So fun! For quantity, rotisserie smokers are taking over. I can only serve ~100 people hanging meat in a WSM over a small fire plus a couple kettles. Proper prep, once into it, the worries are gone, just putting out great food, usually getting a helper or two to slice and serve. Serving even a crowd that small is not as easy as you'd think ;-)
We need this in the uk I’ve been smoking for the last two and a half years. I love smoked food can’t deny it. We have bbq joints but they are miles away from where I live. It’s good enough you cook it for yourself but there are deffo times you want to try a different take on it and someone else cook the food. Fair play to the lads the place looks brilliant and the food makes me 🤤.

Wanted to recommend a restaurant for you to consider for a future documentary. Blanchard’s BBQ in Lafayette Louisiana. Best bbq I’ve eaten in my life. I never liked bbq before I ate at Blanchards. Their burnt ends is to die for.

Ant, your documentaries just keep getting better and better. Are you able to sustain a full-time job as a BBQ videographer now? Or is this still just a side gig and hobby?
They use holding chests or ovens. They're like a low temperature convection oven. They keep the meat at a pleasant FDA approved 140°F without drying out or over cooking the meat. The food can be held at this temperature for well over 24 hours, but most restaurants just hold overnight to serve the next morning. Holding the meat like this also allows the opportunity to reabsorb cooking juices and seasonings further into the product.
