My wife and I lived in Beni Suef where I worked. Our Egyptian housekeeper's father was a falafel street vender. She used to bring us Falafel in the morning and then bring us the prepared batter. I've eaten Falafel from all over the Middle East and North Africa and without a doubt, the Egyptian is the best. Thanks for the tip about the Fava Beans. Now, I'll look on your channel for some Ful Beans!
Anyone watching this from Ulm, Germany should drop everything, go to Pingu Cafe in Münsterplatz and get yourself some authentic Egyptian falafel! Best falafels I've ever had. I always wondered what their secret was. Now I'm living in another country and can't get them anymore I'll be trying this recipe for sure.
What I love the most about this channel is the fact that I grew up hearing about these dishes in Egyptian movies, as a Moroccan who grew up watching Egyptian movies and tv shows, I would hear people talk about foul we taameya, kochary, molokheya, ma7chy, 7amam belfereek, makarona bel bechamel,... but I was never curious enough to look up the recipes. Now I feel closer to my fellow Egyptians and to their culture through watching this channel. Needless to say I am hooked! Outstanding job you guys!
Hello, Egyptian here, if you haven't tried these foods you listed, DO NOW!!! Everytime I show a non-Egyptian what koshary looks like they instantly wanna eat it!!
I like to cook dishes from all over the world, and you quickly became my go-to source for all middle eastern foods. Thanks for doing what you do, you served me many delicious dinners!
Got the same feeling after first video i watched ! This made me actually subscribe rather than the awesome recipes. I love watching people like this, hence why i like watching food vlogger Mark Wiens. id love to meet more people like this in real life. They really brighten and add something besides the imense amount of sad and depressed people in the world.
M gonna cry. I was born and brought up in Qatar. These were my childhood favorite foods. After leaving Qatar i was depressed amd missing on all of my childhood favorites. I found your channel today and immediately subscribed. Thank you so much for bring back those flavours. I m gonna experiment your recipes. Thank you so much.
I love falafel and have bought countless "make at home kits" that have always left me disappointed, but I tried your recipe today and am completely blown away by it, so thank you thank you thank you!
Wow Obi, you never let me down. I made these tonight and they were amazing! The best falafel I ever had was 22 years ago from a little place in the middle of Cairo. They had a huge crowd of people rushing to the front waving their hands in the air to place their orders. It reminded me of footage you see of the New York Stock Exchange in the 80s. I’ll never forget it. These remind me so much of that delicious food I had so many years ago. Thanks for the recipe and thanks for everything you do with your channel.
I remember I went to a local cafe regularly before lockdown, they had a freshly made falafel wrap that always blew me away - the falafel inside were bright green and always super moist and fluffy and flavourful. In hindsight they must've been Ta'ameya! No wonder they were so good...
to my knowlage every good falafel is that green, even the "normal" chickpea based ones. If it is not bright green it will not taste right. I am very curious to try these to see, how much of a difference the beans make, for otherwise, the recipe I am used too is pretty much the same ^^
I love Ta'ameya, I have always been fond of falafel but after traveling to Egypt I had to learn to make ta'ameya because they were the best. I can't wait to try your recipe, I love your program and middle eastern food. Thanks
These look (and sound) amazing! Thank you for the detailed recipe. My boyfriend is from Alexandria and he often talks about how much he misses ful and falafel, so I can't wait to try and make some of these for him.
I completely agree! I’m totally blown away! It’s not just gratuitous food. It’s hardcore information about food. And middle eastern food does not have enough easy to access information. Thank you so much Obi and the team. Mashallah!
I'm used to eating my family's Lebanese falafel. While I'll probably still use a mix of fava and chickpea, I have to say I am very impressed by the amount of technique involved in Egyptian falafel and learned a lot from watching this video!
Thank you. We honestly had no idea what the actual technique was, because Egyptian home cooks always use Bicorbonate of soda in their falafel to get it fluffy. After watching a bunch of videos from restaurants, my wife had the amazing idea to whip it up, and it worked perfectly. It's definitely quite technical, but it makes sense from a restaurants perspective. Fluffy taameya, has more air in it, so you can make more balls with the same amount of batter and therefore more money. And on the plus side, it's a lot lighter.
Man, I will be honest. I see a lot of people from everywhere in the world in terms getting new recipes for vegan dishes. The authenticity of the dish ( which I value highly in a dish), history and insights on that are really motivating for me. I just feel positive while watching the videos and following the procedure. Made this and koshari, loved both of them to the core. Huge thank you for everything. Only here to spread the love for food to other people.
Your an incredible cook, bravo! My solidarity and heartfelt best wishes for my friends from Palestine, Lebanon and all other countries suffering the madness of Zionism.
The beautiful loving smiles you and your wife have together are such a touching moment while sharing this recipe with us! I can't wait to give this recipe a try, it already feels like I've taken notes at the family kitchen table.
You two are amazing! Since my mother returned to Egypt, I've been dying to make authentic Egyptian food. Thanks to this channel, I was able to make Ful, Molokhia and now Ta'meya - food that I've grown up on and haven't had since my mom left years ago. Everything has tasted just as good as I remember thanks to your video providing me with the recipes I was missing to put it all together. Thank you so, so much.
No problem at all, and we're glad we can reconnect you with the tastes of your mother's kitchen! Hope you make many more meals, and be sure to make Kahk in Eid!
@@MiddleEats Yup! That video flashed on my suggested videos list. Love the quality of your videos and your presence is so nice to watch. Makes cooking look so calm. Gonna recommend this channel to all my friends interested in middle eastern cuisine.
During the pandemic I've perfected my skills in making houmous, baba ganoush and muhammara. (I'm sure there are spelling mistakes there. :-)) Falafel has been on my list of things to do next, and this version with the fluffy fava bean batter looks delicious. The algorithms suggested this video, and your channel looks very nice: I'll be sure to come back! It looks like you've grown from 20k to almost 50k subscribers in three months: good work and no doubt well deserved!
Thank you for your great videos!! My daughters husband is Egyptian and they live in Cairo. I visit several times a year and LOVE Egypt. I miss Egyptian food when I’m home in the states. Now I can make it whenever I want!! :) Thanks, again!
I just stumbled upon your channel - I subscribed within the first minute! Your smile, friendliness and knowledge shine through! Excited to watch more of your videos
Just wanted to say a couple things that I hope you and your wife get a chance to see! I've made this dish two days in a row (the first day, the 400 grams of beans did not make enough to feed my family of 5 haha). My second day making it (today) went phenomenally. They were delicious, fluffy, crispy, etc! I found you two through Adam Ragusea's podcast and I told myself I absolutely had to try making one of your recipes - I found this one and loved the concept of them. Well worth the effort! You've helped a small-town guy from Michigan introduce my family to Egyptian/Middle-Eastern cuisine. We try very hard to make a recipe from different cultures at least once a week, but we always had so much trouble finding food to make from Africa/M.E. This channel has allowed us to experience a culture/cuisine that would have otherwise been impossible for us to experience at home because of language barriers. Cheers!
I've made many falafel recipes over the years and this is the one I always come back to. The texture is just superior. Also fava beans are immensely better than chickpeas nutritionally (around twice the protein and fibre per calorie). So happy to see how this channel has grown since this first came out. You deserve your success.
Made these for dinner and they were amazing - the whole family loved it, and I will definitely be making these falafel again - Thank you for sharing this recipe!
Tried this recipe and it turned out DELICIOUS!!! Thank you so much for the detailed, well edited video. I had almost everything at home expect the spring onions so used roscoff onions instead. Will make sure to try it with spring onions at some point although not very easy to come by where I live. This makes for a much brighter in flavour type of fallafel than recipes I've tried before (love my usual Palestinian recipe) but something about ta'ameya is more satisfying. My favourite flavouring in here that I had never added/had in falafel before is the leek, it makes a massive difference.
Yes the leek is the key characteristicsl in Egyptian flavour and the whipped texture makes it super light and fluffy. Glad to hear it worked out well, and I'd love to see some photos. Re the onions, don't stress about it too much, whatever you have on hand works. Thanks for trying it
THANK YOU SO MUCH for this recipe! I only had ta'ameya once when a visiting student from Cairo made them for a department party. I have *never* tasted falafel as good as that -- until this recipe! Delicious. 😊
Thank you for the highly detailed recipe. I have been trying to make this for a while and this is the first time someone has said how much (weight) of the herbs to put in. I can't wait to try it. And yes, Egyptian Ta'ameyya are the best.
I am an old timer subscriber and had already recommended your channel to my family. Your videos are extremely informative and straight to the point. I was amazed when you compared the batter with & without the final whisking. Keep it up!
Yay! It took a while, but damn was it worth the wait! I'm happy for your success and hope the channel keeps growing. All the very best to you and your wife! Cheers
You're amazing and l sincerely thank you for sharing this genuinely delicious Ta'ameya (falafel)! l was in Cairo recently and whilst on tour did not have the opportunity to try any street food (just buffet breakfast samples) so this shared recipe is even more appreciated in the comfort of my humble abode in Melbourne, Australia! Many heartfelt thanks to you and your wife! 😍
thanks a lot for this recipe I really enjoyed Ta'ameya everytime I wwas in Egypt with my parents in the 90's and I really miss this delicious food... and the hospitality of the egyptian people
after my 8th video of yours, I had to subscribe. I love your voice, detailed and careful instruction (can't thank you enough for your meticulous nature), and the videos end with your happy face. I love it. I'm definitely trying these and looking forward to more videos! Feel good channel of the year!
Love it Obi. What is so great is that you show how it should look and tell us how it should sound. Cracking channel. I try to make the recipes you show us. Middle Eastern food is the way to go!
I've made alot of falafel with chickpeas, but wow this is the best falafels I've ever made. And even on the first try! I cannot wait to serve this to my friends tomorrow :D
Another masterpiece Obi! Can't wait to try this myself when I have time. 20K we did it! Congrats! I wish I could meet you sometime you seem like such a nice and genuine person.
Just made this recipe. Didn’t have fava beans so I used Lima beans. Didn’t have leek so I used a little bit of white onion. I didn’t do the seed exterior for lack of time. But it came out great! Very tasty. I’m making balls to freeze for future use. Thanks for posting this recipe.
I finally made these, and yes, Obi, you are right, they're the BEST I ever tasted! Thank you so much for this recipe! And also, for your support for Palestine. Greetings from the Provence.
The Egyptian Tammya is a great flavor and the real deal when it comes to Crispy outside and moist airy inside. Specially with tahini. From Egypt with love.
This was one of those wowweee videos (as usual 😄) 😍 The falafel is beautiful and OMG that sandwich! Thank you for introducing your wife. You’re a lovely couple 🌺
Thank you, glad you enjoyed it so much! The sandwich is honestly identical to any you'd get in Cairo, only thing I would change would be to serve it in newspaper like they do there. Hope you try it out! Thank you!
Made this recipe for my family a few times and it's fantastic. The first time, I had no coriander leaves on hand so I substituted for baby spinach leaves. I had soaked half a kilo of broad beans and thought this would make way too many falafels when I was done with the batter. It wasn't. The 24ish falafels that came out of this recipe were gone within an hour of me cooking them. I had made both shapes. However I made the flat ones too thin and the ratio of krispy to soft texture was too high. The round ones were perfect. The following times I made the recipe, I followed it exactly. The coriander gives the falafel a brighter taste than the spinach but both are very good. I also made the flatter ones much thicker and they turned out perfectly. Thank you for teaching me this recipe.
Probably the best taameya recipe I’ve watched.I love how you share all the details in your recipe. All your recipes are so authentic. I ate taameya everyday for breakfast when I visited Egypt and fell in love with it, especially the stuffed version. I can’t wait for you to post more vegetarian Egyptian recipes. Thank you 😊 love from India 💟
I finally was able to make Egyptian Taamiya thanks to your lovely recipe! This channel is by far the best when it comes to middle eastern food. Thank you very much Obi and Salma!!!
I just discovered your channel today. The value of information and the presentation are gold. Satisfying to watch and gives the motivation to try the recepies asap. Props to you both and may the algorithm be with you! 🙏
I'm super excited to try this tomorrow, my fava beans are soaking as I type. So glad I found this video, my local Egyptian food stand closed 2 years ago and no one else in 200 miles cooks Ta'ameya.
I stayed at a small family run guesthouse in Cairo 4 years ago, and for breakfast they served these morsels of heaven…I have been searching for a recipe ever since!! Thanks so much! I subscribed immediately!
Fantastic! I'm so happy the UA-cam algorithm spirits recommended this. I'm exactly 0% Arab, but I've been a fan of Middle Eastern food since I was a kid, thanks to the Lebanese church suppers in Vicksburg, Mississippi. Your videos are gorgeous and friendly and I'm looking forward to many, many more!
Wowwwww this video reminds me of the Ta9maya my father and mother made us in my childhood!!!! Have wanted to make Ta9maya for my kids but never learnt how! Thanks so much to you both for this great video!!!
thank you for these videos! it's so important that someone from the culture actually is the one making the tutorials and recipes. thank for the detailed, easy-to-follow, and accessible recipes
HELL YEAH, I’m so glad you hit 20k! I first read your posts on Reddit, and I LOVED your write-ups, and how detailed they were. Then I stumbled across your UA-cam channel, saw that your name was the same, didn’t immediately realise it was the same person (I can only attribute that to Lockdown Madness), and then it clicked. Have religiously watched you since. I’m so fucking glad you reached this milestone!
Thank you, thank you! I didn't used to add links into the posts before, but got permission a short while back. Great to see you recognised the content! Thank you so much for following.
Came back to watch this recipe again to make on the weekend and heard 20k special. You are over 250k now mate! Keep it up, I was wanting to make a middle eastern youtube channel as there didn't seem to be one making the recipes accessible to people, but you smashed it so hard I didn't want to anymore.
CONGRATS ON 20K! you more than deserve it, your channel is so homey and comforting and it’s definitely helped in keeping me sane during the pandemic. thanks for all the great recipes, i can’t wait to try this one sometime. p.s. love the quarantine hair you’re growing
Your videos come from the heart! You can just feel the effort and though put into them. I guarantee your channel will continue to grow for a long time!
Loved them! My (Egyptian) wife loved them. Our friends loved them, claiming they were the BEST they ever had. A lot of love going on with this ta'ameya recipe... Thanks, Obi!
Hey Boris, glad to hear that. Hopefully you'll get rid of the high limit on low LTV mortgages and make some real affordable homes. In all seriousness, glad you guys loved them, did you do the whipping technique? I'd love to see photos if you took any.
@@MiddleEats The whipping technique (Kitchenaid stand mixer) worked brilliantly. Also, your recommendation of using an ice cream scoop saved the day. (I was in a bit of a hurry and did not have time to try the plastic wrap technique - perhaps next time.) No photos, sorry, never occurred to me - next time, I promise. As for high limits on low LTV mortgages, I am the GOOD Boris, and therefore sadly not in a position to bring about change. 😤
Amazing, glad to hear it made them fluffy. Yeah the ice cream scoop makes it so easy, and because the batter is wet, unlike chickpea, you don't need to work on packing it in to the scoop. Ah that's a shame, could do with a better kitchen 😁
I'm relatively new to your channel, subscribed immediately after seeing my first video. Wholesome person explaining clearly how to make yummy food, & who writes everything out in the description for us visual learners? Heck yes! It makes me so happy now two years after you made this, to see that it was a 20k subscriber special, & you now have THREE HUNDRED NINE THOUSAND MORE!!! Best wishes to y'all, & thank you for making these awesome videos!
Where do you buy favas is the Midwest? I find small packages ar Mexican shops. Crazy prices for small 200 gram little plastic bags. I want to buy big sacks to eat foolmedanes ( spelling?). Ah... i dream to eat melokia soup like back home in Southern Africa of my youth !!
Oh my god, I’m so excited! 25 years ago, I used to get falafels from a donut shop that were SO, SO GOOD! They were that beautiful green inside and tasted better than any other I had tried. The only thing close was a falafel stand in Los Angeles, but they lacked the flavor. I have been looking ever since then for the secret to these ultimate falafels, with no success. Until Now!! I am SO excited to try it someday. They look pretty time consuming, but well worth the trouble.
Oh my god. The sound the falafel made when you broke it gave me flashbacks of my time in Egypt, where I enjoyed the most delicious falafel I’ve ever had!
Omg you’re masri!!! I was thinking he looks masri but at first, I only seen like Lebanese food! I’m supper happy! Half Egyptian here! Def going to subscribe! Alf mabrooook on 20k!

@@MiddleEats if I can take pictures before my brothers eat them all, I’ll be sure to tag!
Tasted this Falafel in Covent Garden London. The guys were from Egypt. Thanks for sharing this recipe. The most delicious falafel!!!!
Cheers
Thank you, glad you enjoyed it. Fingers crossed the milestones come quicker and quicker.
You’re one of my favorite channels. I adore everything you make!
thanks a lot for this recipe
I really enjoyed Ta'ameya everytime I wwas in Egypt with my parents in the 90's and I really miss this delicious food... and the hospitality of the egyptian people
You and your wife are the cutest couple ! Thank you so much for this awesome recipe!

Tried this today, just changed fava beans for the chickpeas. Turned out to be fantastic.
I really ought to thank you for it, you deserve the credit. 👍

Yummy - I first ate this as a kid visiting Beirut in 1975! Loved it and thx for sharing- brings back memories n I’m going to try it!
This channel is absolutely incredible! I love how detailed the videos are, especially as a beginner cook. Thank you! I definitely need to try these.
Hello from Israel.
I missed Egyptian Falafel for many years....
Thanks
Another masterpiece Obi! Can't wait to try this myself when I have time. 20K we did it! Congrats! I wish I could meet you sometime you seem like such a nice and genuine person.
Thank you Cozzrock! Glad you enjoyed the video. Maybe one day when Covid is all over I can meet some fans! Thank you!
Amazing is the only word I could use to describe you and your channel , chef .. gratz on the 20k and please keep doing more amazing videos
Thank you for the kind words Khaled! Hope you try the recipe out and for sure I'll be doing lots more videos!
I finally made these, and yes, Obi, you are right, they're the BEST I ever tasted! Thank you so much for this recipe! And also, for your support for Palestine. Greetings from the Provence.
Unbelievable hype for this one Obi! Love love love your channel!!
Thank you very much Henry! Glad to have you here on this journey 👏👏
Thank you!
This channel is a Gold Mine in great recipes to try out. Thanks!
YAYYYY I see Salma!!!
Thank you Kay! I'm sure you'll try this out 😁
Made this recipe for my family a few times and it's fantastic.
Thank you Foram! All the details so you can recreate it perfectly. Hope this matches the ones you are and you enjoy it a lot. Thanks!
Thank you! Hope you make many delicious meals with the recipes. Thanks, fingers crossed
I'm super excited to try this tomorrow, my fava beans are soaking as I type.
So glad I found this video, my local Egyptian food stand closed 2 years ago and no one else in 200 miles cooks Ta'ameya.
Love this channel. Binging w Babish for Egyptians! 😂
Hahaha, well I am aiming to popularize middle eastern food!
Thank you Stephanie! Hope you make many delicious meals from them!
Wowwwww this video reminds me of the Ta9maya my father and mother made us in my childhood!!!! Have wanted to make Ta9maya for my kids but never learnt how! Thanks so much to you both for this great video!!!
Can't wait to try this!
Looks amaaaazing!
Many thanks to you and your wife!
Thank you, be sure to send us some photos!
OMG had this in Richmond VA in the 1980s. The guy was Egyptian and it was incredible. Haven’t seen it since.
Hope you try it out and like it
These look outstanding, can’t wait... Thank You!
thank you for these videos! it's so important that someone from the culture actually is the one making the tutorials and recipes. thank for the detailed, easy-to-follow, and accessible recipes
What Akshaya said. You've become possibly my favourite food-based content creator on the platform!
Thank you, that's very kind of you to say! Glad you are enjoying the content, hope you continue to like it.
Thank you so much! That's very kind of you to say, this definitely made my pandemic experience a lot more manageable. Hope you like this one!
I love your very clear instructions and the way you show us how each texture should look. Thank you!
Your videos come from the heart! You can just feel the effort and though put into them. I guarantee your channel will continue to grow for a long time!
These look so good! It was also super useful to see the bit toward the end where he demonstrated the sound they're supposed to make
You`re a teacher by nature, taking care of explaining every tiny detail, Thank you, guys🌹🌹
I’ve made Egyptian Tameya many times! This is the first time I’ve heard of whipping the batter. Gonna give it a try!
It maks a huge diffrance .
Let me know how it turns out!
been here since 19k and now you’re at 153 keep growing
I love Ta'ameya ! I was actually planning to make some this evening ! My faba beans are currently soaking and I can't wait to try your recipe !
What a great coincidence! I hope you love it! Please send me some photos because I'd love to see how it turns out.
@mulata try an Indian store, or a Turkish one if you have any. They tend to have larger amounts.
Haha yeah, this is the real deal. Just like you get in Egypt.
I absolutely love your channel..shukran!
Omg you’re masri!!! I was thinking he looks masri but at first, I only seen like Lebanese food! I’m supper happy! Half Egyptian here! Def going to subscribe! Alf mabrooook on 20k!
Thanks Lena, I am indeed part Masri. I've got quite a lot of Egyptian recipes on the channel, so I'm sure you'll like them. Thank you
