My cup measurement :
All purpose flour : 1 cup = 125 grams
Milk/water : 1 cup = 250 ml
Egg substitutes alternative: for one egg :
• 2 tbsp water + 1/2 tsp oil + 1/2 tsp baking powder + 2 tbsp flour. Stir until combined and mix with other ingredients for the dough.
• Flax seeds: 1 tbsp ground flaxseed + 3 tbsp water. Stir and let sit for 15 minutes. (for suitable bread recipe), grain bread.
• 1 tsp baking soda + 1 tbsp white vinegar + 1 tbsp water. Mix into the dough ingredients. (fluffy)
• A half of ripe banana (for suitable flavor)
• ¼ cup of puree fruits (moist): apple, apricot, prunes, avocado, pumpkin (for baking something where the flavor suitable)

Garlic Dinner Rolls (makes 10 pieces)
INGREDIENTS :
1 teaspoon (3g) instant dry yeast = 21g fresh yeast
2 tablespoons (25g) fine granulated sugar
1/2 cup (125 ml) warm milk
1 large egg, whisked
250 grams (2 cups) all-purpose flour
3 tablespoons (42g) soft unsalted butter (margarine work too)
3/4 teaspoon (4g) salt
1/2 teaspoon (1.5 g) garlic powder (or 1 teaspoon fresh minced garlic)
2 tablespoons chopped scallion/parsley
For a larger batch, this recipe might not exactly the same but the result is almost the same as the original garlic bread above.
Garlic Dinner Rolls
2 tsp (7g) instant dry yeast
3-4 tbsp sugar
1 cup (250ml) warm milk. Add a little at a time if you really need more.
2 large eggs, beaten
500g (4 cups) all-purpose flour. per cup = 125 grams.
5 tbsp softened butter/margarine
1 1/2 tsp salt
1 tsp garlic powder/ 2 tsp minced garlic
chopped scallions
1 egg for egg wash
Note for a double recipe :
Use a bigger bowl to mix the ingredients.
Mix the dough until really smooth and soft, maybe more than 5 minutes.
The second proof after shaping (30 minutes) is important to give the dough expand, relax, and plump.
If your dough is too dry please add milk a little at a time until it is soft and loosens.
The butter/margarine is softened (room temperature) NOT melted.
For this larger batch is better to use Kitchen Aid or mixer with a dough hook, stir by hand is possible but will be hard and tired.

This garlic dinner rolls original recipe makes about 10 pieces of small rolls like mine or less if you want to make it a bigger size. The texture was incredibly soft, fluffy, and very delicious from the garlic, scallions, and parsley.
It looks plump but when you press it it will collapse and spring back into shape.
Serve for dinner, for breakfast, as a sandwich, as snacks make the smaller size as an appetizer.
The baking pan must not be square, just use your favorite baking pan, it can be round, rectangle or baking tray, or bundt pan.
The recipe can be double if you want more. But please consider the amount of salt that you are using.
The dough can be kept in the refrigerator overnight or store in the 'freezer plastic bag' and keep in the freezer for a few weeks. Thaw in the refrigerator overnight and about an hour at room temperature before baking time.

@@wongjane8264 based on my own experience, usually for bread, must use bread flour instead of all-purpose flour. it makes a lot of difference.

I've made four batches of these AMAZING rolls... Since lockdown I've tried to find easy, comfort recipes. These are perfect.. I've made some for my neighbours and friends and housemates. So they are a winner.
At the moment I have cheese and red onion bread rolls in the oven, I used this recipe and just omitted the spring onion for red onion.
One other comment, my housemate wanted extra garlic powder and I doubled the recipe 👍 delicious.

These were great! I cut the recipe in half - used 1/2 the egg in the dough and the other half for the egg wash. I made five round rolls and used my air fryer to bake them. I air fried for 10 minutes at 325F, flipped them over and did another 3 minutes. They were soft and fluffy and had just the right amount of garlic flavor. I will be making these again! Thank you! 😊

Ninik, i saw yr rolls are soft and fluffy. Mine was not, its chewy. Is it becoz i did not work it long enough till elastic? I used a mixer to work it a while like shown on yr video here (u used spatula). Ada saya baca di mana, katanya kalau nak soft n fluffy kena betul2 elastic dough nya. NJ Hartanah, homemade bread without bread improver will change the texture after a few hours or days, it's normal. My recipe uses a stirring method as you see in the video and the dough is very very soft, this very soft dough create very soft and fluffy bread like mine. Kalau ingin menggunakan elastic dough menggunakan mixer, sebaiknya lakukan windowpane test, metode ini akan menghasilkan roti yang empuk dan berserat. Selamat berexperiment 💘

I made my first batch of yeast rolls today, took me forever to get the nerve up. I used the rapid yeast. They turned out great, except one thing. They browned on the bottom, but not the top. I think it may have been, I forgot the egg wash before baking them. Now I feel I can do it right next time. And next time, I'm doing these. They look soooo YUUUMMY 😋❗👍👍👍.
I stuffed them with some tuna mayo before bake them.So Delicious when piping hot out from oven.

I baked a second batch tonight. Oh my goodness. The finished product looked just like yours. The house was smelling like garlicky yeast. Oooh la la. I made this today, and it turned out looking really nice n super soft!!!! It’s like a fool proof recipe!! Umme Ammar, when I discovered this recipe, I don't mean to be overnight dough. I got this question a lot. Yes if necessary this dough can proof overnight in a refrigerator.

Hello +Dolores, thanks for trying my recipe. This recipe is so easy but many people make it complicated. Your first case is clear : you not follow the recipe. The second is actually nothing wrong, the dough is soft and sticky, please don't panic if it doesn't pull away from bowl. Just continue the process, add little flour to handle the dough and follow the recipe says. It should be fine.
Made this today! Was a success thank you for the recipe! Used garlic butter instead, dried rosemary and wrapped it in sliced cheese before baking.

I made this few times followed the recipe and instructions 100% and was yummy... Again I made this yesterday but. I substituted the butter with homemade Greek yogurt so mine was slightly wet dough so I made it as a loaf instead and it came out perfectly soft! I added plenty of fresh garlic... Next I will try your whole wheat recipe and substitute the butter for Greek yogurt and see how that goes!.. Thanks

Just follow your recipe and made these .. I added parmesan cheese on top and normal cheese in it .. came out soooo tasty and soft .. thank you ❤ .. I'm 17 years old and this was my first time. My mom and bro likes it alot .. my dad and sis didn't try it yet . So I'm waiting on them ❤

I added a fraction of cake flour and wrap the dough with mozzarella cheese before baking...this turns out exactly the same texture as yours. But I took out from the oven in 16 mins at 180°. Thank you so much for this awesome recipe. Best wishes!😀👌

In fact, I reduced the sugar by 2tbsp (I baked the larger quantity) hehe...😂 and added just a pinch of salt as I used salted butter so it all blended perfectly as there's no complaint of saltiness but only word, awesome...lol! I am not a baker and I have made this twice, the only modification for me was to cook it on 350(American convection oven) for 20 mins… lovely rolls. It was a hit!

I've made this couple times as my family loves it. Your recipe is just perfect and easy to follow. :) you said in the description that the dough can be kept in the fridge of freezer. I'm just wondering at which point can I keep the dough in the fridge or freezer? Is it after I shape it into individual balls or logs? And if storing it into the fridge, do I need to let them stand at room temp for an hour or so before baking it? Hope to get your reply as these are addicting and I wish to have these ready at all times. Love from Philippines. ❤️
We can freeze the dough after the first proofing.
In the freezer: when you plan to bake, thaw in the fridge the night before then let it warm again at room temperature. Shaping and let it rise as the recipe said for the second proofing before baking.
In the fridge: Let the dough warm again at room temperature, shaping and rise for the second proofing before baking.
