Confederate Army DANDELION COFFEE | Civil War Era Recipe | Hard Times -- food from times of scarcity

- During the Civil War, the Confederate Army was often scrambling for provisions including life-giving coffee. Dandelion root coffee among others (acorn, corn, persimmon) was often made as a substitute, so since my lawn is filled with them right now, I thought I'd make a cup of #dandelion #coffee. ☕️

Dandelion jelly is incredible! It tastes and resembles honey!! Make a tea with yellow petals, let steep 24 hours, make jelly as normal. After tasting it once, it became one of my favorite foods! Please try it!!
dlr978 my mom and I made it all the time as a kid. I loved it
Dandelions are very healthy.
Never even knew that was a thing
That sounds awesome! Dandelions were part of one of my highschool classes...tho I don't remember which now. As kids we thought teach was nuts! But we learned. I wish ours were out at least for the bees but it keeps freaking SNOWING here lol. In IL.🤔💕🤘🌻⛄
I remember making dandelion honey with my grandma (it's more like dandelion syrup, but grandma called it honey). Also spinach out of stinging nettles. :)
love the way you talk to your chickens, thats so cute!!
Honestly I had a neighbor with roosters and I was terrified of them.
(They are descendants of T-Rex)
They are beeeeautiful! I have irreconcilable differences with their poop, otherwise I’d love to have some chickeroonies!
I was going to put this exact comment haha.
Pretty flock! Hoped to see a couple of Barred (Plymouth) Rocks in there! Maybe next bunch! Get a couple ducks, too! 👍😉 Ooo yeah!
My family has one hen (the last one standing from a larger group we had ages ago), and she loves to chat! Whenever she sees us coming into the garden she spriiiints over and starts to chatter away - it's like she's asking "have any snacks for me??? anything good????" hahah
Hi Ma'am. New subscriber here. When my wife and I were dating she made me a coffee replacement once when we had run out of the real deal. She basically toasted some rice in a dry pan. Actually she took it pretty far past toasted. Like almost burnt. It had the taste of coffee without the kick. Awesome. We've been married for quite some time now and she never ceases to amaze me. :)
she's definitely a keeper.
You’re a lucky man for finding someone amazing
Very nice
Aww, that's really wonderful.
awesome! ^^
Dandelions are awesome.
The roots and leaves are rich in calcium, because that's what the dandy does. It pumps calcium back up into the soil reducing the acidity if the soil is off. They are also delicious in a salad♡. and our insects friends need their beautiful yellow flower.
Good to know! 😊
You are one of the few people I’ve seen that likes weeds.
Brigade Commander Georgii Isserson , they are only weeds if you dismiss them in that way, instead of seeing them as a herb that has a lot of health benefits.
I love dandelion coffee. I drink it mixed with instant coffee, and it is irresistibly delicious and a great natural laxative.
sttgaegoaktd
Steven Haywood Woah dude I was not criticising the fact that drinking this has “benefits”, merely just pointing something out.
Dandelion is not a weed! It's a beautiful underappreciated flower. I let them seed freely in my flower garden.
ps: dandelion root is really good for stomach pain and bloating. mix it with chamomile and mint for a fantastic stomach soother.
Thanks, I’ll try that combo!
@@karenabrams8986 talk to your doctor first
I'll definitely try that out! Usually people tell me to use mint, but that actually hurts my stomach, so it'd be nice to give dandelion a shot.
I tried it. It’s shockingly good. With or without mint!
If you're one of the people whose guts react strongly to coffee (not caffeine, but coffee even decaf coffee), then coffee makes a super convenient drink to fix gassiness. As long as coffee only makes you pass normal stools asap, not get diarrhea.
I love how social your chickens are with you. How they came up to you to see what you were up to was so cute!!!
They think I have mealworms. 😂
"and they trust you not to hurt them"!
ChocoBabiChan chickens are very social, and they make good pets ... eggs ... and food.
Your chickens must have thought you were digging for worms... and maybe you'd share! LOL
Try running the dried & roasted roots thru a spice grinder first, then boiling & filtering it as you would for ground coffee or tea. Betcha that would have a stronger flavor then!
I was thinking the same; just hope it wouldn't foul up my grinder.
Thank you for your mention of bee conservation. Beekeeper here, always nice to hear someone else spread the word!
She keeps them i thought she mentioned, thats why she does the bee shout outs 😃
I just put out 2 bee boxes since I just picked up gardening . My belief is our pollinators are our most important species , We must help them thrive ! Bees , Bats , butterflies ;)
Thanks for your conservation efforts.
Sir, bees did very well for millions of years without your lot 'keeping' them. You may have misunderstood the real problem (intentionally or not)
@Keedt except you havent read the news that bees are pretty much dying off....FAST.
I love how you talk to your chickens, such a gentle soul you have. 💖

It's almost hard to believe she didn't get youtube strikes for endorsing something that was made by the old Confederacy.
@@tomcollins5112 Thing is the confederacy was not the only people that used coffee in times of war. It goes back way further than the civil war! Like the Ottoman Empire!

My lawn is dandelions. I gave up fighting and just enjoy them now. I need to try this.
You can sell dandylion to people who sell herbs.
If you can't beat them, eat them xD
Pull them up and give to neighbors
Sell them
I read about this dandy coffee in a Native American cookbook in high school. We’re part Cherokee so I went out immediately and pulled up every dandelion I could find. Roasted them, ground them, brewed them....it was delicious! Especially with sugar and cream. It’s good for your heart to!

Every spring during my childhood, our neighbor would collect dandelion flowers, wash them well, dip them in batter and fry them up. They were awesome !!!
They taste kind of like fried mushrooms
Do you have a recipe for the batter please?

I agree and as a senior citizen who can no longer scamper about hunting for morels, I find these an excellent substitute... :)
I’ve commented this before on an Emmy video involving dandelions, but roasted dandelion root tea absolutely saved me during my second pregnancy! And I do not say that lightly. I developed some very severe conditions due to my liver failing to function normally. This was entirely caused by pregnancy. It manifested into an excruciating, burning, itchy rash covering my entire body due to bile build up in my liver and the toxins trying to make their way out of my skin. I am not exaggerating when I say I looked like I had the worst case of chicken pox imaginable. My skin was covered in red welts/hives and it hurt to even put clothes on. I was constantly tearing at my skin because of the intense itch, and I didn’t sleep at night. Some nights, I would sit in a cool bath for hours crying. This lasted for 23 weeks of my pregnancy. As you can imagine, I was desperate to get rid of it because I was so miserable. I was given steroids and many other treatments by my doctor, all of which failed. I researched day in and day out, and finally discovered that dandelion root tea has been used forever as a natural healer of the liver and a natural liver detox. It was worth a try. After 2 weeks of drinking it, the rash that covered 95% of my body was only covering about 50%, and my bloodwork was coming back more normal. After a month of drinking it twice a day, I was nearly completely cured up until I gave birth. I only wished I’d found out about it sooner. I have such a huge appreciation for dandelions now. They’re a gift to this earth.
Doctors are Full of It, it's usually something in nature that can people from prescription meds
I promise you it wasn't caused by pregnancy, you were probably exposed to a toxin at the time.
Epic
Can u drink it pregnant or after birthing
@@jenniferibarra7737 You can drink it while pregnant. I did two cups a day, one in the morning and one in the evening.
You mentioned your husband thought you were baking something when you were roasting the dandelion root, my husband thought I had lit a scented candle when I was roasting mine :)
The first time I had dandelion tea I described it as “popcorny”. I’m glad to see I wasn’t the only one to think so.
Every time you make a “Hard Times” video I hope Townsend will show up. A video with the two of you would be so awesome and wholesome it would make my month. This one was lovely as always!

I'm at work just listening to Emmy describe dandelions and call chickens ladies in a respectful manner. She's already made my day brighter. ☀
*Dandelions are one of several plants (e.g. black locust, for firewood, or osage-orange, for fence posts) that were spread around for practical reasons at one time, but later abandoned en-mass*
Here in Scandinavia we made coffe out of dandelion-roots (Amongst other things, like f.e cikoria) during WWI and WWII, because the naval blockades made shipping too risky for spending tonnage on luxury items. I´ve tried it and I kind of liked it! It´s very bitter so a lump or two of sugar is very much needed!
Cool video as always!
Can you still buy Richs?
@@jakobraahauge7299 Jeg mener at have set Richs kaffe i souvenirafdelingen på Aalborg Historiske Museum, så mon den ikke også findes på andre bymuseer med bredt souvenirudvalg.
You can still get cikoria coffee in east european and russian stores. We have a jar in the fridge, as it's nice as a quick, caffeine free drink.
I have the argument every year about dandelions. I refuse to spray and my neighbors think I'm savage. .
We dont really get dandelions where I live.... I still dont spray weeds (bees) but everyone else in the neighborhood does.... and this year I have yet to see a bee
I’m with you, rebel! 😉
Let your neighbours think what they like, we need plenty dandy's for the bees and bugs , I refuse to spray mine or dig them up , keep on refusing and stay savage, with you all the way .
Keep fighting the good fight!!
I think dandelions are so cute and when I was younger I could not for the life of me understand why people would spray to kill them. Now I understand that it’s because most people have been conditioned to thinking they’re an eyesore to a ‘perfect’ lawn.
I was looking for a tea or coffee to make with the million dandelions in my yard and I'm so glad you have a video cuz now I know it won't kill me LOLOL
Emmy, you are absolutely adorable. I know us viewers only know what you portray on camera, but from what I can tell your family is lucky to have such a wonderful woman in their life such as yourself. Beautiful, resourceful, intelligent, and a great personality.
Thank you for being you!
I just love how you let the chickens out and they were like 'MOM! Hi Mom! Hi!' That was cute.
was anybody else caught off gaurd by how that root was? my jaw literally dropped lmao
Not if you've ever pulled weeds. lol
Having finally managed to destroy a neighbour's Dandelion tree - sorry, rainforest - nothing of those plants surprise me.
It’s a bit scary! 😂 looks like an alien! 👽
It's what makes them so hard to weed out of the garden. Same with thistle.
That’s what makes them so tenacious,
You should make Dandelion Honey, it is very delicious and we make some every year! Loved the video, greetings from Austria😁

And the dandelion salad...😋
Emmy: the time for dandelions is now as we approach spring!
Western Canadians, watching it snow into May: /redirected to the maple syrup snow candy again for the 6th month
Another UA-camr put his dandelion roots into a blender after drying and gave 'em a blast, then sifted them and then blasted again followed by another sifting. This got the roots down to a coffee-grounds consistency and released more flavor and color with the brewing. Just an intriguing notation ...
dandelions are the best!! they help bees and you can make teas, wine, salad, tonics, jams/jellies, etc.
i just pinch off the heads of dandelions before they're about to go to seed so they don't spread at an uncontrollable rate or get into my vegetable beds :)
Emmy, when I was a kid in the late sixties I remember a ton of recipes using condensed Campbell’s soup. I ran across a chicken enchilada lasagne one last night while I was looking for something else and thought it would make a fun video series for you.
bgishy would be very interested in that series
She has chicken already
For anyone who wants to give this old recipe a try...
Chicken Enchilada Lasagna
Combine these ingredients for sauce:
1 can cream of mushroom soup
1 can cream of chicken soup
1 small can green chilies
1 and 1/2 cups chicken broth
Layer ingredients in a 9x13 pan like you would for lasagna:
Sauce (above)
3 cups of chopped cooked chicken
1 pkg flour tortillas
3 cups grated cheese
Bake 350 degrees for 30 minutes.
@@bgishy My mother used to make something similar to this only instead of flour tortillas she used salted tortilla chips! Change out the cream of mushroom and cream of chicken for a can of Rotel tomatoes and a can of cheddar cheese soup.
@@RowantarotBlogspot yum!!
I have 6 hens and they LOVE young dandelions. They eat everything from the leaves to the flowers (they don’t dig up the roots though).
I am so jealous because when I was a little girl I had a neighbor with chickens and geese and she let me and my friend take the eggs... we wanted pet chickens/ geese so badly!

I gotta try that too
Tay Leigh you can make ur own Rose jam. We call it gulkand
For the caffeine kick, try yaupon, a holly native to the southeast U.S. Probably you can get it dried... maybe it could be added to dandelion root.
Don’t be put off by its scientific name being Ilex vomitoria. You have to drink a LOT for that.
I'm going to admit I didn't believe this would really taste like coffee. I made some last night and I am shocked how close it taste to coffee. Mine tasted like a slightly weaker version of the coffee I usually drink (Newman's medium roast). But that could be that I didn't steep enough of the dandelion root OR I didn't cook it in the oven long enough. It did have that chocolately smell when cooking but some videos said that you almost need to burn it. Also, many videos said that you needed to dry the dandelion root for 2 -3 hrs BEFORE cooking in the oven for 30 minutes at 350 degrees. I eliminated that lengthy step by putting the DR in the food processor and chopping it up tiny. No need to dry it out for hours before cooking it. Thumbs Up!
I brew beer and this is giving me ideas...
How unique and interesting, really love the historical focus and significance of sharing a recipe such as this, to appreciate difficulties amidst war and to celebrate resourcefulness, then and now!

Dandy Blend is my favorite coffee substitute ever. Dandelion root, barley, rye, beetroot and chicory (all the stuff the confederates used to sub for coffee during the blockade, incidentally), hot or cold it's delicious.
Sounds delish! I love chicory coffee
I drank some years ago at a relative's place, coffee combined with dandelion tea.
I remember it being a very good combo.
Now I know why.
I've had dandelion root tea before, which is pretty much the same thing and it really helps with bloating and upset stomachs! I'm not too fond of the taste, as it reminds me of Chinese medicinal herbal tea, which my mother used to force me to drink haha. I'll definitely be on the look out for ways to make it more palatable for me now that I know how easy it is to make!

I guess that's the reason why I like dandelions. Love you so much Emmy!
This reminds me of Navajo Tea or green thread tea which is made from a similar plant. you should definitely try it if you can get your hands on it. It has a very earthy yet sweet flavor and taste so good. I live here in AZ so it's very common on the Native American Reservations
