Update: I made these tonight for dinner and they were a big hit! As usual, I could not find yufka, so I used the standard rectangular sheets of phyllo dough, three per meat roll. The filling comes together super easily, but I think it’s worth stirring the mixture in one direction for a bit to develop those meat strands, or you can pick up a bit and toss it back into the bowl for a minute. You get a nice texture that way. Also do not overcrowd if you want crispy pastry. I ran out of space in my dish, so the last few were packed close together. Those were more dumpling-like, with a soft wrapper, while those spaced out were crispy. It all depends on what texture you prefer. I’ll make these again for sure. These look so delicious! This is my favorite cooking channel. I have made probably a half dozen of these recipes, and they always come out perfectly. Even if I don't plan to make a certain recipe such as this one, I love watching these videos due to the amount of care, skill, and passion put into each recipe.

You might already know it since its pretty popular, but It's called "Çiğ köfte" in Turkish and there are many other variations in different countries from Armenia to Lebanon. Meatless version is more popular in nowadays but for special occasions, it can be made with raw meat aswell, both delicious. Hope you give it a shot.
Looking a lot like a filled version of kao laolao (honeycomb noodles from regional northern Chinese such as Shanxi cooking) or the viral honeycomb pasta (which was likely inspired by the former in some form), but even better

I just made it. It is fantastic. I think I packed it too full so the soggy traveled up too far. And being in the US Midwest made getting some ingredients hard. But I will definitely make it again.
Turkish food channel here, mate this is some good recipe, but the original Adana kebap would only have lamb meat probably from rib area, some lamb fat from the back (yes the butt) these kapya peppers and seasoning. May be some chili flakes, and that's it. Parsley, onions, tomatoes and garlic is not Adana. Just some ethimologic information. Keep up the inspiring work my friend.
I just looked up the meaning of "umami" last night so I thought this was a push from the algorithm for "all things Umami." It just appears Middle Eats just knows thing. Glad to have an excellent example of umami since the first example I saw yesterday was that chicken is umami compared with rabbit as gamey. Didn't get it at all. Thanks as always, dear MIddle Eats for another episode.
To me, umami is the flavour of something that is extremely savoury in an intense way. Think the seared outer layer of a fatty steak or the deep flavour of a slow cooked tomato sauce. Combine grilled meat with tomato and yeah it's flawless

I have never seen a recipe that accurately described the amount of garlic needed/that I am going to use. Love the channel!

I'm not an expert on meat substitutes, but maybe you can use some vegan butter? Shred it on a grater and mix in with the meat substitute.

It's Turkish red pepper paste, it's like neither of those. More similar to tomato paste, this is the mild version

Yes that's precisely what's in my original adana kebab recipe. It uses lamb ribs and lamb tail fat
