- Let's be honest: the greatest Hanukkah gift of all is the gift of the perfect latke. Whether you have a sweet tooth or love something golden, brown, and crispy, this recipe will bring you something to enjoy on at least ONE of those eight crazy nights.
Serve these homemade latkes with sour cream and homemade applesauce (or store bought... no shade!) for the PRIME latke experience. Seriously - it's heaven.

You do not want your potato’s to oxidize. It will not get you the color on the latkes that is so revered. We Jews love when you can see colors in your latke and when it only looks brown then we know something went wrong. So instead there is an option to fix this. First, grate your onions and put them into a large bowl. Then, grate the potatoes and put it in the same bowl with your onions. From there, mix the mixture around and your potato’s will stay that nice creamy color. From there, you want to REALLY squeeze out the juice and put your dry onion potato mix into a separate bowl. Even though all the liquid will squeezed out, the potato’s won’t oxidize because the acidity from the onions has caused this process to stop. Make sure you let the liquid sit for 15-30 minutes so you get a ton more of the starch from the bottom of the bowl. Then drain this and put it back in the bowl with your dried onion potato mix.

He is missing the best combo! Everyone talks about eating these with sour cream and applesauce (ew don’t do it, latkes deserve better) but the REAL winner is Jam (or jelly depending on what you call it). It is so good with strawberry, blackberry, boysenberry… you name it! This is my favorite combo and my Bubbe’s favorite thing to eat. I recommend trying it with jam by itself and then be risky and put sour cream and jam on it. 100% worth it
