  • Hang out while I show you what I eat in a day to balance building muscle and being healthy on a vegan diet! The goal of these videos is to give you some ideas on different plant based meals you can make and eat yourself! I try to keep everything pretty easy to make using common ingredients and of course I make it all taste THE BOMB! It's really not that hard, you got this, I can help!
    Today is exciting because I have to (get to!) recipe test and take some pictures for our upcoming ebook. I am so excited for this and it is almost DONE! I will let you all know when it is finished.

    Hi Derek and Crystal. I would usually make a pesto with the extra basil, and freeze leftovers in little blobs and put them in a freezer container. I add them to my tomato sauce, or use on homemade pizza, or make pesto pasta. Here’s a nice recipe you can use as is or alter to your taste or amount of leftover basil.
    Pesto
    * 2 cups whole leaf basil
    * 2 cups baby spinach
    * 1 oz raw pumpkin seeds (can sub pine nuts, cashews or sunflower)
    * 1 oz raw walnuts
    * 3 garlic cloves, minced
    * 2-3 tbsp unsweetened plant milk
    * 1/2 tsp salt
    * 1/2 lemon, juiced
    * 1 tbsp nutritional yeast
    Use a blender or food processor to blend all ingredients to a paste.

      I can't believe I never had the idea to add non-dairy milk to my pesto...I do mine oil-free as well, but add an insane amount of lemon juice to help it blend...thanks for the tip!

    Regarding the basil. I would just buy the plant itself. It’s super easy to maintain and you always have fresh basil. It grows fast too 🌿

    Man, I love when you do these videos. Both of you have such inventive ways to make veggies pop. My fiancé and I have been vegetarian for a while. Living in Wisconsin, it’s hard to pull away from cheese, but we have been slowly weaning off how often we eat it.
    Your videos (and your dedication to health as a couple too!) are an inspiration to us. I love when these videos drop because it always provides me some new utility for the kitchen arsenal :)

    Loved the video! You and Crystal are the best. I know you mentioned doing another cooking stream in the last one and I thought it would be a good idea to do one when the ebook is released and you could do a recipe or two from it. It would be really entertaining and good promo too!

      @@Simnettnutrition I'm sorry if this comes across as me being mean Derek, I'm really not trying to be! Spastic, or spaz, is an ableist term referring to disabilities, usually cerebral palsy, here in the UK, and it's pretty nasty. I realise that it doesn't mean the same where you are, and I get that you haven't said that intentionally. I think Lizzo did similar recently where she had to take the word spaz out of a song?? I just thought you should be aware, seeing as you have an international audience. I'm honestly sorry for being such a fucking pedant, I'm not trying to be critical, I swear! Great video and meal ideas as usual, loved the video.

    Not certain about other packages of herbs, but basil makes an amazing pesto. I sometimes freeze pesto in ice cube trays...

    I know you don't like using a lot of oil, but you can freeze your basil in oil in an ice cube tray (chop it and pack it in so it's mostly basil.) This preserves the flavour of the basil so it's like fresh when it hits the frying pan! And in the dead of winter, that smell is everything!😊🍃

    Add soaked walnuts blended up a bit onto your cooked lentils then cook them with onion garlic on the skillet with some oil. Season them however and you have plant based taco meat. Good for pastas too. Green lentils.

    For saving herbs, I think you can chop and mix with oil and freeze in ice cube trays. But I'm honestly going to second the recommendations to get an indoor basil plant for the freshest, best basil you'll ever taste.
    ETA - love the videos! You've helped me go vegan just in time to save my health and improve my life. You're the best!

    That teriyaki sauce sounds insanely good! I can't wait for your ebook! For any leftover herbs I typically make pesto or chimichurri or a dip. Some sort of condiment that only requires the herb plus pantry items. It's a really good way to reduce waste and eat a low cost meal!

    Love the video! We usually use the basil to make a cashew basil pesto. Super easy super fast. We eat it with a quinoa pasta, zucchini, mushrooms, and garbanzos. My son loves it! An easy go to for leftover basil.

    I put the whole leaf in a ice cube tray, cover with water and freeze. Take out put in a plastic bag. When need add to pasta or soups or anything your heart desires.

    I've missed your "what I eat in a day" videos and was so happy to see one uploaded! Woo-HOO! I keep a bunch of that seed topping in my fridge for salads. LOVE that stuff! (Got the idea from you from one of your other videos.) There are lots of things to make with leftover herbs: herb-infused vinegars, herb-infused oils, medicinal tinctures, dehydrate them, chop them up finely and freeze them in water or olive oil cubes, make a pesto (pesto can also be frozen), make teas... so many options!

    I started a pretty hefty plant based diet. After waking up 400 ml of water in a "super food" Green&Red powder shake. Porridge for breakfast, every single morning, Rice + Red Lentils for lunch almost every single lunch, for dinner I have different stuff to eat. Bread, tofu, veggies, fruit, peanut butter, dates etc. Morning and lunch routine/diet has been the same every single meal for the past 7 months. It is boring yes, not too tasty yes, but I got what I wanted. I lost 4+ kilos of weight. Quite some belly fat and the double chin fat. I focused on my running regime in these 7 months almost exclusively. Progressed from 10km in under 1h to 30km in under 3h with about 1k in height also. My lower body, calves, legs, butt are so much stronger now. It is insane. I lost muscle mass in the upper body since I reduced training it for increased focus on lower body and running. That's fine with me. I started with barefoot shoes too a couple years ago. Vivobarefoot. One pair for indoors and one for outdoors. Loving them. In addition I practice the Wim Hof method regularly. Cold water exposure (shower or bath 5-10min), the breathing technique, meditation and stretching/yoga flows. "Mens sana in corpore sano." A healthy mind in a healthy body. Plant based diet, healthy routines, physical activity. I'm in the best shape of my life. Thanks Derek and Crystal! 💪😎👍

    Cut herbs in smaller pieces and put in iced cubes container with water, freeze it and then vacuum pack/ or silicone bags and then put the ice cubes in the freezer.

    I actually recently saw a video showing how to keep your herbs fresh for at least a month or so! First you take out any questionable leaves or any part that looks like it might be starting to go bad. Then you make sure that all of your herbs are super super dry and then wrap them in paper towels and put them in a ziplock bag. I'm actually going to be trying this tomorrow. 😊

    If you have left over basil: Make Cheese Vegan Pesto... 1 C.frozen green peas, 15-20 basil leaves, 1/4 C Nutritional Yeast, 1/2 tsp salt, juice of half a lemon, 3-5 TBSP veg broth, 1 clove garlic, I also usually throw in a handful of cashews. Mix it all up in the Vitamix. Keeps in the fridge for 4 days...

    I love making a pesto with the basil and then freezing those in batches for my pastas. I also freeze the basil as is and grab a few leaves whenever I need to add to my cooking.

    i spread herbs on a pie tin and let them dry out for a couple days then put them in my bullet and chop them up and put them in a spice jar lasts a long time

    I like to put any abundance of fresh basil into the food processor along with coarse salt & make a yummy basil salt😋. The salt preserves the herb & adds delicious flavor to anything I salt.

    Love these meals! When I buy basil, I also use it for roasted vegetables, I put it on tempeh sandwiches. If I still have some left, I freeze it and use it in smoothies. Freezing spinach works great. I hate wasting food- frozen basil isn't my top favorite, but it is good in a smoothie!

    I gotta try some of those noodles! My wife and I save our basil plant harvest each year by freezing olive oil cubes then tossing them in a bag to store in the freezer. Fresh flavor all year long!

    I just bought organic protein powder.I put in my smoothie organic blueberries and a banana! Sometimes water.sometimes unsweetened almond milk! I’ll have try those flex .

    I just dry the extra herbs on a tea towel or hang them with twine in my pantry. (Usually about 1-2 weeks) Then crumble, store in a spice jar and save for future recipes. 🌱 😊

    We have an aerogarden countertop hydroponic garden that we run in the winter so we always have fresh herbs as we need them

    you can dry the herbs to keep them as dry herbs if they don't last long, maybe freezing or making ice cube with some of it in lemon juice etc.

    I've left basil on my counter for a week or two. It dries it out. I had a ton from a CSA and didn't want to get rid of it. It worked really well. I just crumpled it up when it was all dried and put it in a jar. I would sprinkle it on pizza etc. Lasted months in that jar and probably longer but I ate it all : )

    When I've needed to buy herbs I find freezing them is the best especially for the larger leafy type eg.parsley,basil,sage...when Ive needed to buy thyme I found it lasts better if you just leave the excess out of the fridge when you don't need it anymore at that time,then either hang it or leave it on a tea towel or in a colander for about a week to dry it out.then you can pick off the tiny leaves & store in a jar.

    How do you set up your workout program? Push Pull Legs, whole body, or what? Can you do a workout routine update video as we head into the cold months?

      Could be a great idea since it has change a bit lately and I think it's working out well. Basically push, pull, legs (x2 per week). The first push day I would focus on chest and then the second one in the week I focus on shoulders and triceps. First back day of the week is mainly back, but then the second is bicep/rear delts and lower back. Leg day is similar. Squats the first leg day (amongst other things) then the second leg day I do more isolation stuff. Hope that makes sense. This way I am not doing the big heavy nervous system taxing movements twice per week but still hitting virtually every muscle group twice.

      @@carmenbailey1560 I usually order them online because our grocery stores don't have them either. Green lentils are the bomb.

    I grow my own basil, so I tend to harvest a lot. The extra that I don't use in a dish I dry. Then I have both fresh and dry basil. I like adding the dry herb to a dish while it is boiling then the fresh as garnish.
