In Karnataka (i.e.Gadag city) brinjal pakora are famous chef, you must try them👍 We eat brinjal pakora with girmitt (girmit is a puffed rice with lot of sev,chillies and onions)😋

@Ranveer ji can u please explain who came up with the term "pakora" & "Bajji" cos in the south it's quite opposite to what u mentioned. They call "Bajji as the fried veggies dipped in liquid batter" & "chopped veggies (mainly onion/spinach n sometimes even cashew) mixed with gram flour n rice flour with ginger, chilly n salt as Pakoda". So it will helpful if you can give us some history so i can arguably correct my family n friends :P

Grandma (Beejee) had a beautiful way of explaining the perfect frying temperature. She would say the oil should sound like the gentle ‘pitter-patter’ of rain while frying. When frying pakoras, the oil’s sound should be soft and steady, just like ਈ ਓਨਾ ਦੀ ਗੱਲ।

دادی جی (بی جی) کا ایک بہت ہی آسان طریقہ تھا تلنے کے صحیح درجہ حرارت کو سمجھانے کا۔ وہ کہتی تھیں کہ تلنے کے وقت تیل کی آواز ہلکی بارش کی بوندوں جیسی ہونی چاہیے۔ جب پکوڑے تلے جائیں تو تیل کی آواز بارش کی نرم آواز جیسی ہونی چاہیے۔

दादी जी (बीजी) का एक बहुत ही प्यारा तरीका था तलने के सही तापमान को समझाने का। वो कहती थीं कि तलने के समय तेल की आवाज़ हल्की बारिश की बूंदों जैसी होनी चाहिए। जब पकोड़े तले जा रहे हों, तो तेल की आवाज़ बारिश की मद्धम आवाज़ जैसी होनी चाहिए।
