I have lots of yaupon on my land in MS and make my own tea. I would not recommend roasting before the leaves are bruised and wilted. That speeds up natural enyzmic fermentation that changes the aroma and flavor in marvelous ways. A properly wilted and aged (21 to 18 days ) batch smells very much like green tea. Then it can be roasted to halt any further oxydation and fermentation to achieve the flavor profiles you like...from caramel notes to smoky ones depending on length of fermentation and darkness of roast. One can also bring out tobacco notes if you like that...but go too far and your tea will taste like wet ashtray....seriously. Also when roasting i would not recommend going above 250 degrees F. Otherwise you cook off vitile oils in the leaves that impart much of its flavor. A light roast smells like you are bakeing chocolate chip cookies. That is likely from the euphorants found in yaupon that are chemically the same as those in chocolate.
As for use, about 1 tablespoon of leaves will brew a hearty cup you can make two or three steeps from one unit of dried leaves. If you powder the leaves similar to macha in a spice grinder then use a level teaspoon for a mugs worth. The brewed tea can be used as a flavoring for ice cream or hard candy. Packets of moistened ground leaves can be used like a caffinated snuff/hunters friend. Blended with spices it makes a wonderful soak for making dragon eggs, yaupon tea also mixes extremely well hot or iced with fruit and herb flavors. My favorite flavor mixes at present, peach, mango, mint, and perilla/shiso, and it can be carbonated in a soda stream before sweetening for which i prefer stevia to sugar.
As for the experience, two strong cups gave me the best caffiene experience ever. It felt like iwas extremely focused, had extra room in my brain and i was happy , cheerful, which is not my normal emotional state. The euphorants give a mood boost and suppresses caffiene jitters that allows full exploitation of caffiene's cortical stimulant effect.

How long for caramel notes? That sounds yummy! I have a ton of youpon as well. Now I have something to do with it! My American Beautyberry bushes grow up under and around my youpon trees; those tiny berries make great jelly

@@micheleb2558 i honestly dont know. I much prefer the green fermented to roasted. You will have to expetiment...just not too hot or you will ccok off the oils. Also i think it depends on the terre oire...the soil and nutrients as they effect the flavor of a given bush. But i dont know for certain than that they tend to lie between a light to medium roast.
As fir the beauty berry it has other uses. It is a powerful insect repellant. Just crush the leaves and rub on exposed skin. Its almost as strong as Deet.

I think the branches I used in the garage for about 2 weeks. Gave them a super light roast and it seemed like it tasted more woodsy, but that could of just been my brain bias, knowing it was yaupon. Left them in a 250 ish oven for a long time. It smelled decent but never browned like some videos show. I have a few more large stems in the garage. I will make sure I get to 18+ days on those. Wish you could post a pic of your leaves here. Do you use just the tips or any leaf on the tree?
Might try the soda stream route if this works out to be a flavor I like. :)

From previous responses below, it looks like you can use a tablespoon or teaspoon of tea per 6oz depending on how strong you like it.

Either is fine. It has a lot less tannins than regular tea so you can use a lot more leaves if you want a stronger flavor or caffeine kick. Depends on you tastes!

Then the instructions which are only text on the bottom right of the video are covered up by an ad that can’t be read throughout the video. The important part of how to brew is completely unknown after watching the video. Have yo give it a thumbs down for this reason.
