in the Bon Appétit Test Kitchen. The catch? He’s doing it blindfolded with with only his other senses to guide him.

They seem to have stopped during lockdowns for understandable reasons, guess they realized it was too inefficient and took too long? Or Chris didn't like doing it, but that seems less likely.

He never learns. She knows her cultures food better than he does. He should always listen. But he chooses to think he knows better. Why is that? 😂

@@koolguy728no, that’s literally just how Chris is lol. He does it all the time. He doesn’t mean any harm by it, he just has his own instinct and thoughts on how to do things. But it’s a common occurrence. I would say it’s more rare for him to take and use advice, than it is to take advice just to not use said advice.

Agreed. I have 7 types of Soy Sauce in my pantry (most of them are admittedly Japanese variants not Chinese) plus 2 Tamari styles and other Asian sauces.
I really need a supplimental 5min "Chris tastes Soy" episode.
I very much agree. I love Soy sauce. I love Tamari....
But then I tried La Choy Soy Sauce. It was awful.
world of Soy Sauce is on the insane side especially with how it tastes and how you use it. But the manufactured Soy Sauce that cheating the process has me really worried

The thing is, Chris had 7-10 different soy sauces presented to him. This whole series is based on him being a "super taster" and having the most delecate taste buds on the planet (honestly, it's why I hate all. His recipes... Bc they usually turn out so bland).... But I'd love to put his super tastely bids to the test and have him blind evaluate 10-200 different soy sauces!
Being told it's a double fry and then dismissing it immediately after, then claiming "It's fussy" when confronted. Why ??? 😂

he did the same thing with the compost cookie episode...well he wasn't given that hint but he mentioned it himself and then dismissed it b/c it was too much effort. That kind of seems counter to his otherwise precise and fastidious nature

You can tell Chris doesnt make a lot of Chinese food because Velveting the meat is a very common technique for restaurant Chinese Food.
Agree, even my mother who rarely cooks and didn't even learn until her late 20s taught me about velveting meats for Chinese dishes
Disappointed in Chris when he equated helpful advice to "lets just double fry everything now". Extremely dismissive and felt a bit defensive that he could be wrong about something.

I do want to see Chris be able to do try as much as he can until he is very happy with the end result.
I'm surprised he was resistant to the second fry. It's the key.
I miss when recipes had a specific chef attached. A lot of times the ingredients would reflect that chef’s POV, it was a lot more fun than making a more general version of a type of dish.

The pure amount of ingredients for Chris to identify here is staggering.
It's actually a pretty standard stir fry with a few minor tweaks to get more in the spicy, sweet direction. I think he just doesn't know much about Chinese techniques and common ingredients.
Have to agree. I'd have done worse but I'd have gotten almost all of the ingredients just by expectation of what is typical. @@mmarksz86

That would be a hilarious April Fools - maybe cut it into bite sized pieces and stack them to throw him off the scent.
He notoriously hates peanut butter so he'd probably say a bunch of stuff about that.

Speaking of General Tso's Chicken let me put ya'll on:
Jane G's Dim Sum House in University City West Philadelphia makes quite literally the best General Tso's Chicken you will ever have. It's a tad bit expensive but it's so unique and delicious it's worth every penny.
Chris should be allowed to voice memo his gut reactions, to listen to while picking his first ingredient list.

I’m really annoyed with his attitude about the double fry. First, he asked the token Asian for help then proceeded to ignore it. And then determines it’s a fussy step. Chinese cooks have developed this technique for centuries and there’s a reason those techniques are still used today.

And then he says next time he will double fry cornflakes. So childish. Is it so hard to accept that you made a mistake and learned something?
He made an objectively worse dish as a result all because he "thought he knew better" than generations of talented Chinese chefs. He consistently whines about techniques that are even moderately involved, and I think he makes worse food because of it.

You guys need to do an episode where you have him taste one of his own dishes and see if he can recreate it
Chris is truly a cooking savant - even when he doesn't get it 100% I am always so impressed by him just identifying so many major ingredients. Maybe some day he can come visit us at our test mill and bakery in Lynn, MA and do a taste test with our stone-milled whole wheat organic bread versus the industrial roller milled competitor 👀

Golden Mountain is a Thai soy sauce, which is quite different than the standard Chinese soy sauce. If you're wondering why your homemade Thai food is not hitting it, try replacing the soy sauce with GM.

There is a dish at the Chinese restaurants in the south that have "Imperial Chicken" It is similar to General Tso's. I can't find the recipe anywhere and I have looked everywhere I can think of even under rocks lol. Anyone know where I can find it?

I've had at least 15-20 versions of General Tso’s Chicken and they were all similar but, all different as well. Trying to replicate *one* version seems a useless effort.
