Any chance that your recipes can also be written using grams and milliliters? That way we can achieve consistent results. Also, you scooped your flour instead of spooning it into the measuring cup, so while your recipe calls for 1 3/4 cups flour, scooped flour is compacted and, therefore, more dense than flour spooned into the measuring cup. Baking is chemistry, so careful and consistent methods provide optimum results.
Buttermilk substitute: 1tablespoon lemon juice (some use vinegar) in a cup of milk. The lemon juice turns the milk. Or try a recipe that doesn’t call for buttermilk. The original whoopie pie recipe was very simple and more rustic. People’s tastes hav changed over the years though.
Ok....but your not feeling the flakes...because they should dissolve in the batter...right? I could see the texture difference in a recipe like roasted veg or to finish out a recipe. I guess I need Alton Brown to explain it to me. 😉😉😉 🤓
When using volume as a measurement kosher salt because of it's larger crystal size weighs less than fine table salt. If the recipe specifies kosher salt use half the salt called for. Or if so inclined, you could weigh a tsp of kosher and a tsp of table salt. Note the difference in weight so you can adjust your recipe to reflect the ingredients you have on hand.

Whoppie Pies are not Butter Cream it is Marshmellow crisco and Powderd sugar If you gave me this I owuld throw it at you
