Hi Ruth, your souse looks great!!!!!!!. I am from the Trinidad and my mom use to make souse and I love it; and your looks just like my moms. The only thing i did not know is adding the baking Soda instead of salt, and I have to try it.
My dad from Grenada pressure cooks everything in one pot then lets it pickle over night. He also adds more fresh cucumber and onion the next morning. He made it with cow heel. I love it so much. It’s like a cold soup.

I’m from Dominica and we make it much the same as St Lucia. It’s all boiled down and reduced to thicken and served hot. I couldn’t help but notice the absence of lime/lemon.

I boil for about a half hour then change water and put in pressure cooker xl because I have no patience lol my mother used to make it that way but now she uses a pressure cooker....I love me some souse! By the way I'm from antigua but raised here since 5.
My daughter's uncle makes some really nice pig foot souse but I have never been able to get the recipe and method from him. Thank you soooo much for posting this. It looks just like when he makes it so I know it must be really delicious. I will be following your method to make some very soon.

I have every faith it will turn out brilliantly as you have made the method so simple to follow and the ingredients are what I would normally find in the fridge. Some of the other recipes I have seen use all kinds of ingredients and don't look anywhere near as appetising. I think people forget that we eat with our eyes.

When I got home I did the cucumber etc. I left it in the fridge overnight and just heated up a bowl full. For a first attempt I am very happy with the result. I just needed to add a bit more salt. I am SO happy I found your channel as your prep and method are very easy to follow. I am going to freeze some so none is wasted but i will be having another bowlful later. Thanks again!
Christmas day this was part of my family lunch. I was the one who did it. I wash with lemon and vinegear and season overnight. Next day i add my water and gave it a nice boil with all my seasoning for flavor and my local seasonings also. Was finger licking and the worst part i took all the heat the souse finish on me i didnt get to enjoy some.🤔😢 but am making some more next weekend for my boyfriend birthday party. St.Lucian the best all the time.

I'm 60+ and I've been making this since I was 15. I use a cheese grater to grate the onion and cucumber (so every bite has a little pig feet, onion and cucumber). I also add white vinegar to sauce and let it marinate for 24 hours....which is hard to do....smells so tasty. When I have family over for a pork Fest, I have Souse pig feet, BBQ pig feet, boiled pig feet and pig feet stew, collard greens, potato salad, and peas/rice. And after dinner I contemplate running off all the cholesterol..but I never do🤗
What nasty stuff...omg.. if you throw away the water used to boil it.. there's nothing left.. my great grandfather always told me that.. it makes no sense eating any food you cook if you throw away the water you cook it in...🤦🏽♀️ Now..I won't put baking soda or powder in my pig foot.. I thoroughly washed, cleaned and seasoned it three days ago.. I also passed it over the fire to roast any fine hairs.. now I'm gonna boil my tasty pig feet.. and will never throw that juicy water away....heyyyyyy!!! (was supposed to be on a diet but quarantine got me coming off)

These comments tho...Everybody has their own variation of how they make things based on what ingredients are available. Lest we forget that alot of Caribbean dishes come from British (European) cuisine. Every country has a different twist. That doesn't make it wrong. Black Pudding in Europe also known as Blood Pudding that is made with oats or barely is different then a Guyanese Black pudding made with rice and a sour mango sauce. The souse in this video is the souse I know. Ya talking about dicing up the cucumbers. NO NO NO lol
I just replaced the pigs feet with chicken thighs. They're much more tender than any other part of the chicken imo and I use the same ingredients. I cook them with the skin for flavoring and then skin them before serving. It's so much healthier.

Don't say everybody does that in the Caribbean because the best Souse is from Barbados. The main one is done with Pork meat, along with the feet, ears, some people may use the tongue also. The cucumber is diced finely or grated, hot pepper is one of the things used. It's served with Black Pudding and slices if Breadfruit, the Pickle is what makes it what it is. The ratio of lime and salt is important. They also do chicken feet, cow foot, cow skin, sea cat, I have also had chicken done like that, some have tried fish too.
