Homemade Soft Pretzel Recipe

- These delicious homemade soft pretzels are so easy to make at home that you’ll never buy them at the store again.
Ingredients for this recipe:
• 2 cups of warm water between 110° and 115°
• 1 ½ tablespoons light brown sugar
• 1 packet active yeast
• 1 ½ teaspoons sea salt
• 3 ounces melted unsalted butter
• 5 ¼ cups all-purpose flour
• 1 tablespoon oil
• ¾ cup baking and 1 gallon of water
• 1 egg yolk whisked with 1 tablespoon cold water
• coarse kosher or sea salt for topping
Makes 12 pretzels
Prep time: 15 minutes
Resting Time: 1 hour
Cook Time: 20 minutes
procedures:
1. Pre-heat the oven to 450°.
2. In a standing mixer bowl, add in the water, brown sugar, and sprinkle on the yeast, whisk together and let it sit for 5 to 7 minutes or until it forms a foamy raft on top.
3. Add the hook attachment and turn the speed to low and pour in the salt and butter.
4. Add in the flour 1 cup at a time until combined and knead the dough on low to medium speed for 5 minutes.
5. Add oil into a large bowl or container and place in the dough. Cover with a towel or lid and rest until it doubles in size, about an hour
6. Before it is time to form the dough, bring the baking soda and 1 gallon of water to a boil in a large pot.
7. To form the dough, take a small piece and roll it out until it is a 24” long rope. Form the dough into a U shape and holding each end cross over each other and pull down to make a pretzel with the ends slightly over the other part of the dough.
8. Turn down the boiling water to a simmer and cook each pretzel dough 1 to 2 at a time for :30 each and then place back on a cookie sheet tray lined with parchment paper or with a silpat
9. Once all of the pretzels have been cooked in the baking soda solution, brush the tops with the egg wash and season heavily with coarse kosher or sea salt.
10. Bake in the oven for 12 to 15 minutes or until golden brown.
CHEF NOTES:
• How To Reheat: Place on a tray and wrap in foil and bake in the oven at 350° for 5-6 minutes or until hot. Likewise you can also heat in the microwave until hot.
• Make Ahead: You can make pretzels up to 1 day ahead of time and reheat before serving.
• How To Store: Keep wrapped in plastic in the refrigerator for up to 4 days.
• Feel free to make the pretzels as thick or as thin as you’d like and also consider making pretzel bites or rods.
• When adding the water to the stand mixer I usually like to go a little hotter like 118° because the bowl is usually a little chilly and drops the temperature of it by a few degrees making it perfect for the yeast.
• You may need more flour when kneading the dough in the stand mixer. The goal is that the dough be very soft but not sticky.
• A silpat is a non-stock baking sheet made of a blend of silicone and fiberglass. They are super versatile, can handle high heat and last a really long time.
Made it today, came out great! :)

Omg ty I just made them and they came out perfect 👌
omg thank you. I love it :))
I made these last night. They were amazing! I’ll always use this recipe. Making another batch today with a cheddar beer dipping sauce.
I study your baking videos every night almost. You have such a relaxing voice and every recipe I've followed has been absolutely fantastic. Thank you so much for taking your time out to make this video
That’s so kind of you, thanks for watching!

Made these with my 9 yr old grandson and my electric mixer. So easy! Turned out perfect!
Great recipe! I made it for my mother in law for her 82 B-day! She really enjoyed it and rest of the family with her. Thank you!!
Thank you so kindly!!
OH, MY, GOSH! My husband followed the recipe and made your pretzels just now. They taste excellent! Superb! Delicious! They are not greasy, yet so tasty. Thank you Chef Billy.
Ive made soft pretzels in the past and they have never turned out right, but these came out perfect! I would definitely recommend!!
This recipe is fantastic. Came out great and delicious the first time. Just made again today, instead of the baking soda I opted to do a quick lye bath and they were that much better. I live in Philadelphia and these match any pretzel I can get here! Thank you for the guidance!
That’s awesome, thanks for giving it a shot.
Made these and by far the best pretzels I ever had, I made them again and used low moisture mozzarella string cheese, little oregano and salami sticks and made a pretzel filled breadstick. So good!
Been looking fwd to making these! Did it with the kids. They probably played with their dough a bit much, making it super springing- so ended up with a few different shapes! They tasted delicious!
I like your style. Not pretentious but cool and entertaining. Simple, straight forward. Good job!
Appreciate that, thank you.
After countless times attempting pretzels that came out not tasting like a pretzel I have finally found the best recipe! Followed the recipe to a T and they came out perfect. Thank you!
Yours is the third pretzel video I've watched and the only one that got the amount of flour right. Bravo!
Flour amount can literally change by environment and brand.... its a specific consistency you look for
Made these this afternoon. LIGHTS. OUT. Perfect, easy recipe. Thank you Chef Billy.
I have tried 3 recipe...this is the last one you will ever need! Great tips along the way and excellent results! So proud of me! lol
Love this! Thanks for trying
Just made these. They came out fantastic. Not that difficult at all following your easy instructions. Ty
I made these tonight. BEST PRETZELS I HAVE EVER HAD! Billi, this video was very helpful. Thank you. The trick about proofing in the oven was new to me!!
I wish I could upload a photo, they are beautiful.
Ok they are absolutely terrific!!! I only had organic white bread flour and so from the start the dough wasn't easy to handle, even after adding an extra half cup of flour (6 cups total). The dough was extremely sticky even after rising so I ended up making smallish pretzel loaf-stick-buns. BUT! They taste absolutely awesome. Also, spray/use a little oil on the baking sheet parchment paper--my loaf-stick-buns stuck to the paper.
Glad it ended up being ok!
I tried this and winner. So easy. They didnt brown as well as yours but the flavor was better than any soft pretzel I've had. Thank you for sharing your recipe.
Thanks for giving it a shot!!
I converted all measurements in grams and substitute a cup of different flour such as Red Fife organic. Before baking I compress each pretzel shape a little and wind up with a pretty kind of bun for a breakfast or lunch sandwich- delicious- great instructions - thank you.
Great!!
Thumbs up for explaining what the baking soda does!
You got it!
Thanks for the amazing recipe!!! I put cheese and pepperoni, everything bagel seasoning, cheese and pesto on them and made 16 total for a whole weeks worth of food for 3 kids. You're a lifesaver. They taste amazing!!! BTW, the proofing in the oven trick worked wonders.
Yum
Just tried this today and I couldn't be happier with the results! Thank you so much for this!
You boil the dough as is done with bagels. It makes them chewy! Gonna try this recipe.
I made these today for Superbowl. It was great. Soft and delicious. Thanks!!
I just made this today and let me tell you..... ITS SUPERB! Your clear instructions and easy measurements helped me out alot! Thank you so much! Love from Malaysia 🇲🇾!
fantastic!
Nabilah Zaini wanted to try this today! Hopefully it turns out great because we miss Auntie Anne so much :( 🇲🇾
Amierul Alwie I made it because I miss auntie anne too! But seriously this recipe works great! Goodluck!
Hi, how many cups of flour exactly did you add into the dough?
@@dolsemiyano My dough needed a bit less then Chef Billy's recipe, for me I just need 5 cups of flour but it really depends on your dough gotta check it carefully.
Fantastic recipe and beautiful pretzels with spiral pattern! This is the first time ever in my life making pretzels 🥨 and I love them like Aunt Annie’s. Your instruction is very clear and easy to follow. Thank you and thumbs up 👍!
Thank you so much 😃
I just made these and they were so good the shape is not their but in stead I made sticks which made it so good and they tasted the same
Everyone just stay safe and thank you.
That’ll work!
OK... so I tried Preppy Kitchen, Laura Vitalie, Sam (sugar spun run) and even Gemma...WINNER according to my ENTIRE Family is HERE!!! Thank you so much for this ideal recipe!
That’s awesome, thanks for giving them a shot.
I've made this recipe about 10 times. Works great, every time.
Love it!
I now follow you as I find your style of cooking very appealing and right for me. I’ve created the pretzels and the salmon💯
Appreciate you trying it. Many thanks!
Thanks Billy! Today I had lunch with work colleagues and we all had sweetpotato and 'I-do-not-know-what-else-soup' with coconut cream, it was excellent, so delicious, though the reason I am here now is because said delicious soup was served, not with bread as one would expect, but with soft pretzels with butter and OMG it was so delicious. So since a couple of hours ago I was determined to make pretzels at home. I've never made pretzels and to be honest I've been scared of that baking soda bath procedure, but this tutorial has giving me confidence and also from reading other succesful stories here in the comments. Thank you and I will try this over the weekend. Thanks chef
I've never heard of sweet potato & coconut cream soup, but that sounds pretty yummy! 😋
@@bearpawz_ Yes, I know!! I never had that before and it was so delicious... Thanks for your comment, so I could remember this lovely soup and those nice times. I'd say it's like a carrot soup, just instead they used sweet potatoes, it was excellent 😊... But 'No soup for you!!! 😂 - Seinfield
@@NinaNinaNB Probably one of the best Seinfeld episodes EVER.. 😆💦🥣 ...(But I am going to look for a recipe for a soup like the one you had!)
@@bearpawz_🤣😂😂😂😭😂😂 yes!!!
I’ve done pretzel twice as you said, they are banging ❤️ Thanks for help
Nicely presented! Clear and smooth. Thanks for sharing, will do this today!
ive been making these for yrs. i make them bite size , perfect for little kids. we freeze them and put enough on a tray to reheat for my grandbabies while watching movies
Just made these and they turned out fantastic. Thank you!
Easy to make and very delicious!! Thanks Chef Billy!!
Fantastic recipe! Thank you so much. These were easy and delicious. I would have perhaps preferred a bit more salt and butter in the dough, mine came out a bit bland for my taste. We did make a wonderful beer cheese for dipping and that certainly helped. Will absolutely make again! Thank you
Thank you Chef Billy! This is the best pretzel recipe out there. My family loved the pretzels. I coated mine with 3 different toppings; sea salt, cinnamon sugar, and almond crunch. Thank you so much again for sharing this recipe! Stay safe!
Thank you kindly sir
AMAZING! I JUST MADE THEM, USED THE TECHNIQUES, DELICIOUIS, PERIOD! TY!
Just made this recipe with the kids. Super easy for a novice baker like myself. So good! Thank you for sharing the recipe. You are right, don't know if we can go bake to store bought pretzels!!
Awesome
I have always been intimidated by yeast dough. Never trusted myself to do it correctly. Well, THANK YOU Chef!!! This am I made Beignets!!! And tomorrow I will make be making these Pretzels. You explain and show every step so well, it makes it almost "easy" for this nervous Nelly!!!
Just made your pretzels, and dude they’re amazing. Coming to you live from the heart of the corona virus outbreak in northern Italy :) highlight of the weekend!
Oh man that’s great to hear. Stay safe and healthy!
Take lots of vitamin c to prevent getting any of these viruses.
Tried this recipe today and it made lovely pretzels - they had a nice crunchy exterior and a beautiful fluffy interior. I thought maybe the dough could be seasoned a little, but overall, they were really good.
Great!
These turned out perfect! Great recipe. I found the first batch were easy to roll out. The second one, the dough began to spring back more. Next time I will need to move fast! I loved these
I just finished making these, wish we could post pictures on the comment section cuz these are amazing!!!!!!
Wow! Fantastic video-Thank You. Your Cinmmon/ Sugar pretzel topping mix, what is the sugar to cinmmon ratio? Greetings from Greenville, NC.
How do you think these would freeze? Would you add extra yeast like with cinnamon rolls to freeze? And would you freeze before or after dropping in the water mixture? Thanks!
I wouldn’t freeze these but if you did after cooking.
Chef Billy Parisi thank you and was an excellent recipe, especially the sugar/cinnamon pretzel. My kids gobbled them up.
These look very good, & so delicious.. Can you please tell me please do I use a spray bottle to spray the dough before I roll the dough out? Mine falls apart. Please help. Learning how to cook
Have you tried them again since you posted that? It sounds like your dough may not have had enough moisture in it if wasn't rolling out. It's been over a year since you posted, so hopefully by now you've mastered pretzels! 🥰🥨
I made a batch and they turned out great. The recipe is awesome, thanks for sharing it.
Thank you so much!
Just made them. The best ever! Don’t look for any other recipe, it is a keeper! Thanks Chef👏👏👍
Great to hear!
Amazing, so yummy, thank you for sharing your great recipe
I was going to make the ATK version but in the ATK video they looked tough, you could see the tenderness in your pretzel video (that and I didn't want to go get Bread Flour). I thought I messed them up several times (making anything with yeast scares the crap out of me) but they came out amazing! I made pretzel bites instead of actual pretzels. They were great! I have a ton in the freezer now. Thanks so much!
dude/chef, i just made these and they are great ⭐️⭐️⭐️⭐️⭐️.
excellent instructions/awesome vid.
thank you!
I tried your recipe and I'm glad that I didn't try other recipes before it .. it turned out perfect .. just one question .. how to avoid getting the pretzels to stick with the parchment paper when baking?
Ir's been a while since you asked about the baking of his pretzels, but he used a silpat (silicone mat) which are sold pretty much anywhere cooking supplies are nowadays, I'm not sure that parchment paper would really be a problem though since they dry as they bake. You've probably made them a few times by now, so I'm sure you've got it down pat now.. 😊🥨
Hi there, thanks for sharing. May I use instant yeast instead of active yeast? Thanks in advance for answering.
One of the bezt looking prestzel videos ive seen. Thank you. Yumm!👍
Made them. smelled so good and are nice and chewy. DO IT.
WOW, these are amazing! I did both salt and cinnamon and sugar. Thank you for share l l am on to your next video for inspiration.😋
These pretzels are outstanding.....an instant family favorite.....Thanks so much!!!
These pretzels are amazing! Very easy to make, your directions were extremely easy to follow.
O.M.G. It came out PERFECT. Thank you Billy
I really love your videos and the style/explanation of the recipes and steps! Im a chef, unfortunately unemployed due to the virus, but I have been following your channel for quite some time now! Being in the kitchen and moving is what I love and having your channel just makes it better👌🏻 Carry on Chef 🤍
Thanks for your continued support
Just made these and they turned out perfect! Family loved them!
Thanks for giving it a shot!!
I made these and the recipe is perfect. I used bread flour instead and instant yeast. Kneaded by hand.. It was so simple! I got kids and Wetzel pretzel is always expensive. I made these for $4 all kinds of toppings. Mmmmmm
Thanks for sharing. I have both of them and is contemplating in using them for this recipe too. Did you use exactly the same measurements for both the bread flour and instant yeast?
@@stephanieteng8840 Yes same measurements. Adjust the flour as needed. Sometimes a bit more or less. 5 cups ended up making too much. Now I split the recipe in half.
@@abrilzz3247 Thank you very much for sharing.
My family raved about these pretzels ! Awesome recipe super simple and easy and this video made it fool proof ! Thanks man will definitely make again! Keep up the great content !
Thanks for giving it a shot
How would you store the leftovers and how would you warm them back up ?
Thank you! Yes Annie's was great! Excited to make these!.
It would be helpful if you included your measurements while you spoke. I had to keep looking up to find the amounts but they did not stay very long, so I rewatched it and wrote them down. Am making them now. Will let you know how it goes. They look great.
Trying tonight! First bread recipe in my first ever stand up mixer.
done! yum!
These came out outstanding, best pretzels I've ever had and I made them!(with your help of course lol) THANKS!
It is an awesome recipe
I've tried it two months ago and everybody loves it. Thank you 💖
I made the pretzels to your recipe for an Octoberfest small group evening. I wanted it to be as authentic as possible. They were such a big hit, we are going fir round two tomorrow, and by request, I have to make another batch on Saturday for a Halloween watch. Thanks for making me look good.
Love this! Glad they worked out so well.
Watching your video makes me hungry :) I can't wait to make this.It looks easy enough to follow. Thanks for sharing your recipe.
I’m wondering what would happen if we used bread flour instead of ap flour. I made these today and it came out wonderfully. I was skeptical!! Thank you!
I made these again tonight for the umpteenth time and I used half AP/half bread flour. I figured bread would give them a better texture. They turned out GREAT, and I can see how all bread flour would be perfect like yours were too! 🥨🥨🥨
Thanks for the recipe and video. Made these over the weekend, delicious and was shocked at how easy.
Just made these, I did a few pizza pretzels then I made mini cinnamon sugar ones. THEY ARE DELICIOUS.
I made some with poppy seed sprinkled on and others I used everything but the bagel seasoning
Thank you! These pretzels turned out amazingly!! How do you store them ? I stored mine for a day in an alright container and they became all soggy and the salt had been absorbed into the bread - is there any reason for the is ? Also can they be frozen ?
I cooled mine down and (like you said) put them in an airtight container. It keeps them fresh, but definitely softens them by the next day. I just pop them into the oven (wrapped in foil) and heat them just until they're nice and warm, but definitely not too long or they'll be pretzel toast.. 😆 I only wanted to make half a batch tonight and I looked up freezing dough. All the sites said freezing dough is great for up tp 3 months. I'll bet if you wrapped up your baked pretzels, they'd be great too in the freezer. It's been over a year, so you already know all of this and much more! 🥨👍😊
Every Thursday... it's outdoor markets in most parts of France! & Nothing beats 1 or 2 salted pretzels w/ a beer sitting en plein air.... ( Side walk cafe
Thank you so much, yummy recipe I'll try today itself
if you don't have a dough mixer, what is your suggestion - how long to knead by hand??? Thx - Lilly
15 mins
Followed this recipe exactly, these pretzels are so much better than any I've ever bought at a fair, etc!! They're amazing!
Just tried this and turned out AMAZING thank u!!
How do you store these and how long will they keep? Needing to do a bunch for a wedding.
I just made them and they came out great! A big hit in my household. Curious if anyone has suggestions on best way to store them... I suspect putting them in a closed container (e.g. tupperwear) will cause them to lose their crispness? For now, I'm just leaving them out loosely covered on a cutting board.
Put them in an airtight container in the fridge and toast them for a few mins to eat and it will crisp up
Thank for sharing. I ganna try tomorrow. God bless you
Thanks for watching
This recipe is great and turned out amazing! I have a problem, though. After my first batch, I kept the dough refrigerated for 2 days and today and decided to make more. When I was rolling it out it kept tearing. Might you know why? Thanks!
You should do a bagel recipe!! Love watching your videos. I've been baking so much during this pandemic
I made these tonight! The dough was so light and fluffy, very different from a previous recipe I tried a few days ago. I don't think I'll be trying another recipe after making these pretzels, though. They are perfectly soft ♡
Fantastic
Looks so good....definitely brings back memories for me too!!!!! Oh the days....the mall and friends and not a care in the world. Thanks for sharing!!!!
Totally hah. Thanks for watching!
Ah, why did I try to cook it? This is a great and easy recipe. I can't stop eating now. I will definitely repeat it tomorrow and on other days. Thank you. I'm subscribing to your channel😊 3/4 cup of baking soda is it around 180 grams?
This is awesome...will try to make it too, thank you very much for this recipe..
i’ve tried a few of your recipes, amazing 10/10
Just made these an hour ago. Easy to make and so good! Thank you!
it looks great, i want to try it out but can i use my hands to mix the ingredients instead of mixer?
I mix by hand using the R. Bertinet slap n fold method. Works great - get really good rise. It takes the same time to get the right consistency and no need to add extra flour.
@@suzannelabreche904 thanks for your reply! 😊
Hello chef.... can i just mix the dough by hand if i dont have stand mixer? Thanks
Yes
I'm definitely going to try your recipe, but I don't have a stand mixer. If I substitute a little "elbow grease" I'm guessing that it'll still come out ok. Also, there's only two of us in this household, so is it possible to freeze half of the dough for baking later?
Would u be able to make them in a different shape like pretzel nuggets or pretzel sticks and still be able to cook it in the same temperature and time?
Sure
@@ChefBillyParisi okay thank you!!
