- Let me take you back to my roots. This recipe is based on a traditional mustard soup from the province of Groningen. I have used Groninger Mustard for this recipe but you can use any whole grain mustard you like. I wouldn't recommend to use a smooth mustard as the taste will be too intense. Most mustard soups are made with cream but I am using kohlrabi, potatoes and a bit of flour to create a creamy texture. The traditional way of serving this dish is with bacon but I recently found a nice vegan bacon which I used. I have served this recipe in the past with crispy onions, which is actually as delicious as the vegan bacon.
⫸ INGREDIENTS / 4 big portions or 6 small
◆ GRONINGER MUSTARD (use Groninger mustard or any whole grain mustard you like) 4 tablespoons
◆ ONION 1 small size
◆ GARLIC 1 clove
◆ KOHLRABI 1
◆ POTATOES 2 small size
◆ LEEK 1
◆ VEGETABLE STOCK 1 liter | 4 cups | 34 fl oz
◆ DILL 1/2 teaspoon
◆ OLIVE OIL a little bit
◆ FLOUR 3 tablespoons
◆ HONEY 2 tablespoons
topping
◆ VEGAN BACON (or if you like meat than real bacon) or CRISPY ONIONS 1 tablespoon per serving
◆ CHIVES a little bit
