When you were egg washing the croissants i was biting my teeth, theyre such delicate air pillows every time i egg wash croissants im so careful because i dont want to puncture it but its good to know they can take a little beating when theyre proofed

Usually it’s shaped in the evening ( which is what she was doing in the end of the video) and finish resting / proofing in the machine to bake first hand in the morning.
