  • This super simple Gajar Matar (peas & carrots) uses only 2 ingredient and is totoally vegan! It's one of the easiest side dishes you can make, yet this version enhances the sweetness of both the peas and carrots with cumin, ginger and garam masala. Gajar matar is also a winter recipe, making this dish perfect for this time of year, as things get colder.
    INGREDIENTS
    1.5 cups of green peas (ok to use frozen)
    2-3 red carrots (ok to use the regular variety)
    1 tsp jeera
    1 tsp nigella seeds (kalonji)
    1 inch piece minced ginger
    1 green chili (optional)
    pinch of hing
    garam masala
    salt to taste
