    Hi Guga and Angel. I was a manager for White Castle for about 2 years. Excellent job with great benefits. I only seen 4 things that you could have done better. The frozen ones don't have it but the regular white castles and cheeseburgers come with a single pickle. Thinner patties, more water on your griddle, and before you put the bottom bun on the patty, did you dredge them with a little salt and pepper? Other than that, nice job going by their trademarked techniques as far as the dehydrated onions, and steaming. And another thing that has to be done correctly is, the dehydrated onions soak refrigerated for at least 8 hours in cold water from the beginning. The frozen ones are cooked just like in the restaurant. Right here in Louisville Kentucky. Also a couple of fun facts: White Castle was the first ever food chain. Opened in 1921 in Wichita Kansas with a $700 loan that was paid in full in the first 6 months of business. White Castle is not a publicly traded company. When you work for them they do profit sharing with their employees only. The company does not franchise any restaurants. All of them are owned by Bill Ingram. Passed down from Ingram to Ingram.

I definitely need to make thinner paddies next time, but otherwise, the flavor was pretty much spot on, I loved them. Not having a white castle nearby, learning how to make these is a godsend. VERY happy!

    For making bread, you typically want to use the hook attachment. The attachment you used is intended for cake batters, not doughs. That's why it had a hard time mixing it.

    I had my first white castle (that I can remember) 55 years ago when I was 5. For decades now, I make what I call "chateau blancs"... using filet mignon sliced very thin, over shallots, on a brioche slider bun (Walmart) with a really good cheddar and sliced sweet baby gherkins.

    I'd add the pineapple-juice separately, after the other wet ingredients.
    Guga was probably quick enough to avoid problems but the enzymes in the pineapple will quickly cause the milk to curdle and separate.
    Just a tip from someone who's made that mistake before.

    Never have I ever put Foil on top... doesn't need it.

    Not sure if mentioned already, but the instructions for the frozen burgers have changed over time. 'Back in the day' the preferred cooking method (according to box) was to fill pan with water, put burgers ontop of a rack and cover with foil. Thereby steaming them like they should be.

    White Castle is credited with making the original slider in 1921. It looked a little different back then. It would be awesome if you recreated that version of the burger!

    I made some white castle inspired sliders the other day and made my own rolls. It's a lot of effort for a hamburger but totally worth it! I did not freeze mine or stab them, so it is possible to make them without freezing them. (You have to have room in the freezer in order to freeze something flat. My freezer is always 1 corn kernel away from busting open.

    My sister-in-law is good friends with the people who own the White Castle company in Ohio. I truly am one of White Castle's biggest fans. When I lived in the Midwest, I used to have it for lunch nearly every single day. Now I live in AZ, where we don't have white Castle. Last time I went to visit her, the owners hooked me up with a bunch of White Castle swag and all the food I could possibly eat. I now have White Castle t-shirts, socks, coffee mugs, key chain, and a bunch of other stuff. I honestly don't even remember all of the little trinkets with the White Castle logo that they sent me. I have their swag stashed in draws all over the house. You'd think I was obsessed, but they were just really appreciative of a real fan. Now every time I go back to Ohio to visit, I always get my fill of free White Castle. Very nice people. And such awesome beer drinking food. For me, I always go for the jalapeno cheese ones.

    What a great video. Thanx for posting. Almost exactly what I do, but with one change. At the end if meat cooking, I remove the buns and set them up to be ready to transfer the patties to them. And then, the magic difference - I flame the tops of the meat patties with a propane torch like a broiling step to get a little bit of smoky carmelization to the beef.

    I worked there when I was in high school 97-99 and what you did was pretty close to how we did it. In my prime I could load a grill in about 45 seconds. The main thing you missed was the pickle. 😂

      It looked like a KitchenAid which are manufactured in North America. Hard to break but parts will wear after a few decades. They have service diagrams and parts a plenty to easily fix for any DIY dude. Hell, even some housewives can fix them.
      Of course they may nowadays be made of Chinesium and follow the Tesla / Apple / John Deere model of just pay a fortune and throw it into landfill when the slightest thing breaks these days? I hope not because I've been thinking of a stand mixer with a meat grind attachment and will go with a cheaper Kenwood instead if KitchenAid cheaped out.

    I worked at a Krystal's burger joint. Same as white Castle. No holes in the pattys. I didn't figure out why they taste so good. Fry the patty, put the onions on it, then put top of bun on it. 3 minutes it's done

    Just stumbled on this video. Now, Florida is home to the largest White Castle in Orlando! I grew up with them, and I have one within walking distance. I can say, fresh from White Castle is 100 X better than frozen, and after all the covid BS, our's is finally 24 hours again. However, yours look excellent Guga! Awesome as always!

    The frozen White Castles are much better if you place them on a baking cooling grid, then place the grid in a broiler pan filled with a 1/8" of water and steam them in the oven. They used to have these instructions on the back of the frozen packages but for some reason they removed them years ago.

      Crazy how their so-called "marketing dept." hadn't noted where all those Midwest/NE-retirees were relocating to these past 40-years! And expanded their chain accordingly.
      I think they missed the boat, for all the Caribbean & World cuisine in FL now.
      And those...Ahemmm...old folks (68 here))) just aren't walking by their shops, like we remember (Fordham Rd., da Bronx, for me.
      Personally speaking, WHAT-A-BURGERs with jalapenos is my old fave. Reminds me of Fort Sill. Crazy, huh? :-)

    I grew up in Houston and now live near Dallas. I have never had a White Castle anything. I’m looking at buying the Blackstone griddle and this will be the first thing I cook!

    I don't know why, but I absolutely LOVE dried re-hydrated onions. The flavor is quite different than fresh raw onions, but for some things they're just awesome. Love them on burgers, hot dogs and chili dogs. Yes, I like fresh raw onions just as much, but these just have a different flavor.

    If you didn't add a pickle, it's not the same. Makes a major difference. That's how they come, if you get them from WC. The store doesn't sell 'em like that just because it would freeze weird.

    Let me start by saying I'm a huge fan of your channels. You literally taught me how to souse vide the best steaks I've ever eaten. Also, I am a White Castle fanatic. I don't know why my brain is wired to love those little boogers, but I just can't get enough of them. There was a point in my life when I lived near Chicago, that I literally had White Castle sliders with pepperjack cheese for lunch ever single work day, 5 days a week, for like two years solid. Crazy, right? I LOVE THEM that much. HOWEVER, since moving to Arizona nearly 11 years ago, we have one White Castle located in my entire state which opened up about two years ago, and it's way too far from my home to ever justify going there. With that said, I don't want to learn how to make White Castle sliders that are "WAY BETTER." For me, that defeats the entire purpose. I want to learn to make White Castle sliders that taste EXACTLY like White Castle sliders. In the end, this looks like the closest thing I've ever seen, and I can't wait to make them.

    Great! last night I (never tasted the original white castle) did some sliders the quick and dirty (german) way in a pan: 3 medium sized onions, shredded, for 12 sliders, 40gramms round patties hand shaped, no holes, 1/3 hot dog bun per slider. The stacking like you see here. The buns get a little moist. Low to medium temps. Topped before serving with cheese, cornichons, some with a little mustard. GREAT!

    You could use a cookie scoop to make wee smash burgers. The cookie scoop would most likey be the size you need to fit those awesome rolls.

    I'm too European to know where you find these white castles that serve food, but what I do know is Guga is the king of beef, so I trust this recipe to be killer.

      White Castles are almost all found in the greater Midwest. I took advantage of this while living in Chicago and Minneapolis. The full restaurant menu is so much more than the frozen sliders in the supermarkets.

    I would like to see a video where you show us you equipment and tools in their details and maybe you can give some advices on what to buy for someone who wants to level up not only on the choice of the meat but also on the equipment they use, maybe dividing for price range or something. I think that would be cool and helpful for a lot of people that are trying to decide which grill/kettle/smoker to buy

    Hey Guga, great video! I grew up in NJ, so, I had the good fortune of being able to get WC sliders any time I was in the mood for them. But, when I moved to FL, I was like WTF, where are all the White Castles??? Since you made this video, a single White Castle restaurant has opened in Orlando, and funny enough, as I watched this, I was eating sliders that I purchased from that location! I actually live a little over 60 miles from the place, but, I have to travel frequently to the Orlando area for work, so, whenever I can, I stop to grab a sack of sliders to take home. After seeing this, I'm gonna give this recipe a try soon!

    Hey if you want to get closer to the White Castle taste you need to steam the burgers... lots of the WC taste comes from the steaming of the burger with the dehydrated onions including the liquid they reconstituted them in ...all you have to do is put a lid or foil over the burgers...lastly put a little extra water in the dehydrated onions that will be the liquid that steams so there is no need to add water to steam....Back in the 70's I owned a fast food restaurant that duplicated the White Castle burger..

      My theory, especially for mass produced frozen burgers which probably could be done precisely, is it looks visually appealing to have a little bit of cheese hanging off so they offset it so you can see it/make you think it's super cheesy.
