That's exactly how I have been doing it for a long time; start high briefly, switch to medium-low until cooked half-way up, then turn the salmon over, switch off heat and wait 5 minutes. Never fails, never dry, always juicy. I like your finishing, but I also like adding pinch of dried garlic and a drip of soy on top before turning over the salmon.

Try milk fish or bangus in Filipino. I love salmon and bangus and they're both delicious with crispy skin. Just do the same thing but without the butter and other spices. Just salt.
I wasn't a fan of Salmon until I made this for my friend Anthony. Salmon always had this fishy taste to it(it did the few times I tried it),so when it was barely there after making this(I used Cajun seasoning) it really caught me off guard. And the oil frying made the skin taste like chicken skin. I'm gonna have to tried this again, thanks to this recipe.
One time I made it salmon nuggets and crispy skin salmon and they tasted so good and I actually get some sriracha and mayonnaise mix it together to make it extra spicy
