    This is the basic pakora recipe which is a great place to start - remember to season to your taste with as much or as little spice as you like.
    Ingredients
    100g gram flour, sieved
    1 medium onion
    3 medium potatoes
    1 tsp of salt
    2 tsp of garam masala
    1 tsp of turmeric
    2 chillies, finely chopped
    1 tbsp ginger, grated (optional)
    Handful of coriander, chopped
    2 tsp of dried fenugreek leaves
    1 tsp of cumin seeds
    ½ tsp of red chilli powder
    Water
    Oil for deep frying
    Method
    Heat up the oil in a karahi or wok to a medium heat.
    Slice the onion lengthways very thinly and place in a bowl.
    Peel and grate (or very finely chop) the potatoes into the same bowl. You can also use aubergines and cauliflower - chop into very small pieces.
    Sprinkle all the dry spices and freshly chopped coriander, chillies and ginger into the bowl and then sieve in the gram flour - mix together using your hand.
    Add a small amount of water a little at a time to create a thick batter that coats all the vegetables. Squeeze the mixture through your fingers to ensure all the spices mix through. Do not leave the batter and vegetable mixture for too long before cooking.
    Test your oil is hot enough by dropping a little batter into the oil. If it browns and rises immediately then it is ready. Very carefully drop in spoonfuls of the mixture into the oil and fry until golden brown.
    Using a slotted spoon move the pakora around, be careful not to overcrowd the karahi.
    Once golden brown and crisp remove from the oil and set on some kitchen paper.

    This is one of my first great memories of eating ... my parents' best friends would visit us and we them, and I will never forget Auntie Krishna's mushroom Pakoras (also grated potato); the smell was heavenly. She used chickpea flour so that's what I do now. Tx so much for wonderful videos.

    After many failed attempts at my own pakora type foods, I was saved by this video. Absolutely amazing. I am vegan gluten free as well so this was just the best lunch today.

    Lovely presentation, lovely recipe for a rainy evening snack to go along with a cup of tea. Was just craving for some nice, simple, easy to make snack, and came across this. Immediately got to action and made it. I avoided aubergines, and added green belpepper instead, and also went on and grated a cube of cheese in. And followed your method of not makeing separate batter. turned out amazing!!

    as a 50-? (cough splutter) builder, let me tell you, I followed this recipe-cos I love veg` pakora, my kids nearly fainted when I showed up with my Pakora (& sauce) but, they ate it! -loved it, & I`m now god`s gifts to dads! thankyou Hari. BTW, I used the hot oil to `Seal` the Pakora, then transferred them to an `Air fryer` for a few minutes to cook them & kinda `dry` them cos I don`t want to eat deep fried food! worked for me!

    My adjustment for this recipe is to add a little baking powder. It makes them crispier.

      Instead of baking powder you just put some spoons of hot oil in the pakora batter and it always comes put fine and crispy 😊😊😊

    I made these again for the second time. This time I added a grated carrot. My husband LOVES them too. I have a question about serving them. If we make them for company as an appetizer, what is your recommendation for when to cook them (as guests arrive so they're hot and keep on coming as we cook more OR ahead and keep warm in the oven?). I'm worried they will get soggy if kept warm too long. Thank you for this delicious recipe.

      Glad to hear you are enjoying them. They are best straight out of the fryer but they are also ok heated in the oven and will stay crispy. I have to say I really them cold too especially with a hot cup of sweet chai.

    Lucky you , you just have it all , good looks , intelligence , :-) easy recipe to follow , thanks for the quantities as it makes it easier to follow , just wondered if you could possibly ` grate ` the onion as well , last time my eyes were crying with the onions and chillies , quickly washed my hands and rubbed my eyes , but ooft !!! boo hoo !!! for me there was still residue on my fingers , and big time tears in my eyes , big boys do cry , :-)

      Hi David thanks very much and I'm pleased you are able to follow the recipes with ease. You could grate the onion but I fear that will make you cry more. When you grate the cells are more damaged releasing more gas making you cry more. I would slice and just keep your hand away from your face! Hope that helps Hari

      +Hari Ghotra Thanks for the advice Hari , I think you would be right , grating the onion would more than likely set off more airborne spores , just need to exercise more caution and no more rubbing my eyes , and not cruel enough to ask my lovely lady to do the onions or the children , thanks for posting your lovely recipes , will check out lots more when I have more time , thanks again ,

      Trust me matey you do not wanna grate onions, i did that once and when through half a roll of kitchen roll drying my eyes, now i blits them for a couple seconds in the blitser, no more tears. Another tip i am thinking of taking to dragons den is wear swimming goggles when chopping or grating onions, once again no more tears.:)

    Would this work with normal flour or does it have to be chickpea flour?

      Hi normal flour will give you a different flavour but it will work. For this chickpea flour works better.

    HELO MY DIER, IM YOU AUNTY LILY, you do such a good job SOCIAL SECURITY what do you know then why do you do,Only one thing if you don’t mind it making me a little bit nervous when you make this samosas I got the impression if you can tag your hair behind your neck it will be lovely because to me to you to anybody who is in the kitchen, it’s happened that one our hair will go into the preparation that we make with so much effort so please we don’t want to have accidents about hair, going into the food I’m talking about hair falling!In to,our lovely , food(I think you’re doing a great job about Indian cooking and please don’t feel bad my comments)IM A SENOR,🥰👍🧓🏻😘

      Not sure if this is still relevant - But here you go -
      Dry Red Chilli powder, Fresh grated ginger, Turmeric powder, Fresh coriander leaves, Garam masala(ask for Garam Masala in shops - Too much in the food will give completely a different flavour and may spoil taste), Cummin seeds, Dry fenugreek seeds(in shops ask for fenugreek seeds, just few), fresh green chillies

      Yes I noticed and I appreciate your liberal view, and in past eras I would also hold it but in the modern world where many have so much choice and can see directly how the meat industry is killing our sacred mother earth its time to be more prudent. I am not even against people eating meat in our human history, as it was mostly about survival, now its mostly about greed and not caring and just enjoying addictive fats at the expense of other innocent living beings. Plus people can only really make valid decisions if they have the correct information.

      108shadow108 .., very well said, BBC news showed sheep on their way to a big blunt knife & one turned round with deadly cries ahead, got kicked to the steel bar, got turned around & off to be teased before the neck got the knife 5 times to slaughter it
