I would strongly recommend using the April technique and recipe for the April dripper. The unique and aggressive pouring structure combined with a relatively coarse grind is what makes the April dripper special. Otherwise, it is just another nice flat bottom dripper. Try 12 or 13 grams ground coarse on your EK and use the two 100g pours. Once you get the feel for it it’s extremely easy and consistent. I use 98mm SSP brew, a Fuji R220 and a MAX SLM with great results on the April. Patrick likes 1.25 TDS or so. I usually prefer a slightly higher TDS or around 1.4. The April taste great as a lower extraction percentage dripper…lots of nuance vibrancy and a balanced acidity.
Also, since you often are trying to test and compare variables I would suggest you get two identical brewers and filters with two scales. I have two April brewers, two v60s and two Kono drippers. This allows me to very fairly compare grinders, coffees, waters, etc in a quick and fair manner. For example, the beverage temperature will be the same. I always use cupping bowls and a dry erase marker on the bottom to compare blindly without the influence of a cup. You like to compare variables, as I do, so it’s a big help to control all the variables you are not testing.
What do you prefer, v60, Kono or April?
I see them as all having attributes that make them worth having. For one, the v60 does a good job with larger volumes. The Kono is consistent and usually gives you a bit more acidity than the April. Sometimes the Kono offers a great mouthfeel. Overall, if I don’t want to spend a long time tweaking a recipe/technique, the April is what I would go for. Although I have had good results with the Kalita filters it’s probably best to stick with April filters. Once you get the technique down, it’s versatile and seems to always deliver a great result.

So true! He screws up the grind size and then starts talking about another dripper halfway through the tasting. It was frustrating to watch, and we never got an answer about which one he liked better.
Can you do a review of the Blue Bottle dripper? I feel like that’s a fairly unique flat bottom that isn’t talked about enough - also a pretty fast brewer in my experience
I've got the BB, April, and Orea. BB is a fine alternative that's not overpriced imo

1. Not letting water completely draw down then stopping timer.
2. Not stirring before tasting.
