I'm just a home cook, but I beg to differ on your statement that you need to use a springform pan or you won't be able to dig your cheesecake out of the pan. I never use a springform pan for cheesecake. They leak in the water bath. I use Alton Brown's method of lining a deep cake pan (bottom and sides) with parchment paper. Once the cake is cooked and cooled, you remove the side parchment strip, dip the bottom of the pan in hot water for a few seconds, flip cake out onto a cake board or platter, then back over onto the final serving plate. Works like a charm and you don't have that springform bottom stuck to your cheesecake, either.
Tin foil is OUT! Reynold's (wrap) makes Crock Pot liners that work great around a 9" springform pan. No need to ever deal with a soggy cheesecake crust again. This is the best solution for baking in a Bain Marie (water bath). ps: They come in a box of four liners and I've been reusing my first one for more than 3 years now. Also makes a great gift for someone you know that bakes cheesecakes.
