    6 - 7 cups All Purpose Unbleached Flour (840g)
    10 teaspoons Baking Powder (40g)
    4 extra large Eggs
    2 cups Sugar (400ml)
    1 cup Orange Juice with Pulp (240ml)
    1 - 2 teaspoons Pure Almond Extract (5-10ml)
    1 cup Vegetable Shortening (Crisco) (200g)
    1 - 2 cups sliced Almonds (150-300g)
    3 cups Powdered Sugar (300g)

    Who is this lady?
    Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
    Where does Gina get her recipes?
    Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
    Why is no one helping her in the video?
    Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
    Why don’t we buy her a new...?
    Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
    Who is behind the camera?
    Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
    Does Gina read the comments?
    We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    My mother was European with a very heavy accent, and English was quite difficult for her, She was far from Italian, but when I watch Gina, she reminds me of my mother. I see my mother’s hands, and the way she cleans when she cooks, and how she dusts her hands free from flour. Sadly, I didn’t keep many of my mother’s recipes, but watching Gina brings me back home. Love her! Don’t change a thing! Kudos to the family for these videos and the legacy your family will have.

    Dear Nona. Thank you for sharing your wisdom. Today is the anniversary of my mothers death. Needless to say I miss her dearly, we were very close. I watch your videos over and over again whenever I feel sad or uncertain.Your zest for life,the way you speak, the way you handle your cooking reminds me so of her. These videos are leaving your family a legacy they will appreciate for many generations. We are now in the mist of the pandemic.     Dear Nona Gina, you have been a lifesaver to me during this Covid-19 and No Mass situation. I love watching you and all the recipes I tried have been fantastic.     I love you Grandma Gina! You are sooooooo blessed to have her as part of your family. I grew up with a lot of Italian friends and so did my sisters. My father died when I was four years old and I always envied the close Italian families and how much they did together and how close they were. I loved the two kitchens too. Always one upstairs that rarely got used and the one in the basement for LOTS of cooking and baking and family gatherings. Thanks for recipe Gina. Xo

    I would watch my mother when she cooked all the time. The best way for someone to learn something is not only by reading a recipe, but watching it come to life.     My grandpa was Italian. I used to have his eggplant parm as a kid and many other dishes. I remember he would put the eggplant on paper bags. But my memory is foggy because I was so young. But I made yours today and it tasted like his! and brought back so many memories. My husband is Colombian and doesn’t really like vegetables. He came home from work and bugged his eyes when he ate the eggplant parm. He loved it especially the sauce! After I tried it I wanted to see if you had more videos and was happy to see you did So I subscribed to your channel. I’m looking forward to making lots of your recipes.     I bought Gina’s cookbook, Cooking With Grandma Gina, for my son in law because he lived in Italy for two years and loves to make Italian food. It looks like a great book and I will buy another one for myself. Grandma Gina is the best, thanks for sharing her recipes in the cookbook. Now we would like some DVDs to watch.     Love your video. So authentic. I made these cookies. I used your technique but, I only used 6 cups of flour. It came together nicely. I added an extra 1/2 cup of sliced almonds. Next time I will add the extra 1 tsp of Almond extract. Did a trial run for Christmas. Will make the updates then. These cookies are very easy to make.

    What a wonderful way to ensure your generations maintain the family's favourite recipes. A tremendous tribute to your Nonna. If only all families showed the degree a respect to their Grandparents. Wonderful. Thank you for sharing. I am looking forward to this season's tomatoes. I am in Northen half of Australia. I actually bought my first ever tomato press this week .Very small and basic but I am only preparing for two of us.

    I have recently started watching you cook Sweet Lady!!! You inspire me to cook more for my family. 💕 I grew up with Southern Cooks. My Grandma & Mama taught me. Now I'm learning from an AMAZING Italian Cook! THANK YOU!!💕 My oven broke & now I need to buy another one. What is the brand of your stove with the double oven? EXACTLY what I need...a double oven!       My oven is a GE, I have been using it for 4 years and am very happy it is a double oven.
