Made this tonight for my mom who is 90 yrs old. She made it for us when brother and I were small. The whipped egg whites made it so fluffy. MOM was enjoying it with a piece of chocolate brownie with chocolate chips and walnuts. I went all out today.
You can also soak the tapioca pearls in about a cup of the milk for an hour, instead of water. That way you don't have to rinse the pearls. Just add the remaining two cups of milk and continue with the recipe.

I did mine but it was really runny. I cooked it for a total of 20mins though coz my sago got translucent really quick. I didn’t stir in the egg whites. Would that have made a difference??

I bought some tapioca pearls from my local Asian grocer and they disintegrated when I tried to soak. They hold up in boiling water, but fall apart in cool liquid. Is there a specific brand or type I should look for?
You probably bought tapioca starch that is formed into pearls for boba (used in bubble tea). Those pearls are usually much larger and brown/black as opposed to white.
@EmKn hmmm you shouldn’t have to though, I soak mine in cold water and they are fine. Boba does come in white, it is the unflavored form, and my guess it that is what you had. I’m any case, they would form a similar pudding since they are both made from cassava root but you would need to cook the boba pearls for much much longer or do as you did with soaking in boiling water first

I would say at least a week or two but of course depending on the best before dates of the ingredients you used

No it wouldn't make much difference, it should be thickened before that step. I wonder if it has to do with the type of tapioca you used?

@@Niikko_art no they were small and white. I just didn’t know that I needed to boil or soak in boiling water first. I figured it out though. Sort of.

I had the same problem. I just did the recipe anyway and it worked out fine just needed to be cooked about 25 mins instead of 10 mins at the start
