BROWNIES
6.6 ounces bittersweet chocolate
1 stick unsalted butter
5.55 ounces confectioners’ sugar
2 large egg yolks
1 teaspoon kosher salt
2 teaspoon vanilla extract or paste
6 ounces all-purpose flour
FUDGE FROSTING
4 tablespoons unsalted butter
1½ cups (300g) sugar
2 tablespoons unsweetened cocoa powder
¾ cup whole milk
Generous pinch of kosher salt
1 teaspoon vanilla extract
1½ ounces unsweetened chocolate
BROWNIES: Preheat the oven to 350°F. Lightly butter the bottom and sides of a ¼ sheet pan. Line the bottom and two longer sides with a piece of parchment paper, smoothing to eliminate air bubbles. Melt chocolate and butter in a large bowl set over a double boiler, stirring often with a flexible heat-proof spatula. Remove from the heat and add the sugar, yolks, salt, and vanilla and whisk vigorously. Add the flour and fold thoroughly with the spatula until you have a homogenous dough. Spread into the prepared pan with an offset spatula in a smooth, even layer. Bake in a water bath until the brownies are set, 18 to 22 minutes. Best explanation is that the camera work in all of these are fantastic. Claire's found an exceptional production partner in Vinny; think Cal's been with them a while too. Their style, humor, and vibe work so well together. Feels like a team that are all on the same page.

Yeah, Bon Apetit really dropped the ball with her I remember her basically having a panic every episode. And it was played off for laughs. At least here she is calm, and excited to bake!

I LOVE that the most stressful part of this recreation was A Cat Being A Cat. SO much more fun to watch (and, presumably, more fun for Claire) than the stress of That Other Place.

Listening to Claire explain why she likes making the Claire Recreates videos made my heart so happy. We always wanted Claire to just have a good time and not be stressed out/feel forced to make the videos she didn't want to make. Seeing it come full circle from having to routinely make gourmet versions in a work environment where all that mattered were views and making money- to now having the freedom to create the videos the way Claire wants to, without the pressure, mandatory layout, negative energy or working overtime/feeling burnt out is so wonderful. And frankly, quite badass. We love you Claire
Love this! As a European who has never eaten or seen these snacks, I don't watch it for sentimental reasons - I just love watching Claire problem solve and get creative. My European wish list: Solero ice cream, Kinder eggs, Werthers originals, Daim bars.

We have Kinder eggs and Werther's Originals in America as well. I have fond childhood memories of Werther's. But we don't have Solero or Daim (which is a shame, because Solero bars look magnificent!).

Loved seeing Claire truly upgrade these. That was always my favorite part early in the totally different and legally distinct series - watching her not just exactly replicate something, but actually make it delicious.

This amount of difference from original product to gourmet homemade version is exactly what I’d expect. The nicer more natural chocolate colours, the natural colours of the chips, the size of the chips. It all goes to show that a human being made it, rather than a bunch of machines. Enjoying this series so much and can’t wait to see future episodes.

And I LOVE seeing Claire go for something without thinking it a millions percent through! Sometimes we see a well thought out plan work or not in the anticipated way, but it's so fun to see her just GO for it!

Man, I love this series. Something I'd love to see that I feel is kinda missing is getting to see other people's reactions to tasting your snacks! The camera and sound guys seem really cool so you could definitely get them and maybe even Harris to try them?!
Also, not to dream too big here, but I miss Claire and Brad's ridiculous dynamic from a certain older show, and it would be such a treat to have guest assistants/taste-testers. 😂

the immediate regret after the bite of the cosmic brownie is very funny. i can understand but for some reason i still love them. it's what i love about kraft cheese slices. plastic-like goodness 👍

Yup. My brain fully recognizes that most of these nostaglic foods are actually legit garbage and would taste disgusting if I did not have the memories attached. and they totally are not food.

@taren1d kraft singles are just various cheeses with some sodium citrate (or something similar) added just so the cheeses melt together properly and don't separate. It is no less real than any other cheese.
Cosmic brownies on the other hand are vile abominations that do not belong in this realm
I know it's always been this way, but I adore how real this video is. No overreaction, no blowing out my eardrums, no overstimulating flare, just an enjoyable watch. It gives the unexpected moments more impact, too! Like Claire totally not drilling into the countertop was that much funnier bc it was such a contrast to the rest of the video. Ugh what a team.
I'm so happy she left Bon Appetit. The laid back style of these videos is much more enjoyable than stress and pressure of previous ones.
I remember hearing they changed the Cosmic Brownie recipe, which is supposedly why they taste different now, it's not just nostalgia. The old recipe, as I heard, used to contain honey. There's an actual recipe someone shared online, I tried when making brownies once, it was shockingly close to how I remember Cosmic Brownies; they were a little thick, but maybe my baking pan to batter ratio wasn't right. He has a lot of fast food and snack food recipes; his name is Jordan Howlett, I'm not doxxing him, that's the name he shares on his UA-cam.

Nah, these brownies were always bad. I never liked them. If I wanted a brownie, I wanted a flaky top chewy brownie - a real brownie.
Yea, I haven’t had a Little Debbie brownie in years, but they were inedible back then, exactly as Claire described them… artificial and dry.

...I feel like Claire's entire show would make an awesome mobile game, including periodically trying to figure out how to achieve a project while saving the cats and herding chickens. I love the problem-solving that these projects require. Super fun to watch, and I'm always learning something.

I really loved hearing Claire say that she feels like her accumulated baking/dessert knowledge is put to use in this series. She has so much wisdom about desserts and that is why I'm a fan of this series (and why i was a fan of the former) -- she gets to put her knowledge to use in a way that only she can. I'm so happy to be here.
i love all the little moments that Claire unmasks in this, whether she's excitedly waving her hands, or shaking her head, it's just nice to see adults express emotions like this, relates a lot to what Claire said about allowing yourself to 'play' as an adult, which as someone graduating with a game design degree it's really interesting to unpack the restrictions adults have on play and how to tap back into the childlike joy in play

I was the kid that LOVED Fig Newtons, and I had actually wondered how, or if, I could make a home version. So that'd be my vote, but I love all your videos!

I also appreciated how down to earth and your love for people as well as your colleagues. I applauded your stance and boldness when you left the previous network. I saw Ann Reardon from How To Cook That uses a kid rock tumbler to create candy shells on her jellybean and it worked amazingly. It may not be as shiny as the commercial ones but it's silky smooth. Please like this comment so Claire could see

Something that could be fun with some variety could be Lunchables. All the varieties could be done up with higher quality ingredients and homemade components and I think Claire would have a lot of fun on crafting the look for them.

Sometimes I feel bad that Claire has such a sophisticated palette because the pure joy I get when eating Cosmic Brownies is indescribable.
Claire may be a super taster like me. I tend to pick up flavors that no one else does. I can balance flavors by taste. I also can't stand bitter or chemical flavors. My ex just didn't get it and drowned everything in sauces because he couldn't really taste anything and was disgusted when I tasted batters to see if I forgot an ingredient because " there's no flavor" when I could taste everything.
This episode is the first that gives me TRUE Gourmet Makes vibes and it makes me so happy! 😍

I was really surprised how thick and dense these were the first time I had one. And the "unbaked raw flour" texture is a spot-on observation.

The point is to do things that aren’t simple but are challenging. And the brand recognition of what she chooses is also important- payday isn’t very popular so likely wouldn’t get the views that cosmic brownies will
I really enjoy seeing Claire have so much enjoyment out of the recreating. I would love it if she could uncover the mysteries of the Star Crunch or Oatmeal Creme Pie. One of the primary things Ive learned from watching is make the recipe your own. She has taught me how to have more control in my cooking and control sugar in recipes. Much Love

they did change the recipe a lot back in like 2010 so if it taste different to you from what you remember is bc it probably is different

Oooohhhh! It's been years since I watched Claire reacreating branded foods! The last time I saw her do that was when she used to be in the Test Kitchen of Bonapetit! After the whole Bonabrexit of employees I didn't able to look for if they had established their own channels! I'm so glad I stumbled to this! Instant subscribe! I have a new long form series to binge! Gosh I never knew how much I miss Claire until I saw her face and heard her voice again! I'm excited!

I make far better brownies but will still buy Cosmic Brownies sometimes. For me, it's the convenience. Are they great? No. But they are still a sugary treat.
I personally love the Frosted Fudge Cakes and Fudge Rounds. The Peanut Butter Creme Pies are amazing, and I will eat just half of one in a sitting.
