I just made this (well, not Sous Vide and with a very simple mayo and relish tartar sauce). I sauteed the Mahi Mahi in a skillet until cooked half way. When the fish cooled, I flour, egg, and panko breaded it, then deep fried it in 350 degree oil just until golden brown. Less than a minute. Threw half slice of American cheese on it right away. Threw on a soft hamburger bun on top of the tartar and served right away. Man, this was DELICIOUS! DELICIOUS! The kids went crazy. The fish, of course, was extremely flavorful (well seasoned) and moist. Really, really good. Thanks for this!!
You’re missing out! A filet o fish consists of tangy tartar sauce, with a crispy crumbled piece of fish and really nice American cheese. In my country, they give you the whole slice of cheese however!
Love the filet of Fish. Especially the double fish patty . A Hot crispy fish patty is the best. I always ask for freshly made to ensure they are hot and crispy unless it’s lunch or dinner rush where they are constantly cooking leaving no time for the patty to sit in that warmer tray

I am definitely in the "love them" camp for McD's filet-o-fish. However, I haven't eaten one in years since noticing that they had changed their fish. The 1/2 slice of orange cheese that they use now, looked really scary...I can't help but wonder if that was really cheese, lol. Your sandwich version looked amazing as usual. I certainly want one now! I love to use Colby cheese on sandwiches such as this, that would be the only thing I would change. ☺

If you read the book “Grinding It Out”, Ray Kroc explains why it’s only a half a slice. And has nothing to do with being cheap. It was all about balance of flavors. A full slice gave the filet too much cheese flavor according to the taste tests.
If that's true, why not use a milder cheese or a thinner slice? Using a half slice doesn't give you balance because you don't get the flavor in each bite. It's inconsistent.

Used to work at maccys as a youngster and basically the cheese is on the bun when it's steamed and a full piece of cheese melts all over the bun steamer
1:26 "the sauce is nice" the sandwich is a nice balance, the problem is they are unable to consistenly put the same amount of sauce in there. Cornichon pickles: my wife and I had dinner at fogo de chow last year and it was my first time tasting them. They are a very tiny French style dill pickle that are very tart. We eat seafood every Wednesday night watching Survivor and I add these to my tarter sauce every time now. Surprisingly widely available and not to expensive. I highly recommend them. I now want to use capers for the first time ever based on your TS recipe. Thanks!

In the 1960's my home town of Montebello got one of the first ten McDonalds. The burgers and fries were simply amazing, but when the Filet o Fish was added to the menu, it quickly became the go to meal for the majority of customers, especially Catholics on Friday! There is absolutely no comparison to what they served fifty years ago, and what is served today! I truly miss the early years of McDonalds!!!

Since they change the fish form habit and later cod was good in the sandwich years ago is not the same now pollack, which is tasteless. I preferred the old ones. The tartar sauce is good but the the fish now isn't as good.
roughly chop your capers rather than keep whole, trust me... I used to make tartare sauce for high end restaurant, it just allows the flavour of the capers mix with the sauce and keeps to the consistency of the rest of the chopped ingredients

McDonald's used to put whole slices of cheese waaaaay back. It was changed back in the 70s or something like that. They go over the history of the filet-o-fish in management training. Still my favorite fish burger of all fast foods. Wished they'd carry the double filet-o-fish permanently.
I ate with my grandma half the time we went there. They're actually pretty damn good.

When I was a junior in high school (1965) the local McDonalds opened in our community in Seattle. I was a vegetarian and the filet of fish sandwich was my go-to. It costs $0.18 opposed to the $0.15 for a burger. I loved them and still order them

Well obviously Sous vide everything is for recipes cooked Sous vide and Guga foods is for other methods like grilling, baking and stuff like that.
Should've opted for red snapped. Red snapper has a delicious sweet flavor and is moist. All around great fish. Halibut would be my second choice! Mahi is great, but I enjoy it more blackened than fried.
42 years on Earth and i have yet to try the Filet-o-fish...if i made it at home, i would use swordfish, but i don't think deep frying is the best way to eat swordfish. good video Guga💪

In the 1960's my home town of Montebello got one of the first ten McDonalds. The burgers and fries were simply amazing, but when the Filet o Fish was added to the menu, it quickly became the go to meal for the majority of customers, especially Catholics on Friday! There is absolutely no comparison to what they served fifty years ago, and what is served today! I truly miss the early years of McDonalds!!!

Since they change the fish form habit and later cod was good in the sandwich years ago is not the same now pollack, which is tasteless. I preferred the old ones. The tartar sauce is good but the the fish now isn't as good.

roughly chop your capers rather than keep whole, trust me... I used to make tartare sauce for high end restaurant, it just allows the flavour of the capers mix with the sauce and keeps to the consistency of the rest of the chopped ingredients
