Homemade Soft Pretzel Recipe

  • These delicious homemade soft pretzels are so easy to make at home that you’ll never buy them at the store again.
    Ingredients for this recipe:
    • 2 cups of warm water between 110° and 115°
    • 1 ½ tablespoons light brown sugar
    • 1 packet active yeast
    • 1 ½ teaspoons sea salt
    • 3 ounces melted unsalted butter
    • 5 ¼ cups all-purpose flour
    • 1 tablespoon oil
    • ¾ cup baking and 1 gallon of water
    • 1 egg yolk whisked with 1 tablespoon cold water
    • coarse kosher or sea salt for topping
    Makes 12 pretzels
    Prep time: 15 minutes
    Resting Time: 1 hour
    Cook Time: 20 minutes
    procedures:
    1. Pre-heat the oven to 450°.
    2. In a standing mixer bowl, add in the water, brown sugar, and sprinkle on the yeast, whisk together and let it sit for 5 to 7 minutes or until it forms a foamy raft on top.
    3. Add the hook attachment and turn the speed to low and pour in the salt and butter.
    4. Add in the flour 1 cup at a time until combined and knead the dough on low to medium speed for 5 minutes.
    5. Add oil into a large bowl or container and place in the dough. Cover with a towel or lid and rest until it doubles in size, about an hour
    6. Before it is time to form the dough, bring the baking soda and 1 gallon of water to a boil in a large pot.
    7. To form the dough, take a small piece and roll it out until it is a 24” long rope. Form the dough into a U shape and holding each end cross over each other and pull down to make a pretzel with the ends slightly over the other part of the dough.
    8. Turn down the boiling water to a simmer and cook each pretzel dough 1 to 2 at a time for :30 each and then place back on a cookie sheet tray lined with parchment paper or with a silpat
    9. Once all of the pretzels have been cooked in the baking soda solution, brush the tops with the egg wash and season heavily with coarse kosher or sea salt.
    10. Bake in the oven for 12 to 15 minutes or until golden brown.
    CHEF NOTES:
    • How To Reheat: Place on a tray and wrap in foil and bake in the oven at 350° for 5-6 minutes or until hot. Likewise you can also heat in the microwave until hot.
    • Make Ahead: You can make pretzels up to 1 day ahead of time and reheat before serving.
    • How To Store: Keep wrapped in plastic in the refrigerator for up to 4 days.
    • Feel free to make the pretzels as thick or as thin as you’d like and also consider making pretzel bites or rods.
    • When adding the water to the stand mixer I usually like to go a little hotter like 118° because the bowl is usually a little chilly and drops the temperature of it by a few degrees making it perfect for the yeast.
    • You may need more flour when kneading the dough in the stand mixer. The goal is that the dough be very soft but not sticky.
    • A silpat is a non-stock baking sheet made of a blend of silicone and fiberglass. They are super versatile, can handle high heat and last a really long time.

    Here is most of the info in metric :D
    470 mL of of warm water between 40c to 45c
    18g light brown sugar
    7g active yeast
    9g sea salt
    85g melted unsalted butter
    625g all purpose flour (maybe a bit more, just feel the dough while adding)
    1 tablespoon oil
    (this is just to grease the bowl)
    96g baking soda and 3.5 liter of water
    1 egg yolk whisked with 1 tablespoon cold water
    coarse kosher or sea salt for topping
    (I added chili flakes to some and sesame seeds)
    oven on 230c - 210c if fan included

    This recipe is fantastic. Came out great and delicious the first time. Just made again today, instead of the baking soda I opted to do a quick lye bath and they were that much better. I live in Philadelphia and these match any pretzel I can get here! Thank you for the guidance!

    Made these and by far the best pretzels I ever had, I made them again and used low moisture mozzarella string cheese, little oregano and salami sticks and made a pretzel filled breadstick. So good!

    Ok they are absolutely terrific!!! I only had organic white bread flour and so from the start the dough wasn't easy to handle, even after adding an extra half cup of flour (6 cups total). The dough was extremely sticky even after rising so I ended up making smallish pretzel loaf-stick-buns. BUT! They taste absolutely awesome. Also, spray/use a little oil on the baking sheet parchment paper--my loaf-stick-buns stuck to the paper.

    I converted all measurements in grams and substitute a cup of different flour such as Red Fife organic. Before baking I compress each pretzel shape a little and wind up with a pretty kind of bun for a breakfast or lunch sandwich- delicious- great instructions - thank you.

    Thanks for the amazing recipe!!! I put cheese and pepperoni, everything bagel seasoning, cheese and pesto on them and made 16 total for a whole weeks worth of food for 3 kids. You're a lifesaver. They taste amazing!!! BTW, the proofing in the oven trick worked wonders.

    Thanks Billy! Today I had lunch with work colleagues and we all had sweetpotato and 'I-do-not-know-what-else-soup' with coconut cream, it was excellent, so delicious, though the reason I am here now is because said delicious soup was served, not with bread as one would expect, but with soft pretzels with butter and OMG it was so delicious. So since a couple of hours ago I was determined to make pretzels at home. I've never made pretzels and to be honest I've been scared of that baking soda bath procedure, but this tutorial has giving me confidence and also from reading other succesful stories here in the comments.     Tried this recipe today and it made lovely pretzels - they had a nice crunchy exterior and a beautiful fluffy interior. I thought maybe the dough could be seasoned a little, but overall, they were really good.

    How do you think these would freeze? Would you add extra yeast like with cinnamon rolls to freeze? And would you freeze before or after dropping in the water mixture? Thanks!

    These look very good, & so delicious.. Can you please tell me please do I use a spray bottle to spray the dough before I roll the dough out? Mine falls apart. Please help. Learning how to cook

      Have you tried them again since you posted that? It sounds like your dough may not have had enough moisture in it if wasn't rolling out. It's been over a year since you posted, so hopefully by now you've mastered pretzels! 🥰🥨

    I was going to make the ATK version but in the ATK video they looked tough, you could see the tenderness in your pretzel video (that and I didn't want to go get Bread Flour). I thought I messed them up several times (making anything with yeast scares the crap out of me) but they came out amazing! I made pretzel bites instead of actual pretzels. They were great! I have a ton in the freezer now. Thanks so much!

    I tried your recipe and I'm glad that I didn't try other recipes before it .. it turned out perfect .. just one question .. how to avoid getting the pretzels to stick with the parchment paper when baking?

      Ir's been a while since you asked about the baking of his pretzels, but he used a silpat (silicone mat) which are sold pretty much anywhere cooking supplies are nowadays, I'm not sure that parchment paper would really be a problem though since they dry as they bake. You've probably made them a few times by now, so I'm sure you've got it down pat now.. 😊🥨

    I made these and the recipe is perfect. I used bread flour instead and instant yeast. Kneaded by hand.. It was so simple! I got kids and Wetzel pretzel is always expensive. I made these for $4 all kinds of toppings. Mmmmmm

      @@stephanieteng8840 Yes same measurements. Adjust the flour as needed. Sometimes a bit more or less. 5 cups ended up making too much. Now I split the recipe in half.

    It would be helpful if you included your measurements while you spoke. I had to keep looking up to find the amounts but they did not stay very long, so I rewatched it and wrote them down. Am making them now. Will let you know how it goes. They look great.

      I made these again tonight for the umpteenth time and I used half AP/half bread flour. I figured bread would give them a better texture. They turned out GREAT, and I can see how all bread flour would be perfect like yours were too! 🥨🥨🥨

    Thank you! These pretzels turned out amazingly!! How do you store them ? I stored mine for a day in an alright container and they became all soggy and the salt had been absorbed into the bread - is there any reason for the is ? Also can they be frozen ?

      I cooled mine down and (like you said) put them in an airtight container. It keeps them fresh, but definitely softens them by the next day. I just pop them into the oven (wrapped in foil) and heat them just until they're nice and warm, but definitely not too long or they'll be pretzel toast.. 😆 I only wanted to make half a batch tonight and I looked up freezing dough. All the sites said freezing dough is great for up tp 3 months. I'll bet if you wrapped up your baked pretzels, they'd be great too in the freezer.     I just made them and they came out great! A big hit in my household. Curious if anyone has suggestions on best way to store them... I suspect putting them in a closed container (e.g. tupperwear) will cause them to lose their crispness? For now, I'm just leaving them out loosely covered on a cutting board.

      Put them in an airtight container in the fridge and toast them for a few mins to eat and it will crisp up

    This recipe is great and turned out amazing! I have a problem, though. After my first batch, I kept the dough refrigerated for 2 days and today and decided to make more. When I was rolling it out it kept tearing. Might you know why? Thanks!

    I made these tonight! The dough was so light and fluffy, very different from a previous recipe I tried a few days ago. I don't think I'll be trying another recipe after making these pretzels, though. They are perfectly soft ♡

    it looks great, i want to try it out but can i use my hands to mix the ingredients instead of mixer?

      I mix by hand using the R. Bertinet slap n fold method. Works great - get really good rise. It takes the same time to get the right consistency and no need to add extra flour.

    I'm definitely going to try your recipe, but I don't have a stand mixer. If I substitute a little "elbow grease" I'm guessing that it'll still come out ok. Also, there's only two of us in this household, so is it possible to freeze half of the dough for baking later?
