Creamy Soup Craving? How to Make it Dairy-Free! | Genius Recipes with Kristen Miglore

- CREAMY VEGAN SOUPS: In this episode of Genius Recipes, host Kristen Miglore turns to Wil Yeung, cookbook author and host of the UA-cam channel 'Yeung Man Cooking,' for a new way to make lush, creamy soups that happen to be entirely vegan. The first genius ingredient is cashew cream, aka equal parts water and raw cashews, which you can blend without soaking if you’re using a high-speed blender like a Vitamix. And the second, maybe more surprising genius ingredient? A thinly sliced potato-and this is crucial - rinsed to get rid of any excess starch, so the soup has loads of body but won’t sneak off and go gluey as you blend.
Here, Wil’s template takes the form of a creamy mushroom soup. But to show how riffable Wil’s technique is, Kristen came up with another creamy vegan soup recipe inspired by two specialties of Duarte’s, a 129-year-old tavern in Pescadero, a tiny fishing and farming village on the California coast: their famous cream of artichoke and green chile soups, which they often serve swirled together.

THANK YOU! I have a milk allergy. Not lactose intolerant, an actual allergy. I can't use any dairy products - even ghee or butter 😞. Although I am an omnivore, I am constantly on the lookout for decent vegan recipes for anything creamy, cheesy, or both. I'm now following Yeung Man Cooking and using his "starch removal" technique for my potatoes. Yay! I never realised it was the potato starch that was (literally) gumming up my recipes. Great content, Kristen. Keep up the good work!

Love Better Than Bouillon 🙌 and I feel like it’s more “sustainable” to purchase a concentrated product in a small jar than a ready-to-use product in a plastic-coated container. Plus their products are wonderful and make delicious soup! I use the “No Chicken” version all the time. Mushrooms are a firm favorite here, I will be making this soup for sure.
I always have a jar of Vegetable Better than Bouillon in the fridge and use it if I haven't had time to make my own broth. I agree with a previous poster that it's more sustainable even though my city (supposedly) recycles cartons and such. I bet the mushroom version of BTB would be awesome in this soup. Thank you for this recipe, Kristen and thank you so much for introducing me to Will Yeung and his youtubes. I've pretty much spent the better part of a day saving many of his amazing vegan recipes.
Thanks for the "Creamy Soup Craving" recipe. I took the liberty of using a 6 Qt Instant Pot and my Bamix immersion blender. The only major change was sauteing the sliced mushroom caps first and setting aside until time to serve as for the pressure cooking time I went 10 minute with quick release. One side benefit is not having any dairy it freezes well.
These look so delicious. I’m especially excited about the artichoke soup, my mom has an autoimmune disease which makes it hard to find dinner options for her, but she LOVES artichokes- I can’t wait to make it for her!
i made a “version” of zuppa toscana and used a can of puréed cannellini beans to thicken it instead of cream. it came out delicious.

this is epic. I have been following Wil Yeung for a few years now.... love his vids. we are both here in Ontario Canada... love your vids too :)
Instead of wasting time and effort soaking or boiling cashews, just dry blend them to powder first then add your liquid and blend some more. Instant cream sauce.
For the cashews if you need to soak them in a shorter time you can use boiling water. Then you can soak them for a few minutes up to 15, depending on amount used and if it’s a hard boil or soft boil for the water.
I can’t wait to try both versions, but I am going to make the artichoke soup for Easter.
I have a vegetarian son (vegetarian, not by choice), I am always looking for new and delicious recipes to make. This will be tried this weekend!!

I stand second to no one in my love of mushroom soup, but as someone with a deadly tree nut allergy, I could almost feel my throat close up at the mention of “cashew cream.” 😱
