I think my game is broken my plane just randomly pitches up or down mid flight and during takeoff

What plane? If it’s a plane made from an external software (ex: PMDG) then you may have to update the plane. If it’s the normal A320 or standard plane from the game then you may have flight assistance on. Flight assistance helps you mid flight by pitching up down and using trim. You can turn this off by Opening the menu>Assistance options> flight assistance> turn everything to hard mode which disables the flight assistance. If none of these work I can look into it further
