Don Cho - Seoul | Home Coffee Brewing with April #21

- This week, we’re bringing you the latest video from a series that we call Home Coffee Brewing with April. This time around, we’re revisiting Don Cho in his Seoul apartment to explore his approach to filter coffee brewing together.
We believe that innovation in coffee brewing starts at home, and that some of the most special and meaningful interactions with coffee can take place within your own kitchen.
As we are travelling frequently travelling visiting our international partners, we decided to introduce this format as a way to interact with you on a different level whilst maintaining the frequency of our videos.
In this video, Don Cho brews a Honduran coffee from Standout Coffee, using his April Ceramic Dripper. Don uses a Weber Key 83mm conical burr grinder, opting for this over his EK-43 this time around. The grind size is set a little bit finer than average to match the flow rate and contact time provided by the Sibarist coffee filter.
If you haven’t already seen it, make sure to go back and check out our previous episode with Don Cho, where we brew a mystery coffee using his highly technical espresso set-up.

Don Cho is so awesome, I just watched the first video with him again. I like the way he shows his passion and skill It is inspiring!
He is for sure a very passionate about coffee and it was a lot of fun to record with him. Do you prefer the espresso or filter concept?
I could watch more content with this gentleman
My thought, he deserves his own channel
Amen.
A joy to watch, loving the uninhibited enthusiasm.... this is what home brewing is all about, and the Sibarist filter an interesting twist.
Thank you for watching Jonas, more to come in terms of paper filters and brewers in the future. What paper filters are you using?
Want more videos with don cho! Loving the series waiting for the Manila edition ☕️🥂
Thanks for this series Patrick!
Very insightful!
Cheers from Houston, TX.
Thank you for watching. What's the best part of the series so far? Any tips on how we can improve it?
@@coffeewithapril Best part of the series in my opinion is getting to hear everyone’s unique recipe’s and the reasoning behind their choices. Great work asking all the right questions for us watching! Also love to see what (and how) equipment is being used out in the “wild” by home brewer’s.
Audio is the only thing I can imagine could be improved, but I noticed you made an adjustment a few mins into this video which made a positive difference!
@@Shugenja.0 thank you for sharing and you all are always welcome to come with suggestions on questions to ask.
Don is pretty great.
I don't really like the conical profile of the Weber Key but do agree with higher quality paper filters and grinding finer for them as a result.
If I could use this much space in my kitchen I would probably also end up filling the majority of it like Don 😂.
Thank you for watching. All grinders have their different opportunities, in terms of what they can bring out in the coffee. What grinders do you prefer to use?
Another great video in the series. This guy is a true mad scientist in his lab 😅. Beautiful small kitchen, and a great setup. Love it, thanks.
Thank you for watching. Don for sure fits that subscription. How's your home setup
If the filter is fast, grind fine for more surface contact. that makes sense. thanks for the tip. nice video. cheers from Texas, USA.
Thank you for watching Richard. Sure thing, makes a lot of sense. What type of filter are you using?
Hario V60. I'm terrible but I enjoy the challenge. I have more luck with Aeropress and French press. But I'm not giving up on pour overs. @@coffeewithapril
Awesome video! I see his passion and desire to get his preferred cup! I wonder if with the same filter and grind size, he uses the standard April recipe 15/240 80g circle center pour and we would get an interesting profile at 90degrees temperature
I felt his love and enthusiasm for coffee. This video reminded me of the origin of enjoying coffee while appreciating the producers. It was a very good video!
Thank you for watching Willy, we are glad you enjoy it. What would you like to see in the future?
Joo
😢 😊
Thank you for watching. How did you enjoy the video?
What a nice Sir ❤
Thank you for watching.
I keep missing it or I have totally confused myself. I just wanna confirm lol. The dose is 20 grams and it's 50 grams per pour and he does a total of 4 pours? So the total amount of water is 200. So the ratio is 1:10?
Happy to see Don again! Super interesting he used sibarist on a april! Recipe seems very V60esque tho. Still think 2 pour with april filter tastes the best with april brewer.
Thank you for tuning in. It was interesting to see the sibarist filter. It wasn't a perfect match but it did inspire us to start looking at a wider range of paper filters for the April Brewers. Have you tried our new Paper Filter?
@@coffeewithapril sadly no, I’m still waiting for the new filters to hit the market here in Seoul! Can’t wait to try them out tho
