      PA too. I make soft pretzels every year on January 1st. I use food grade lye instead of baking soda wash. But my dough doesn't stretch as easily as this video.

    Dan, I made your pretzel recipe this afternoon just as a snowstorm is bearing down on central Maryland here. They came out PERFECTLY. Spraying the parchment paper was EXCELLENT advice. The pretzels lifted right up (even with the baking soda wash over them.) Good call.
    Oh, and I sprinkled homemade cinnamon sugar over half of the batch for variety. #EPIC! Keep your excellent recipes coming.

    would substituting in some whole wheat flour have a similar effect to adding the wheat germ?

    How long should I hand knead this dough? I have made these a few times and they taste amazing but I havent got the kneading down yet, I wish I had a stand mixer !

    Hi Dan, I a interested in the Turbofan Moffat convection oven you use. I am thinking of buying one. I was hoping you could tell me what it is like to bake with. Have you used it commercially? does it chew up dollars being electric? does it cook evenly if you are using all shelves at once. And anything else you care to tell that you gave experienced.       Hey Sten!
      I really enjoy baking with it, don't have any negatives to share at all really. We baked with another 5 full sheet convection oven prior, and did not notice much change in electric when we made the switch. I can say that for baking cookies and heartier items, all 5 shelves can be filled and bake evenly. For cake and cupcakes I find that there is less even baking when I use all 5 shelves (so I end up using only top, middle and bottom.) But all in all I love it.

    looks really good...i was wondering...when you use your stainless steel counter...for a work surface...how do you clean it up later...i have quartz countertops..and was wondering the same..after rolling out a piecrust...with flour..whats the easiest way to clean up a work surface...dish soap?? fantastic...formula 409...let it air dry??

      Thank you! I find that restaurant grade sanitizer works well on stainless steel. Vodka of other clear alcohol also shine it up nicely. Im not familiar with the marble- more so the stainless.

      I'm a soft pretzel addict,and non Amish.
      I think he referred to them as such because of the Amish food stands always making && selling them.

    I've made this recipe twice now and the dough doesn't rise. The taste is spot on to Amish pretzels (I live in a major Amish area in central PA) but the dough refuses to rise. Very aggravating.

    my dough is always too sticky. it sticks to the bowl. the table. my hands. everything!

      Hi Stephen. Have you tried adding a little less water, maybe 2-3 tablespoons less? Also make sure that you are kneading the dough enough and allowing it to rest so that the flour can fully absorb the water. Happy Baking!

    I think parchment is natrually nonstick there bud

      You'd be surprised- the baking soda causes the dough to stick to the parchment :)

      @@bakedbydan yup! I always had them stick to parchment! I spray a plain metal baking sheet extra well and they do not stick
