iirc, in the epic of Gilgamesh, it was actually Enkidu himself who persistently urged Gilgamesh to slay the beast, while Gil was having a second thought. Thus Humbaba cursed Enkidu specifically not to live long, and may not find peace in the remainder of his life.
Gilgamesh is the most powerful character in Fate because he’s the biggest most arrogant dick in the entire Nasu cannon and every Fate fan still fucking loves him. (I include myself in that description)
well... he was supposed to be stronger, but he nerfed his divinity down so he could understand human better. He didn't think strength was everything. in the original epic of Gilgamesh, it was his plan to let Enkidu "get busy" with Shamhut as to wear him down a little before they have a fight. In the fight with Humbaba, he also needed strategy. it was also true against the Bull of heaven. Had he kept all of his divinity, he would still be a total prick as he would never know compassion. And giving up a part of his divinity actually served him better throughout his life. people adored him and willing to lend him hands. While its also true that he could've gotten immortality just by accepting his divine inheritage, it wouldn't fit his character. And in giving it up, he gained another form of immortality, to live and adored in the heart of people until the end of mankind. He also gains all the best of human's invention which continuously piling up even without him actively collecting them, a lot of them are made specifically to slay gods. pairing up with Enkidu (the chain), even pure divine beings (or rather, especially divine beings) have to fear him.

Alignments in Fate aren't the same as D&D. It's how the characters view themselves is what determines what their alignment is. Once Gil was summoned in the modern world and realised how lazy and corrupt humans became compared to his era, he wanted to eradicate them and only those who survive are worthy of him to lead in his new kingdom. So his love for humans and his generosity is what makes him "good", but his procedure and execution is what makes him very Chaotic. Hopefully this makes it a bit clearer to understand. edit: Him getting touched by the grail also warped his thoughts about humanity even more hence the difference of Archer Gil being more Chaotic in FSN than F/Zero
