    I made this cake, replaced the light muscovado sugar with half dark musc sugar and half cane sugar. It was not at all sweet, almost not sweet enough (i don't know if this is the recipe or my substitutions). Luckily adding half a jar of jam mostly remedied this. I would also add a pinch of salt to bring out the flavors.
    The recipe calls for 4 tsp of baking powder, in the video it's 5 tsp.
    On the first day the cake was very dry, now on the second day it tastes great. I think maybe because I used APF? So if you are serving this to friends def make a day ahead. It looks spectacular!

    I always use walnuts rather than pecans, they have a nicer flavour and are seldom rancid. I find that pecans so often taste a bit off, and that spoils the whole dish.
