    These noodles are so beautiful to watch being made in Chaosan .. they puree the rice into a slurry that creates the noodle sheets, steamed then cut into strips .. such a beautiful artisan tradition ..

    Thanks Sel for posting this video because you got a perfect formula for this noodle; I bought a $10 noodle pot from Phnom Penh, Cambodia; this pot make it 4-5 times faster than you did; this noodle is much better healthier than the shop because they put too much preservative to stay on the counter.

    You should treasure this video! I remember my Mom teaching me how to make her Beef Vegetable Soup. She passed in 2007, and those notes I took are now among my most valued possessions. So it will be when your Mom passes away. This video will mean more than the world to you, because she starred in it.

    I think if you use a pizza cutter it might be easier to cut the rice noodles just my thought :). I'm very glad and thankful for all of your video I learn a lot of very useful tips you guys are Great

    Great recipe I have made them twice now. I think I have to adjust the recipe somewhat because they are so delicate they break up badly no matter how easily I Stir them in the sauce.

    How long until they go bad? How should they be stored? Freezer? Refrigerator? For how long?

      Arlette Resendiz I don't have experience for keeping it long but I do have experience for keeping it a few days which is in the refrigerator with a cover on it.

    Thank you very much for this video - it is the only one I've found explaining in such detail. What oil do you guys usually use? I would think something flavorless like an olive oil but was curious if you do canola or sesame etc

      you can try corn or wheat starch, but tapioca is the best 😊

      Wheat starch is working just as well as tapoica.

    is tapioca starch same as tapioca flour?

      Yes it is, otherwise often known as Arrow root.
