And: it’s nut-free, dairy-free, refined sugar-free, gluten-free, oil-free, eggless, but super rich, smooth and creamy like a really good cheesecake.
We only use 3 whole food plant-based ingredients for our easy and quick no-bake cheesecake (without oven).
Our cheesecake recipe is so healthy that you could eat it as a protein rich snack after your workout.

14 oz (400 g) firm tofu
½ cup (120 ml) maple syrup
1 tsp lemon zest
¼ tsp vanilla extract (optional)

The taste is incredible, but the cheesecake didn't get firm (overnight). I used agave syrup instead of maple but apart from that, I followed the exact recipe. What did I do wrong? Was the tofu too wet?
Make sure to use a firm tofu. They're a few block tofu varieties: Soft or medium tofu does not work. Enjoy!

Has anyone used anything other then lemon zest? It’s to bitter for me. Can we omit it. Maybe we can use like just vanilla and maybe orange zest would be better? Not a fan of lemon zest?
This is a great recipe and I happen to have all the ingredients already at home. Can I ask, what size is your springform tin? I’d hate to pull out my 8-9 inch round and find out that I need 6 recipes to fill it. I see you used 2 recipes to fill yours. Thanks !!
