Gluten Free Banana Bread: Cheap enough for the whole family

  • GF BANANA BREAD RECIPE:
    Mix together the following:
    1 C. rice flour
    1/4 C. instant potato flakes
    1/4 C. cornstarch
    1/2 C. sugar
    1/2 teaspoon salt
    2 teaspoons baking powder
    1/4 teaspoon baking soda
    2 teaspoons guar gum or xanthan gum
    2 eggs
    1/3 cup softened butter
    2 tablespoons milk
    2 very ripe bananas, mashed
    Then add:
    1 C. chocolate baking pieces
    Grease and flour the loaf pan well - using rice flour of course. Spread the batter into the pan and bake at 350 for about 45 minutes (or until a knife inserted into the middle of the loaf comes out clean). Let cool at least 10 minutes before slicing. Enjoy!

    Want to give your whole family a gluten-free hug? Bake them a warm, homemade loaf of banana bread! Mom says it's as easy as making regular banana bread but just with a few different ingredients. You can do it, too. Let me show you how...
    Instead of using regular flour, we just use plain rice flour. So all you do is combine 1 cup of rice flour with 1/4 cup instant potato flakes and 1/4 cup of regular cornstarch. (We buy ours in bulk because we bake A LOT of gluten free stuff.)
    Then Mom adds 1/2 cup of sugar, 1/2 teaspoon of salt, 2 teaspoons baking powder, 1/4 teaspoon baking soda AND... 2 teaspoons of guar gum or xanthan gum. But don't skip this ingredient because it REALLY makes everything stick together GREAT.
    Next come the liquids which include: 2 eggs, 1/3 cup softened butter, and 2 tablespoons milk.
    And of course... since we ARE making BANANA bread... you'll need 2 very ripe bananas. I like to mash ours up into a ooey, gooey mess first.
    So... put everything in the bowl... together... and mix it all up. You can add a little more milk if it's too thick to stir... but we usually don't need to.
    And now... for the best part of all... the CHOCOLATE! You DEFINITELY don't want to skip THIS ingredient either...
    Make sure to grease your pan well. We just use the butter wrapper since it's already greasy. Dust the pan with a little bit of rice flour to make sure the loaf comes out easily. Spread the batter into the pan and bake at 350 for about 45 minutes.
    Now... you DID say you like hugs... right? Because THIS gluten-free banana bread is probably gonna make EVERYONE love you!

    How much applesauce would you use instead of bananas?

      Suzanne, you could try about 1 cup of applesauce in place of the bananas. You can add a little more if you find that the batter is too stiff to pour into the pans well. The batter should be thick but not so thick that it won't spread into the corners of the pan easily. Check the center with a butter knife or toothpick when you think it is done baking so you can be sure it is thoroughly cooked in the center. Applesauce makes a great substitute! Enjoy!

    I turned these into muffins and baked at 350 for 20 minutes. They were perfect for my family!!! Delicious!!!
