When Justin said squarsh, he reminded me of my English teacher in grade 8. She would say squarsh & warsh; no discernible accent, just that odd mispronunciation. 25 years later I was talking about this to a work colleague in Toronto and one of the Managers in the insurance company where I worked was listening. She asked me what town I lived in, and after I said Meaford, she laughed and told me she immediately knew I was talking about her mother-in-law. I always buy Japanese sweet potatoes; a bit hard to find, but I seriously love them the most out of all the others. June comes through again with the sweet potato gnocchi 🧡 I'll have to give this a try.
The reason not washing the sweet potato when dug up. They will rot faster. Also, they have to cure for long storage. Never store in the refrigerator it causes it to lose flavor and come hard in the center.
