I put the entire head of cauliflower minus green leaves in a pot with about an inch of water cover and steam for eight minutes, you can drain the water off and then just hit it with a potato masher a couple times. It turns it into rice texture, not a mush. This way it doesn’t make a mess all over your kitchen with those little pieces everywhere.

This is exactly the kind of thing I need. I love to cook and have a savory tooth. The sheer volume of this is going to be a huge help so I can still eat a lot of delicious food without having the massive calorie burden. Man, you are good. I can see how these ideas will incorporate into other recipes I already enjoy. I'm all about volume eating, now that volume is not going to give me a heart attack haha.

Ive only chopped it finely, but this looks like a great way to rice cauliflower.
I use it with a sort of meat and veggie stir fry using some coconut oil and a bit of butter. Then in the same pan, I fry up the cauliflower with a bit of onion and egg. So good, and it's an easy meal prep that feels like a super filling Chinese food that hits all the macros I need.

If you want to add cauliflower to your diet, I suggest this: Just cut it into bite-sized pieces, add salt, pepper, turmeric, and olive oil to coat. (Use the core! Just cut it into thin coins and it will cook right along with the florets.) Cook in a sheet pan at around 400F for about 45 minutes, or until you reach your preferred level of doneness. Flip it at least once, the brown bits are the best bits.
It takes a while, but it's super easy, and you won't believe how delicious it is!

another one i think everyone should try is cauliflower meatballs i go with the leanest mince i can get and blend it in a food processor with cauliflower at a 40/60 ratio and a little bit of gravy powder to increase the meatyness and also act as a binder you can tell they aren't normal meatballs but still taste great, the first time i made them i did 60% meat and %40 cauliflower and my mum who hates the stuff tried a bit of the meatball and liked it so much she ended up asking if she could have it for tea
