Taku, I have learned so much from your videos. It was your knife sharpening video that inspired me to start really getting into cooking. I saw the precision that you had when cutting your meats and had to start learning how to do it myself. Taku san, you technique overlooks the inability for us gwailos to not have rice stuck to our hands when attempting to make nigiri sushi. You are the master. I have been rolling-or is that, attempting to roll-my own nigiri sushi for two decades and still end up with a handful of rice grains. I love your videos, every single one of them is unique and not only delves into the making but also the catching of the fish which is pure money. Hats off to you my fellow Bay Area man!

For those who are curious, where he says to use the whole length of the knife, that's also why they need to be so sharp because if it isn't sharp enough you can't always do one long clean cut
