My mom’s carrot cake recipe she uses candied pecans, and Craisins instead of raisins and other nuts. Everyone loves the fact that it tastes so different, but so good at the same time, the candy pecans add not really a crunch, but a different texture than the carrots and Craisins. If you like carrot cake, you would love it people ask her for the recipe all the time.
This is going on my to bake list. Best of both worlds.
