just discovered ur channel and ur making my fav food in easy and simple ways (i'd say maybe try adding arabic titles to ur videos to reach a bigger audience
You're the channel I've been waiting for man. As a second-generation Arab, I've always had a slight sense of guilt in not knowing how to cook the food I grew up on. I only started recently to dive back in. So thank you and keep up the good work! I'd also like to suggest a Mulukhiyah video maybe?
Thank you, I'm glad I can help you. It's really important to stay connected with out culinary heritage. I've previously done Molokhiya, but it was the Egyptian version. Check it out if you're interested! Maybe I'll do another one in the future from a different country.
Just wanted to come back to this video to give my praises. This is, without a doubt, hands down, the BEST recipe for that restaurant-level chicken shawarma. So many other recipes were maybe 70-80% there, but were always missing something. I followed the recipe completely with the exact ingredients that Obi mentioned, including the toppings and sauces. Undeniably the best source for learning to cook Middle Eastern cuisine on UA-cam. Growing up, I never really understood the nuances of the various cuisines across the Middle East, from Egyptian, Syrian, Palestinian, Lebanese, Moroccan, etc. Growing up, I simply considered it all to be "Arabic food" (which is a disrespect to the various cuisines and their individual cultures). Love that this channel breaks down the wheres, whys, and the hows for each dish. Thank you, Obi!
Woah really?! I've been searched the 'legit' one for few days now because my family miss this food ever since we moved from Qatar 2 years ago. Definitely will try this. Thank you so much for ur review.
@@MiddleEats loool thanks! Amazing video and channel btw. Could you give some info on what those pink pickles they put in Shawarma are? Really love those. Also if we want to put fries in, any best way to prepare them?
Those were pieces of pickled turnip. A lot of the time pickles in the middle East are made using cauliflower, carrot, turnip and cucumber in the same jar. Maybe you can find it at an Arab store.
@@MiddleEats is it similar to gardinaira? Or jardinaira however you spell it... I’ve had individual pickled things from Lebanon and Israel and Iran but nothing that’s like a medley.
I found this channel about two weeks ago. Man, has my diet gone out the window! I LOVE Middle Eastern food and you give me the confidence to make it at home! Thank you so much. Points for the cat!
Oops, well I'm glad you are at least enjoying the food 😅. Glad I could help you do that, I've always felt that it seemed unnecessarily intimidating, but then again that's the whole point of this channel, to fix it. No problem, she says Purr
This recipe is LEGIT. I followed the recipe exactly and used the grill pan method to cook it. I also followed the linked recipe for toum. The final result tasted like the real thing from overseas (tasted in Palestine and Jordan). This is one of the best I've ever tasted in the U.S. and I can hardly believe it was made in my own kitchen! Thank you for the recipes. Keep up the amazing videos!
In the area we live there are no restaurants to get shawarma, so I wanted to make it at home, and this recipe along with the garlic sauce was AMAZING! thank you so much!
I would love a video on your flatbreads. As a baker, I have had to make my own pita bread since nothing in the stores in the US can compare to homemade!
I love home made pita but I found that I like non yeast ones better than yeast. I have to make them myself because I can’t find organic pita here in the USA.
Obi, I'm very impressed with the detail and authenticity your provide. You're the type of home cook who does a better job than 98% of professionals and amateurs in explaining how to cook something with great taste.
Thank you! It's all about making sure people can make the dishes as authentic as possible, while still being absolutely delicious. The detailed steps are there to make it more approachable.
The Lebanese fast food restaurants here in Ivory Coast have tons of stuff they add (or give as options) in their shawarma like onions, tomatoes, but my fav is red pickled cabbage. That garlic and pepper sauce is AMAZING 🤩
Being Lebanese I just want to thank you for making the most authentic video I’ve ever watched! Toum chicken and pickles and optional fries is the real one and you did it perfectly! Thanks 🙏🏻🙏🏻
If you had a deeper baking tray to cook the meat on, one technique that could add great flavor is placing vegetables below the cooking chicken, so all the marinade, fat, and flavor dripping off the chicken is caught by the veggies! Great vid👍
This looks delicious! Best chicken shawarma I ever had was in Riyadh, loaded with the perfectly thick garlic sauce, pickles and fries. I loved paring it with an amazing fresh cool fruit juice you can find at the local fruit stand.
Bro I have no idea why I love watching your videos so much. Aside from the obvious amazing food and ease of following instructions, I think you come off as a genuine guy that anyone loves to have around WITHOUT being the “entertainer”.
Thank you so much for putting the ingredients and instructions on the description. So many places make you go to a site or whatever. You're a real MVP. Thank you.
just made these this weekend, I'm glad I did the oven grilled skewer method because they rendered out a LOT of fat while cooking. I think next time I do them I'm gonna leave them in for a little longer after the last flip though since I didn't quite get the char I was looking for with them. Tasted amazing.
Thank you for introducing the concept of 'Shawarma Saturdays' to my life. I've been using other recipe for Shawarma for some time and really looking forward to giving yours/the skewer method a go (maybe next Saturday!). Subscribed!!
My guy, you killing me. Now I want to eat soo baaad and it's the middle of the night. By the way, here in Russia people also love shawarma it's probably the most popular street food here.
I'm glad i found this channel. As a middle eastern student studying in the US, this is exactly the type of content I've been trying to find. Been wanting to replicate the good middle eastern food I grew up on for a while now!
Dude this is legit the best shawarma I've ever had. I made the marinade almost exactly as you did, accidentally doubled the tumeric, and after tasting tripled the black pepper and chili, also added a pinch of MSG to ratchet it up a notch. As for the chicken I went with half breast, half thigh. With this part I veered a bit farther from your recipe because I cooked it soovide and then only seared it on the pan. So I got an exact, and mouthwateringly soft, consistency on the inside of both the breast and the thigh. I also threw in the bag a couple throats for the taste and gelatin. The marinade and juices I reduced in a pot while searing the meat, so I could then coat the meat up with it without it being runny. I also like to assemble my pita quite different than you, but the core element here is the marinade which came out fantastic. This was the first video I ever saw by you, and I made this like two days later. This is now my new workdays lunch. Already recommended the recipe and your channel to anyone willing to listen.
Dude let me tell you... This was by far the best shawarma I've ever made. Not only that, but I'd go as far as saying that this was one of the best dishes I've made in general. Awesome recipe, thanks for sharing!
This just showed up in recommended. I am stoked to see that you have acquired so many subs in the amount of time between you making it and me seeing it. I love the content and happy to see you growing.
Awesome! Awesome! Awesome! Very glad this channel's picking up! And excellent recipe! One tip which imo makes the skewer method probably the easiest: instead of slicing the thigh before skewering, score it deeply instead. SCORE IT ON BOTH SIDES! This makes it tremendously easier to skewer than thin strips since it will still be in one piece and yet still exposes the meat to the marinade and creates little bits that char up nicely under the grill! Then once cooked you can slice it/break it apart as desired. Keep up the good work man! Can't wait for next week!
Great tip, in fact I think doing that in an accordion method to stretch it out will be even better. You could also thread the thigh on fully then slice into strips working your way around the skewer. Thanks for watching, I appreciate having you around!
Genius! The way the chicken is cut in strips and skewered to give the same appearance as chicken shawarma off the vertical spit is clever. Great recipes and easy to understand. I loved the Thom and chilli sauce video too. Thank you for the videos.
Congrats on 1k subs! I found your channel from your Reddit posts, and just made lahmacun thanks to you - the sumac onions were killer. Can't wait to try this shawarma marinade - sounds awesome!
That's one of my favourite recipes I've done so far, so incredibly delicious and like you said the onions are insane. They'll also go good with shawarma, or you can wrap the shawarma in Lahmacun instead of bread. So many delicious combinations to try!
Wow!. I'm impressed not only with the sandwich prep but with your presentation, videography and you getting to the point and not going all over the place with history, geography , etc.
Not only is the dish absolutely delicious and impeccable, but the explanaiton is excellent and the presentation is very pleasant and as long as it needs to be. One of the best recipe videos on UA-cam out there! Thanks a lot.
This looks amazing I'm really looking forward to trying it. I was sent here from Chinese Cooking Demystified and I'm just thrilled to have discovered this channel; it's just what I've need in my life! Question: For fasting seasons I'm often looking for vegan recipes and the Middle East seems to have many wonderful recipes that I'm largely unfamiliar with. Do you think you would be able to do a short series on some fast-friendly recipes?
Thank you for checking it out, I'm sure you'll love it. I'll definitely try and do a vegan and vegetarian playlist so you can easier find the dishes. Is it a fast for Lent or Ramadan, or just a health fast?
I'm glad you're following Chinese Cooking Demystified and Middle Eats. The people running these sites are more thorough in explaining how to cook these foods authentically and professionally. The two of us are obviously foodies who enjoy food from around the world.
I made your pitas last night and this shawarma today, and it was amazing. Thank you! You also have such clear, instructions and explanations and I also love the recipe being in the description too
Your videos are perfect! Your descriptions are perfect. This is already one of my favorite channels. You deserve millions of followers and views!! Thanks for all the deliciousness!😋
after I had Shawarma with Saj bread in some places in Ontario, I can never enjoy ones with thicker Pita bread as much as I used to Saj bread is such a game changer and super good
This looks so delicious, I love all your recipes and your videos are so clear. Your food is so authentic and its all in English!! Easy to follow and relatable to anyone living in the UK who wants to cook delicious cultural/ arabic food. Please keep going!!
I really appreciate the amount of time and dedication you put into your videos, specifically the care and attention to chicken cooking techniques and sharing the results with us. Really nice to watch, can't wait to cook this for my family soon! Thank you!
Great video! I've been trying to cook this at home without the same results and I will definitely use this technique next time. However, I will add fries inside the sandwich (something I tried while in Beirut) which I think adds both flavour and texture.
wow this channel is exactly what i was waiting for all these years! an authentic step by step discription of my favourite middle eastern cuisine!! thank you!!!
This was already an amazing tutorial, and then ... your beautiful, floofy cat makes her/his entrance! This has to be an at-least-once-a-month in our household - Shwarma Saturday! Thanks for sharing!
I don't really care about the video(which is actually really good!), but a 1k special is the cutest thing I've seen in forever. Definitely subscribing hope to see more middle easter recipes and your channel grow!
I had no idea what this would taste like so I decided to try it. I'll admit I was worried during the process of making the sauces, baking the bread and skewering a million pieces of chicken that I wouldn't like it after putting in all that work, but it was definitely worth it.
Been watching your videos all day today and I must say your content is well explained, easy to follow with little to no fuss. I'm definitely gonna try this shawarma recipe very soon Insha Allah. Thanks for such detailed and authentic recipes.
Found this recipe a few weeks ago and made the chicken, we LOVED it. It's exactly what I have been looking for to make take-out equivalent shawarma at home! I can't wait to try some of your other recipes. We just cooked the chicken in a cast iron pan & chopped it all up for the freezer, and we reheat portions in a super hot pan which gives a pretty convincing grilled flavour. This is 100% going to be a staple for us now!
I've wanted to try Shawarmas for sooooo long! They've always looked so delicious! I recently moved to Arizona and it seems like the population here is rather bland in restaurant selection I hope I find a place soon that makes delicious authentic honestyle food I really desperately want to try an authentic Shawarma!
living in arizona, we truly do lack restaurants besides fast food. ive found 2 good middle eastern restaurants so far within a reasonable distance, though undoubtedly there's more i probably havent found. otherwise its all burger and pizza chains and mexican food
First video of yours that I am watching and I did you just say that this is the 1k subs special!? (00:35) Man your channel has grown a ton since! Love to see it! :D
Love your channel! What´s so good about it is that you focus on techniques, not recipes. Comparing different skewering and grilling techniques, and showing the results. Great!
Me and my bro made this recipe for dinner and I wasn't really expecting anything but DAMN! IT'S SO SO SO SO SO SO GOOD!!!!!!!! I wish we bought more flatbread so we could make some more. 🤤 Even my dad who's not much into middle eastern food loved it! Hoping to make some more next time for family gatherings etc. Thank you thank you for sharing your recipe 🙏
I did it! I first saw your video a year ago. I homemade the pickles & let the chicken marinade almost 2 days. Then i put on direct heat on my weber charcoal grill.. Outstanding! 2nd time i added more cinnamon, cardamon & coriander. Omgoodness ❤❤❤
I dated a Lebanese woman once. She told me authentically it should have a toum tahini sauce with chopped parsley. And they never eat a sandwich with fries or chips. Lebanese just eat two sandwiches if they feel they are still hungry. After eating Lebanese shawarma I whole heartedly agreed. I eat two every time, no chips or fries necessary. With a lemongrass lemonade, oh my god do I miss that woman..
As someone who worked in the middle east for 6 years I'm loving this channel. I'm living in southern Georgia and though I have a middle eastern market in town there are no restaurants so I'm trying to learn how to do the cuisine justice 😅
I just made this!!! I oven-broiled whole thigh pieces and then sliced up. Also made your toum and red pepper sauce. Legit!!! (That toum is TO DIE FOR). Thank you!
@@MiddleEats One thing that I do (don't remember if you mentioned this in video) is to sautée the sliced chicken in a tiny bit of oil in a pan before serving. Crisps them right up! 😋
Just stumbled upon this channel and have already found several recipes I would love to try! It´s great to see that this video was posted just last October when you had a 1000 subscribers, and now 4 months later you´re almost on 20k!
Thank you, been a lot of hard work, but I've loved every minute of it. Dreaming to go full time on this some day. Please send me photos, I'd love to know how they turn out!
absolutely love this channel. genuine care of food from the content creator with precise detail. middle eastern food is also totally underrated as its one of the best uses for so many of these ingredients. i think its better than italian!
My father is Arab and we lived in the ME for years. I miss schawarmas so much! Our favorite shawarma shop used to add in mukhalal and fries and lots of toum. So delish! I'm excited to try your recipe! Since we're in the middle of nowhere US now I need to figure out how to make my own saj!
Hi, I found your channel while lurking around Reddit. This recipe looks absolutely amazing, and has me reminiscing about the food trucks around Europe that sold chicken shawarma (I'm in the US) - your video has inspired me to try making it! It's lunchtime. Why am I watching this at lunchtime?
Thank you for informing me about the purist version and also about all of the other versions. You really get me in the mood for cooking your legit shawarma.
This is awesome! I love Middle Eastern cuisine and have been wanting to learn how to cook some of the dishes at home. Your videos are great. I love your passion for cooking and your desire to teach others. Thank you and good luck with your channel! I will definitely be watching and sharing 😊
You know how recipe reviewers are often like "This recipe is pretty good, btw I changed half the ingredients, altered the cook time, and ignored half your advice. 7/10 stars"? Well I did that by accident with this shawarma (doubled some ingredients, used the less preferred grilling method, cooked too long, etc.) and it STILL came out delicious, tender, juicy and my audience raved. If a wrong version is that good you know the right one is gonna be worth it. 20/10 stars.
I made the chicken and roasted it in the oven without using skewers. It came out very juicy and tasty. I will now do this chicken regularly. I made the hummus and garlic sauce from Middle Eats too. Didn't use the hot sauce. Amazing! Loved it.
Nobody in the world can do this dish better than Central Asia street chefs in one northern slavic city. I traveled so many european and asian countries that have similar dishes and literally that SHAWERMA from that city is the best. The perfect garlic cream sauce, chicken, fresh cucumbers, onion and tomatoes, armenian flat bread. Nothing more. Magic.
I can't believe how well this went down with friends and family, made it repeatedly, in a baby George, with the garlic toum. Amazing, if I ever want to be sure of not having leftovers this is the one
What i learnt from Andong's youtube channel in terms of chicken cooking technic is to first grill the chicken, then rest and cut, then cook a second time to brown more surface area.
Thankyou so much for this.. I been looking for a really good shawarma recipe FOREVER. This is so well explained and detailed. I can’t wait to try this! Also can’t wait to try your toum recipe too🤤 also I subscribed !!!
Had a big party for 20 here last night and made this schwarma for the first time 3X the recipe. Since we have vegetarian friends I used the same marinade on portobello mushroom steaks and tofu. All three were awesome. Rave reviews by all. I paired them with your cumin rice recipe 2X and both were a hit.

I'll definitely try and do a vegan and vegetarian playlist so you can easier find the dishes. Is it a fast for Lent or Ramadan, or just a health fast?
@@MiddleEats very kind of you! I hope I'm not imposing. Yeah, for Lent, but I'm sure our friends celebrating Ramadan would be equally thrilled
Ok so lent would be vegan right? I'll do my best to label all the recipes so far and future ones.
@@MiddleEats oh you're a hero
I'm glad you're following Chinese Cooking Demystified and Middle Eats. The people running these sites are more thorough in explaining how to cook these foods authentically and professionally. The two of us are obviously foodies who enjoy food from around the world.
I made your pitas last night and this shawarma today, and it was amazing. Thank you! You also have such clear, instructions and explanations and I also love the recipe being in the description too
it's midnight and my mouth is watering. that looks freaking amazing.
Thank you, I hope you try it out!
Your videos are perfect! Your descriptions are perfect. This is already one of my favorite channels. You deserve millions of followers and views!! Thanks for all the deliciousness!😋
Thank you, that's very kind of you. I hope you try some recipes.
You're doing great man.. Keep those awesome videos coming! Cheers and best of luck.
Thank you. Got some great things coming!
after I had Shawarma with Saj bread in some places in Ontario, I can never enjoy ones with thicker Pita bread as much as I used to
Saj bread is such a game changer and super good
I been trying to find a rlly good recipe for this for so long, thank you for this omg
This looks so delicious, I love all your recipes and your videos are so clear. Your food is so authentic and its all in English!! Easy to follow and relatable to anyone living in the UK who wants to cook delicious cultural/ arabic food.
Please keep going!!
Wow I made this and it was delicious! Thanks for the video 😃
Thanks for trying it!
Thank you, hopefully it works out exactly as you are hoping.
wow this channel is exactly what i was waiting for all these years! an authentic step by step discription of my favourite middle eastern cuisine!! thank you!!!
I made this today, and it was incredibly good! Thank you for a great video and recipe!
No problem at all. I'm glad to see you enjoyed it. Thanks for trying it.
Best chicken I've ever had. Our friends loved it too!
How the hell did I miss this Channel ?!
Subscribed and enabled Notification! :)
Thank you, much appreciated. Welcome to the club!
Very good camera quality, good explanations, american and metric measurements, nice guy with a nice voice, 10/10 would recommend
This was already an amazing tutorial, and then ... your beautiful, floofy cat makes her/his entrance!
This has to be an at-least-once-a-month in our household - Shwarma Saturday! Thanks for sharing!
Thanks, she loves to show off. She knows how beautiful she really is. I need to get back into doing that, been a while since I've made this.
@@MiddleEats Also, you look just like my nephew, Javaad! 🐾
Thanks
I don't really care about the video(which is actually really good!), but a 1k special is the cutest thing I've seen in forever. Definitely subscribing hope to see more middle easter recipes and your channel grow!
Thanks!
No problem!
This channel is showing how much the middle eastern food is diverse, rich, and very delicious.. thank you 🙏
I had no idea what this would taste like so I decided to try it.
I'll admit I was worried during the process of making the sauces, baking the bread and skewering a million pieces of chicken that I wouldn't like it after putting in all that work, but it was definitely worth it.
Well thank you for taking the risk and trying it. You even went all out and made the sauces, so kudos to you 👏👏. Glad to hear you liked it!
Been watching your videos all day today and I must say your content is well explained, easy to follow with little to no fuss.
I'm definitely gonna try this shawarma recipe very soon Insha Allah.
Thanks for such detailed and authentic recipes.
The wife and I just made this. Absolutely delicious. Thank you
Taste authentic?im going to try
If you’re talking about Abo Ammar on Syria st, that’s the best
Instantly subscribed! This is exactly what I'm looking for in a cooking channel.
As someone who worked in the middle east for 6 years I'm loving this channel. I'm living in southern Georgia and though I have a middle eastern market in town there are no restaurants so I'm trying to learn how to do the cuisine justice 😅
Pickled turnips is what I want! 😊
I just made this!!! I oven-broiled whole thigh pieces and then sliced up. Also made your toum and red pepper sauce. Legit!!! (That toum is TO DIE FOR). Thank you!
Thank you! So happy to hear you liked it! You're right, it is that good. I've been craving this for a few weeks, might just make it!
@@MiddleEats One thing that I do (don't remember if you mentioned this in video) is to sautée the sliced chicken in a tiny bit of oil in a pan before serving. Crisps them right up! 😋
That's a good tip! I think if you make whole thighs it's a good idea. The sliced strips are already a bit crispy. Thanks
i am from Berlin and i grew up around Shawarma shops all the time. this feels so nostalgic thanks for the recepie.
This is one of the greatest channel names ever. Also shawarma looks amazing! Thanks man!
Nearly laughed when I saw you were on ~1k subs at the time this video was released. You've got an amazing channel, and a new subscriber -- cheers!
Looks like your subs blew up! Congratulations. These look so good 😊
Just stumbled upon this channel and have already found several recipes I would love to try!
Hope it turns out good! I'll cover saj sometime in the future.
Thanks Bobbi, hope it turns out great and you enjoy it.
You got me with the shawerma recipe and then you got me again with the cat, I can't resist 🥺💕
I'm glad you are enjoying them, please let me know how they turn out and take some photos.
@@MiddleEats I will definitely do that! It's people like you who make UA-cam a better place, thanks again!
Thank you!
Loving your channel! I’ve been looking for these recipes for a long time...can’t wait to start cooking!
Yay! Thank you! Let me know how they turn out and be sure to send me some photos!
THANK YOU for this recipe. I spend waaay too much $ buying spicy chicken at the local shawarma place each week. Can’t wait to try this!
this looks amazing, so glad i found out about your channel! will be trying this asap!
Brilliant, report back and let me know how it turns out! Also feel free to send me any photos!
it looks so delicious my mouth is watering plus it seems pretty easy? i have to give this one a try asap!!
🤤 🤤 this is the best at home recipe video i have seen for shawarma
Thanks, it really tastes amazing!
Bruh finally somone puts the pickle in it. Last video I saw the guy made a fajita with bell peppers and tried to call it shawarma.
Was rewatching this and wow... from 1k to 200K in 2 years! So proud of you guys
An absolute delightful recipie.Thank you for teaching.
Looks great, can't wait to try it out. Love the channel and the video style is great- clear directions and entertaining! Subscribed!
Thank you, take some photos and let me know how it turns out. Cheers, I'm always open for suggestions on how I can improve the videos.
Magic.
Brilliant, you are an excellent teacher. Thank you so much!
Thanks Susan!
No problem at all, I still get surprised everytime I remake this, the flavour is just spot on. Hope you like it. Thanks
Awesome. Mimicking the techniques in this video has upped my sandwich game in a few different ways.
